A word from Tom Colicchio's Heritage Steaks - The Mirage
New York chef Tom Colicchio brings his passion for cooking with fire to the Las Vegas Strip with Tom Colicchio's Heritage Steak at The Mirage. The 220-seat restaurant will focuses on meats prepared entirely over an open flame – from wood-burning ovens to charcoal grills. On the menu, Tom returns to the American cultural tradition of meat, focusing on antibiotic-free animals raised by purveyors committed to time-honored farming practices and heritage breeds. The glow of the hearth permeates the entire restaurant and is reflected in the Bentel+Bentel design highlighting natural materials.

Diner Reviews
  • "The other reviews are spot on. If you have been to his other restaurant, Craftsteak, you would've wished you'd gone there. There is nothing special about this steakhouse and there are plenty of better options in Vegas."

  • "This restaurant was great for it's service (very prompt) and food (mostly good). However, I found it strange that for such a classy restaurant and owner, Tom Colicchio, that while the male employees were dressed professionally (long sleeved shirts and ties with nice slacks), the women were not. The women looked like they belonged on the game room floor with dresses that barely covered their rear ends and cleavage busting out. I thought this was rather degrading to women and at odds with the feel of the rest of the restaurant. It cheapened the overall atmosphere for me. Mr Colicchio should know that it is possible for women to look attractive without being so exposed. Doubt I'll return."

  • "We hoped to visit Heritage during our 2013 visit to Vegas, but the grand opening kept getting delayed. We finally got to dine there in July of 2014 and it was well worth the wait! The staff was very pleasant and attentive without being pushy. They gave us plenty of time to make our decisions and savor each course of our dinner. Wonderful staff, unforgettable food!"

  • "Dinner was adequate, we shared the charred octopus and pork belly. The pork was under seasoned and had no crispness to it. The octopus was over cooked and subsequently mushy and over charred. My strip was not seasoned at all had to ask for S&P.... A little over cooked also. I was a little disappointed to pay $56 for a strip and it didn't even grade close to prime. Service was attentive, and executed well... the waiter was as attentive as he could be for having a 4 or 5 table section... Just not what I would have hoped for on a $400 check for 4 without wine.... Not sure why they have to mark up the wine 7 - 8 x either.... Would have enjoyed a bottle had it not been marked up to that degree."

  • "We have been to tom's craftsteak in connecticut. It is one of our favorite restaurants so we were excited when he opened heritage at the mirage. Unfortunately it did not live up to our expectations. Craftsteak is based in simply prepared food. Take great food and prepare it perfectly and let the food do the talking. I think at heritage they diverted from this concept. While the beef is still tender and cooked perfectly the flavor is off. I'm not sure why but it was dissapointing and not what we expect from tom colicchio. On the upside the service was perfect and the ambience was very nice. We would not go back but will be goon to craftsteak again for sure"

  • "We had a great meal with a great waiter. Maybe the best Filet I have ever had. The one negative was the bar. Confusion on how to make a drink and also rude when we went to the bar after dinner."

  • "Went on a weekend getaway and wanted to eat at a good steak house. This place hit the spot the food was delicious. The filet and NY strip were fantastic both cuts melted in your mouth. The potato purée complimented the steak perfectly. We also got asparagus which was simple but very tasty! They have very good specialty drinks and a large menu for wine. The service was fantastic all out needs were quickly attended. The staff was super friendly and welcoming. We will defiantly go back when were in Vegas again."

  • "Food did not live up to expectations. Steak flavor was not good. The best thing we ate was the asparagus-"

  • "Everything we had was absolutely amazing, worth every penny."

  • "The food was outstanding. The wait service was slow and took a long time after seating and for final check. The other support staff was very attentive and kept my water glass filled and empty dishes cleared. I was also disappointed that we were set right next to another couple of two, when there was plenty of other seating available. Not much privacy with this seating arrangement."

  • "The bone-in ribeye was succulent, cooked to perfection, and melted in your mouth. The corn chowder was a perfect balance of flavor and the bacon added just the right touch. The mound of onion rings were crisp with a touch of spice. The staff was very accommodating and friendly. They went out of their way to insure I had a wonderful experience. I also had the opportunity to meet with the executive chef. He was very informative in responding to questions and gracious for giving up his time to spend with me."

  • "Our waiter was very helpful with finding the best items to order off the menu. I felt like we were treated like royalty having differ et servers bring out different items. My boyfriend and I started out with the lamb ribs. We both really enjoyed the flavor of them. Then we had the 28 day old beef and that was very tender and juicy. We really enjoyed the food. It was the best steak I have had."

  • "Started out with server spilling water on table and wife. Next came long wait to order drinks. After 20 or so minutes cold bread and frozen butter. Wanted to order sea bass, but they were out? Ordered bone in ribeye....terrible cut and disgustingly salty. Never was asked by waiter or management how food was. Terrible service and the food was the same, except for corn soup. Would go to one of the restaurants that care about service and food quality, like cut or for that matter any other restaurant. Mr collichio needs to be involved with this restaurant, if it is going to live up to the standards he expects others to cook to on top chef."

  • "The octopus was great and sides were good but entrees were sub-par. My bone-in ribeye had very little flavor and the amount of fat went way beyond "marbeling." My girlfriend had the duck. I had never had dry, tasteless duck in my life until this dining experience. There are way too many other options out there to waste your money at this spot for dinner. I mean, I know it's on The Strip, but $15 for a liter of pelligrino...really? Definitely not top chef."

  • "Went to Heritage Steak on a Sunday night so it wasn't very busy at all. The staff was outstanding. Very attentive and friendly. Not stuffy at all. They were actually the best part of the dinner. We ordered the seafood app for two, which is large enough for four. Expensive but we chose to use our wine budget on the app since we were flying at dawn. Very good. My husband ordered a rib eye steak which was amazing. He also ordered the fingerling potatoes , way too much vinegar, and the asparagus, which was fine. I ordered the salmon, which was very good but the coleslaw salad and potatoes which are served with it were so filled with vinegar I could not eat them. Overall the entrees are good the sides Need attention."

  • "The setting and the service made me expect good food. But that's not what we received. Mediocre at best. Bottom line: Pricey but not tasty."

  • "Excellent food, atmosphere and waitstaff!! Pricey but worth every penny!"

  • "First of all; our waiter was AWESOME. Big guy with an odd beard but super nice and friendly, gave nice opinions about the menu. After that, the place sucked. We both ordered our steak medium, it was literally raw, we had to send it back. Makes no sense to me that this could happen, and since the waiter is not the person that drops off the food, we had to wait a while to get his attention to send the food back. The tables are soooo close to each other that the couple sitting next to us started talking to us and told us that their food was also under cooked and they were very unhappy. My wife was only 1/2 way done with her salad and the bus girl came over and tried to take it! Huh??? She was still eating and the bus girl grabbed the plate."

  • "My wife and I dined here our first night in Vegas and really liked the food. The restaurant is set back from the lounge, so you don't realize you are even in the casino, which we viewed as a plus."

  • "One of the best steaks dinners I have ever had. Everything about the meal was perfection: the food, the service and the ambiance. We will be back. Next time our fingers will be crossed that we get to meet Tom!"

  • "Husband and I dined at Heritage the evening of July 3rd. We ordered Ash Roasted Bone Marrow as an appetizer and it was amazing! My husband ordered the Duck Breast and he said that it was excellent. I ordered the 10oz Filet (medium rare) and unfortunately, I was very disappointed. Temperature wise, it was cooked perfectly but lacked flavor. It was so bland to the point that I had to ask my waiter if it had been salted/peppered before cooking. I didn't even eat half of it, boxed it up and threw it away at home. (which is very irritating to do when you just paid over $50 for it alone) We're Vegas locals and 'might' return. If you want steak, Craftsteak at MGM (also Tom Colicchio) is comparable in price with MUCH better steaks."

  • "Everything was great. I had the ribeye and my girl friend had the filet both were some of the best I have ever had. Also we shared mashed potatoes and asparagus witch again were phenomenal. The ambiance was great and service was excellent. The only down side was the price. For our two meals and a bottle of wine it was almost $300 and that was with sharing the sides. That being said I would still come back for special occasions like birthdays or anniversaries because the food was some of the best that we have had."

  • "We were celebrating our one year anniversary of moving to Las Vegas so we wanted something special. We love going to the Mirage but hadn't tried Tom Colicchios yet. Food and service were excellent. Our waiter, James, was fantastic too !"

  • "We made a last minute reservation to have dinner before seeing Cirque du Soleil's LOVE, and we were so glad we did. Our food, service and experience were all wonderful. We started with salads (grilled romaine for my husband and the tomato and burrata for me) and they were both amazing. My husband got the ribeye and I had the braised beef, and we shared the onion rings. All highly recommended. For dessert we shared the ricotta corn fritters, and the corn ice cream was so amazing I wished I had more. Our waiter was fabulous! He was helpful, funny, made us feel at home, steered us in the right direction with our food decisions, and he really made our experience at Heritage a highlight of our trip."

  • "We wanted to go to 'Cut' but had a show at Mirage...for the same prices as 'Cut' there was no comparison with respect to the quality of food and ambience-terribly smokey. I wish we'd had more time to go across the street. Don't expect 'Cut' value here"

  • "Steak better than GRamsey's. Spouse had roasted lobster. She doesn't like grits, but loved these. The spicy onion ring side was excellent. Waiter friendly and answered any questions we had. The dessert was good, but GR,had the better desserts"

  • "Excellent and top notch from the minute you approach front host, to seating, and to service throughout the evening. Staff friendly, knowledgeable and attentive, without hovering. Management gracious, and attentive. One of few wine sommelier's who paid attention to my wife, giving her respect, consideration and easy speak over the attributes of the wineof her bottle selection, as well as first tasting. Kudos! Food was excellent, seasoning firmly used, was not heavy handed, or timid. Cuts of meat superb, appetizers and sides will not disappoint."

  • "For the price, too many negatives...champagne was flat...must have been an old bottle because there were no bubbles...had a glass and it was not worth the price, way too much salt on the asparagus, and too much salt on the filet. On the opposite end, the pork belly app was great...particularly the oysters, the filet was a wonderful piece of meat, and the service was fantastic. Also loved the music. I should have sent the champagne back but just didn't want to create a negative vibe...was my anniversary."

  • "The restaurant's walls and roof are long, parallel wooden slats set several inches apart, so it is nearly completely open to the bar and casino floor. (Noisy!) And there are speakers in the roof, so music thunders down on the diners. It was impossible for the four of us to hear each other. We had two soups, two salads; three ribeyes and one filet; two glasses of wine, one beer, one cider; one strawberry shortcake and one peanut butter chocolate dessert. With 15% tip: $440. We had called the restaurant in advance and were told the average dining check was $70 per person, not $110 per person. Since most steaks are mid-$50, the only way a check would be $70 per person would be if you ordered a steak and soft drink, with nothing more."

  • "For a steak house, this place should have MUCH better steak! The appetizers of heirloom tomato and pork belly were fantastic. Fried chicken was a little over-cooked on the outside, but was very enjoyable. The 14 oz rib eye, ordered medium rare, was terrible. Chewy and dry. Sent back and the awesome staff replaced it with a bone-in rib eye. The meat was just tough. At $50-60 a steak- that steak should be amazing. I loved the ambiance, the place is gorgeous, the staff is well trained, and the menu is appealing. I really wish the quality of meat was better."

  • "Had the bone in rib eye. Flavor was unbelievable. Cooked perfectly. Sides were amazing (got the potatoes). In the top 5 steakhouses I have ever been to. Up there with Peter Lugers, the Striphouse, and Uncle Jack's."
