Live music, and by this I mean a lone guitarist playing and singing softly as background music. The wait staff were attentive without being overly so. And the food and wine was wonderful. Even my husband commented on how nice it was. We walked down St. George Street afterward to walk off some of our dinner and it was just perfect. What a great evening. But the excellent dining experience comes at a relatively high price which most of the time we consider to be worth it. We loved the watermelon, cucumber, and mozzarella salad special but thought the $8 price for a small salad was out of line. On the other hand, the yellow tail with garbanzo beans and the grilled lamb chop entrees were outstanding in terms of presentation and flavor and well worth their cost. The Tasting Room was no exception. The ambiance inside was great, and we enjoyed live music for the duration of our meal (although a little loud, but still enjoyable). We thorougly enjoyed the tuna cruda, seafood goat cheese dip, and the steak tartare. Very well priced for a tapas restaurant, and everything was wonderful! The service and ambience were excellent, we did have some complications with the kitchen which kept us from eating for almost an hour. The hostess and wait staff did there best to make it up to us. My husband and I had the chef's 4 course meal (which changes daily) with wine pairings. My husband's wine tastes tend toward sweet, and the server made some great choices for him (for me, also!).
The first course was a tuna tartare with tarragon watermelon and pumpkin seeds. Wonderful! 2nd course was yellowtail snapper on soba noodles - fantastic! 3rd course was marinated flank steak over grits, and it was outstanding!
Dessert was to have been bread pudding, but they had only 1 left, so we got a panna cotta also. Panna cotta was delicious ! Frankly, the bread pudding was okay, but not special.
We ate outside- not my usual choice- as live music played as we dined...loved it!

The menu sounded intriguing, so we decided to venture forth. We dined on a weeknight, so there were not many other diners there and most of them were on the patio outside (we chose to be seated inside). The decor was very warm and pleasant. Our overall experience was good, but there are some kinks to work out. The server brought our salads before we had finished our appetizers, but there was a much longer pause between the salad and the entree, so timing was a little off. It also took them too long to clear a neighboring table. Unlike many other chef tastings we have done, we did not leave hungry. Wine pairings were very interesting. One of the best restaurants in St. Augustine.

Each course consists of a nice variety of textures and flavors.
The menu includes a couple dozen tapas, a good variety of main courses, and 4-course tasting menus, which can be ordered with paired wines.
The wine list is huge, with tasting glasses (2 oz.) at $3-5, regular glasses (6 oz.) averaging about $10, and a large number of full bottles from throughout Spain and the rest of the world.
