TrilliumInteresting Food, Unusual CocktailsWe went to Trillium with a group of 8, and everyone enjoyed the dinner. The menu is quite different, featuring a Swedish influence with lots of seafood, which was all good. Some of our party also had pork chops and steak and were all deemed good to great. Most unusual, however, were the cocktails using various flavors of akavit. Then again, you don't even need to like Akavit to have some unbelievable food and even better service. My husband is a Sweed and Trillium delivered tastes from home without alienating those of us less interested in Raaka (it was amazing, order it). Matthew was our server and he was wonderful and never steered us in the wrong direction. And yes, the Akavit was a hit despite hesitations! They spend time infusing the Akavit with lemon, blueberry and or beet juice to bring the licorice flavouring down a tad. The interior is open and welcoming, tables are well spaced. Our latest visit occurred during a Rockies night game which filled the neighborhood with people. Other than the expected parking challenge, we had a great experience among the crowds. (Get a reservations if there's a Rockies game!) The food was creative and delicious. Creative a with well thought out flavor profiles. I had a few of the smorgasbord. The air cured beef tenderloin was absolutely wonder and the mustard side is brought this home as my favorite. Trillium was the perfect place for a return to the excellent dining Denver has to offer. I like that they offer tapas size portions along with appetizers and the main meal. It allowed us an opportunity to sample many different flavors while not leaving uncomfortably full. The portions are ample enough. The restaurant has a good energy about it and wasn't too loud for conversation at out table. The service was attentive without being overbearing. The food was delicious!!!! Crisp, flavorful, bright, and fresh are the immediate words that I'd use to describe the dishes. A great way to return to the fine dining in Denver. We took our foodie friends back so they could experience this restaurant and they were similarly impressed. The food is unique and perfectly prepared. Our server was knowledgeable and timed our courses so that we had just enough time in between each course. We never felt rushed, nor did we feel like the kitchen was backed up. Boompa's Swedish Pancakes are a "must order" for dessert! The Raaka was spectacular and melted in my mouth. The Foie Gras Mousse was more of a cheese texture than mousse and blended beautifully with the strawberry balsamic coulis. The main course Trout pan roasting gave a wonderful crunchy texture layer above the trout mixed with delightful winter veggie chowder.
