TilthWonderful food, fun experienceNuanced, thoughtful, fun, delicious. The food and experience at Tilth was the perfect way to celebrate my husband's birthday. We were there on a mid-June night when the weather was warm enough to sit outside, and although the restaurant is in a busy nook of Wallingford, we felt semi-secluded from the chaos while still a part of the neighborhood's energy.
We ate the special Wagyu beef Carpaccio appetizer (with horseradish and rhubarb sauce accompaniment - very delicate), the chilled pea soup (with an espresso and gingerbread crouton - what an interesting balance!), halibut and mussels and spaetzle (all cooked perfectly, the mussel broth was perhaps my favorite food of the evening), all with perfectly paired wine. Tilth not only had a large vegetarian menu, but also could make the majority of their items gluten-free. Everything was delicious and they really went out of their way to ensure that there was plenty that I could eat. I could not have asked for a better birthday dinner, they even comped my desert. For just under $100 (excluding tip) 2 of us had one of the best dinners in a LONG time. We split multiple half orders and had a full order of steak. Only wine was a half glass with the steak.
Best dishes - House made Gnudi with lardon, fiddlehead and a dairy based sauce - out of this world.
Close second - Smoked Yogurt Flan with greens, both on the side and on top as chips.
Tuna seared rare was wonderful as was the side dish or rapini of red cabbage.
Steak was excellent, but it's awfully hard to do real magic with steak.
The space might get noisy on a weekend, but on this weeknight, there were some empty tables and the volume was great.

Service was good without being cloying and the food was beautifully prepared and quite delicious. Washington State wines are superb and the wine list was excellent (we chose by the glass). We loved the ambiance of the neighbourhood and felt we were eating at a true locals' restaurant rather than a tourist trap. We would have no hesitation in coming back. We are fortunate back home in having excellent food and wine and Tilth did not disappoint. I've been wanting to dine at this restaurant because it is owned by Chef Maria Hines--a James Beard awardee and winner of Iron Chef (vs. Morimoto). It certainly didn't disappoint. We were a little early for our reservation but were seated right away. I went there with my husband and kid. They have full and have sizes for entrees; half size was perfect for my daughter. There isn't a children's menu so picky eaters don't have much to go on. Staff was pleasant; didn't rush us through our meal. Good wine selection. Tilth adheres to very seasonal, local and organic ingredients so the selection is very limited and sticks to very traditional fare--steak, tuna, clams. Wonderful, delicious food.5/18/2013 12:00:00 AMtilth is great for high cost diningWe have been to Tilth about 5 times now over the past 3 years. The food is always excellent, the service is wonderful and wine pairings are spot on. Being gourmet, they are extremely expensive and we always spend about 6 times more than if we were to go to dinner at any other restaurant, but we expect that because eating gourmet is a special occasion for us.
The staff are extremely friendly and make you feel special when you're there. Unfortunately there are not many restaurants that offer these qualities so we don't eat out much anymore. We heard about Tilth - a restaurant in Wallingford that serves only organic seasonal and local foods and had to give it a try. The food is offered in the form of small plates, so you can try many different foods. Everything we had was amazing! The first is Tilth will cost you more than you might expect. Four of us with one glass of wine each, no dessert and a couple of appetizers was $50 per person. Also, we were surprised at the small size of the meals given the high prices. My wife got the small order of tuna that was really really small and my $25 ricotta gnudi (pasta) had only around 6 or 7 of the small ricotta dumplings. Everyone at the table thought they gave me the appetizer portion it was so small.

We chose the Spring 8 course dinner and it was fresh and so flavorful. The dishes were spread out perfectly with portions at just the right amounts and each were described as far as ingredients and even suggestions on how to best enjoy each dish. Our server Jen suggested the perfect wine that was in our price range and taste preference that went perfectly with our dinner. This was a birthday dinner for my husband and I made a note on the online reservation regarding the special occasion. I was disappointed that the bean cassoulet was taken off the menu between the time we got the Restaurant Week notice and our visit, but our server explained that this is considered a "winter" dish and had been taken off two nights before we ate there. She assured us it would be back later in the year - which is good news as this is one of the most amazing dishes I've ever eaten. I tried the smoked yogurt flan, which was really delicious and different - never had a dairy item that had a smoky flavor to it. The marinated tofu and quinoa was also very flavorful and presented nicely. I like the fact that the menu promotes local, seasonal ingredients. Will return. My friend and I participated in restaurant week, meaning we had three courses for a set price from a selected menu. After our meal - to fight off a food induced coma - my friend and I walked a couple blocks to the Good Shepherd Center and through the Seattle Tilth demonstration garden. Food was spectacular - hearty portions, not pretentious, and I had the chicken gravy and biscuits. Far and away the best biscuits I have had in my life. Imperfect parkingThis was our third time at Tilth. We love the food, the service and the ambience but it is difficult to get to from the Eastside. Only takes us about 30 minutes to get there but finding parking took me another 30 minutes so we have to plan well in advance. But I have to say the food and the service are worth it. The menu changes seasonally (seems like monthly sometimes on their website) so I will just say that the gnudi, risotto, mini-duck burgers and hanger steak were all superb. Even the amuse bouche (an apple soup) was outstanding. I love that they sell wine by the carafe as well, bringing the bottle to the table and allowing you to taste it. Our server John was superb.
