The Would Restaurantmeet and meatGreat place for conversation and a great dinner. The ambiance is intimate yet friendly. The meat was cooked to perfection (scallops, duck and salmon) and was a rare find. this is the second time I have gone here and neither time was disappointing. In addition the sause of each meat was excellant. Dinner was very good but lacking that tied together innovative pairing of vegetable and starch with the meat that makes for an outstanding dining experience. The vegetables were an after thought as was the unadorned scoop of rice on my scallop dinner. I am a vegetable lover and would love to see these get the attention they deserve. The bread was a nice twist and went well with the appetizer of spring rolls as did a so so mohito.5/11/2013 12:00:00 AMWonderful Evening - very nice findThis restaurant was recommended by a friend who lived in Highland for 20+ years - and I'm SO glad, I would have never found it otherwise. It was the perfect location as I live in Rhinebeck and was meeting a friend from Goshen, so the location was midway.
The dining room was decorated nicely and the ambiance very quiet and intimate feeling. While I wasn't horribly impressed with the wines they offered by the glass (not a very good selection), the food far made up for it. My friend and I each had the kale salad and loved it - a super flavor and great texture. For dinner I had a pasta dish and she had steak - both of which were superb.
I would definitely go back again and plan to do so! The location is residential, so it's very quiet.4/30/2013 12:00:00 AMGo for the WouldThe Would was a great find in the middle of nowhere. Service was great, food was presented exquisitely and tasted phenomenal.3/22/2013 12:00:00 AM
