A word from Tierra Sur at Herzog Wine Cellars
Tierra Sur Restaurant, inside Herzog Wine Cellars new state-of-the-art winery, is Chef Todd Aarons’ second incarnation of Mediterranean influenced seasonal cuisine, this time utilizing California’s local produce. Chef Aarons is a veteran of Zuni Café in San Francisco and Savoy in Manhattan, and is now returning home to California to make Tierra Sur his new abode. With Tierra Sur, Todd’s cooking is once again rustic, unpretentious and ingredient driven. Menu items such as pomegranate-marinated lamb, aged rib-eye steak and wild king salmon are cooked outdoors over an open flame. The menu also includes house-made organic corn tortillas with exotic fillings such as birria (chili-braised lamb) with salsa cruda and grilled achiote-marinated red snapper with tomatillo salsa. A high point of the menu is the prix fixe wine tasters meal with wine pairings for each course.Continued
