A word from The Would Restaurant
Originally part of the summer resort, Hotel Di Prima, which opened its doors in 1926, the Would Restaurant has a long history of warm hospitality. The Hotel Di Prima catered to Italian families from the New York City area. In the 1940s and 1950s, thousands of vacationing families came to relax and savor the rich summer flavors of “the country.”In 1994, Claire Winslow and Debra Dooley purchased the establishment and became partners in the Hudson Valley retreat.
Many guests say that "the old resort atmosphere relaxes you and takes you back to slower days." On summer evenings guests enjoy dining on the porch. In the winter they dine by a crackling fire with white linen table cloths, candlelight and fresh flowers.

We offer a varied selection of Contemporary American Cuisine prepared from local ingredients.

    We had a romantic dinner at would, sitting outside. Only complaint was the Mosquitos which we were warned about. It was a very honey feel to it. Our waiter was attentive and the food was delicious and fresh. I would recommend this places to friends.

    Tuesday night is a quiet night at the Would. It was easy for us to talk. The food was excellent and there were lots of choices. No matter what you like to eat you can find something. We all had the salmon on the prix fix menu. It was grilled, with a crisp outside and perfectly done inside -- not raw and not overdone. It came with rice and a summer squash/zucchini mix in a very light sauce. The desserts were delicious. I was only going to taste the chocolate tart but it was too good to leave behind. I highly recommend it.

    I would definitely go here again. Everything was delicious and made on site. Quite a lot of local ingredients are used, which I always find a plus. Even the fresh and warm bread basket was outstanding. My party was especially pleased with the bread we could only describe as like a cinnamon roll. The dessert (fruit crisp w/ vanilla ice cream) was amazing. Plenty big enough to share. In fact all portions were surprisingly large for a restaurant of this quality. If I had to criticize anything it would be the tap water which was very metallic tasting. This may be the fault of the Town, not the restaurant. However, the restaurant could invest in a filter system to avoid this metallic water.

    First time dining here. Ate on the porch. Very quiet with wonderful view of Hudson to the east. Food was excellent and unrushed. We were told the meals were cooked to order and to expect a bit of a wait which was really not too long.

    Food was ok - but highly unnattentive waitstaff. Food took over 1 hout to arrive - then all staff dissapeared so no assistance. Very amateur staff for a higher end place.

    One thing really stand out in this restaurant is a tuna tartare. On my opinion is the best I've ever tried! I can't say that other platters were as remarkable - they were good, but not great. The Would Restaurant had a nice ambiance indoors. Although we were looking forward to be seated outside the terrace was closed. Pictures of the outdoor pavilion looked very attractive on the website, but in real life was nothing like that. The service was slow…. but they had our favorite red wine, so overall we had a positive experience.

    Having considered The Would a favorite spot for 25 years, this was a disappointing visit. The place looks great, and we were given a nice table. But the service was substandard (never experienced this before), and I received the wrong meal. After ordering (and being billed for) duck, beef was brought! The person who brought it (not our waiter) seemed clueless -- she announced it as beef and then peered, unsure, and said, well maybe it's duck. We'd already waited some time for our entree (which was ok, so let it go. The food was good, but not as special as in the past, and not a generous serving (small bit of rice and smattering of green beans). Not great value, as before. I doubt we'll go there again, which is really a shame.

    My wife and I were there over 10 years ago and we were glad to see that it retained its adoring charm. The food and service were very good and the price was surprisingly reasonable. The view of the surrounding countryside was spectacular. We shall return to this adoring gem, soon.

    We had Mother's Day brunch here. We sat inside...the decor was very nice and table was comfortably set. Very nice ambiance. The brunch was a buffet style. The food was delicious...my favorites were the Belgian waffles and the creamy pasta with peas. The service was excellent. I would recommend this restaurant and we will be back in the future.

    Overall very good food as long as you're willing to wait for it. Took quite a while until we got appetizers or salads. That may have been because there were 13 of us. Ambiance very good, love the décor and location. Great for a special event.

    Won't be back! We got rushed through our dinner because the dinner crowd was due (guess we don't count). Had to order apps, entree and dessert all at the same time. All of the apps didn't arrive at the same time (because of being rushed) so some of us ate and other had to wait. His came at about the same time as the entrees We were celebrating my husbands birthday and my MIL 80th and no one cared. One waitress took pix for us, but our waiter was aloof. The Restaurant week menu was barely enough food, while entree from the regular menu was much better. Unfortunatly the tip was included, otherwise it would have been far less.

    The Would is great! My chicken dish was amazing, perfectly cooked with delicious vegetables. The owner is wonderful and the desert was fantastic. (Creme brûlée) I would recommend this reaturant for everyone.

    we had not been to the Would for a couple of years so we decided to try again.... service was good not outstanding; appetizers were excellent; entrees ranged from OK to very good; desserts were good... considering the prices at the Would are at the upper end for this area, I felt that we have better choices in this price range, however, to be fair to the Would, several members of our party thought that the food, etc. was outstanding... to give some specifics, the taco and pork slider appetizers were great, two members of our party enjoyed the skirt steak entree, another enjoyed a chicken entree, I had the shrimp in a vodka sauce with penne pasta - too few shrimp and the sauce was, at best, ordinary...

    Impressed with ambience, bar staff was attentive but waited for too long for food to come out. Not sure if waitress forgot to put in our order but took over one hour from time of ordering till we received our appetizer. Thank goodness for bread that was on table!!

    I had wanted to visit this restaurant for some time. Taking advantage of Restaurant Week was an opportunity to enjoy a number of dishes for a fair price. The old world charm of a brick façade is inviting and warm on a cold night. The restaurant was full and adjacent bar teaming with guests anticipating a hearty meal. The wait staff are welcoming and kind.. The table ordered an array of offerings comprising a Greek inspired eggplant with Feta, Sun-dried tomatoes draped over couscous, Fish tacos, steamed pork dumplings with a mango sauce, arugula salad, Ahi Tuna with a Lemongrass Reduction. Although the menu tantalized the imagination of something special by no means was the kitchen staff able to deliver. Sad to say the food missed its mark.

    Coming from a family of culinary background this was way over priced. What I got a culinary student could have done better with. Not to mention the part that made me critique my food so much wad the fact we waited OVER yes OVER an hour for the entrée after the calamari we had for starters was all bread. My food plate was hot but husband's Luke warm. And all we kept getting wad I'm so sorry wouldyou like more bread? After 2 baskets we were agitated. So definitely week not return sorry.

    This place was good, but I had higher expectations for the price. The food took an extremely long time to come out and just wasn't worth the wait. It wasn't bad by any means but also nothing special. I guess maybe i just get too spoiled by the good and fast food in the city. The service however, was great. And the waiter did give us a free dessert for being so patient. Overall, not a bad spot to hit if you're in the area.

    We went here on a Saturday night, it wasn't crowded, possibly since it's a bit hard to find. I asked the waiter if there were any specials, he replied that everything on the menu was special. not really, I found the food to be just average, servings were large enough to take some home. I would go back but it's not real high on my list.

    A surprising find in a highland Ny area. Hands down best Resturant in town. Food, service and ddinks were all great. Ambiance left a bit to be had. But my husband always teases me I'm to worried what's going on around md and not about what's on the plate. We will be going back!

    My only complaint is that The Would is hard to find, easy to overshoot, and even when you turn in to the driveway, it's hard to believe you're in the right place. Two buildings look vaguely like a former nursing home. But inside, warmly lit, there was a lovely fire, and the food is irresistible. Four of us shared as many appetizers as we could possible order, and still had to have entrees. Everything was excellent.

    We enjoy visiting the New Paltz area and found this restaurant east of town. The atmosphere was welcoming and the ambiance warm and friendly. We started with oysters which were fresh and tasty and followed with seared shrimp which was cooked perfectly, with veggies which were a bit undersalted. We also tried the short ribs and polenta which was very good (though the waitress mis-described it as "beef on the bone"). The place was lively and hopping with a large group celebrating something and the food that came by all looked appetizing. We brought our own wine and were told there'd be a corkage charge, which we expected, but we paid $20 which seemed somewhat pricey. We also tried the creme boulee which was above average. Overall a fun night.

    The food was excellent. I had Thai Coconut soup (very good) and beef short ribs which were juicy, flavorful and not greasy. My wife had lobster bisque soup (very good) and the beef tenderloin and awesome mashed potatoes. The service was very good but at times the food was slow in coming. My only complaint with the Would, as it always is, is that the parking is challenging - more so because of the recent snow. People were parking everywhere and there was a car partially blocking the only way out. Overall, it was a very good experience and we expect to be back.

    Four of us most recently enjoyed a fabulous dinner in a wonderful restaurant tucked away "on a road less taken," as Mr. Frost would say, "and that made all the difference." Debbie and Claire are the warmest of hosts and our waiter, Thomas, is European professional. The Would is a gem in an area, the vaunted Hudson Valley, that is filled with fine restaurants, and this one almost stands alone at the top of the mountain of culinary competitiveness among the plethora of dedicated restauranteurs. We always say that we don't mind spending money if the experience satisfies. The Would epitomizes that experience. Bring an appetite.

    A group of seven went out to celebrate the holidays, birthdays, an engagement and cheers to a New Year, so we wanted to go somewhere special. After reading about the awards and accolades given to this restaurant by Hudson Valley Magazine, we made a reservation and were not disappointed. The food was delicious and we had an attentive server. Overall, we had a wonderful experience and will return.

    We were given poor service. My husband ordered well done steak and received rare. The waiter never returned to ask how our meal was or to refill our water glasses. Over priced meal that was disappointing. We were celebrating our anniversary and decided that next year we will stay home!

    Dinner on a Saturday night during Hudson Valley Restaurant Week took 2 1/2 hours, with long pauses before the waitress's first visit to our table and between every course. We (party of 2) received a free round of drinks in apology for the slowness, but I would have preferred for enough people to have been working there that night.
