With Tierra Sur, Todd’s cooking is once again rustic, unpretentious and ingredient driven. Menu items such as pomegranate-marinated lamb, aged rib-eye steak and wild king salmon are cooked outdoors over an open flame. The menu also includes house-made organic corn tortillas with exotic fillings such as birria (chili-braised lamb) with salsa cruda and grilled achiote-marinated red snapper with tomatillo salsa.
