The multitude of small plates, one better than the other, were surpassed only by the most knowledgeable, enthusiastic and efficient waiter I have ever had.   • "Great bloody marys, love that they put cheddar cheese on top! Food was good, I thought the deviled eggs had too much vinegar. That's pretty much all I could taste. My corned beef dish should be described as a corned beef potato cake or rosti. It made the corned beef tough, but it had good flavors and my eggs were cooked perfectly- over easy. The duck carbonara was great. Service started out great then he was a little overwhelmed but he had others that helped out. Great teamwork. Would try it again next time we come through Glenwood. "

We went here for our anniversary last year and it was so good that we came back to Glenwood Springs this year mainly so that we could return. It was really busy but still the evening was awesome would happily return again for my next anniversary."

  • "Finally a restaurant in downtown Glenwood that will take a reservation. We enjoyed their unique cocktail list. My wife and I were both very impressed with the Fuzzy Mule and Pull-man-hatten. Very good dinner salad options and unique entrees. Our waitress let us sample the wine before ordering and was very attentive throughout the meal."

  • "I've written about this place so much that I'm sure what is left to say? This my regular Sunday brunch stop. The food is always creative and delicious. The service is awesome. If I have a complaint is that the acoustics are bad and it is hard to hear with all of te background noise. No matter, I come to the Pullman to eat."

  • "We've eaten several times at the Pullman, from a laid-back lunch with our two-year-old on a quiet Saturday afternoon to our most recent visit, on a jam-packed Sunday (!) night, filled with 20-somethings at the bar waiting for a table. Each visit has in common though really good food and friendly attentive service. The food is inventive, and the kitchen has always been willing to accommodate my vegan diet (best bet is the cianfotta, an Italian vegetable stew, which they'll make without the parmesan broth). Since the other "fancy" restaurants in nearby Carbondale closed, The Pullman is the best bet in the area for a really good meal at a fair price with a nice wine, whether for a special date or just family lunch. Look forward to next time."

  • "After reading positive reviews for The Pullman, we made reservations and were looking forward to dinner. The restaurant is very attractive and inviting and the service was fine. Unfortunately the food did not live up to our expectations. The duck nuggets were a hit. The roasted chicken was ok - nothing special and had an odd after taste though the brussel sprout hash was quite good. The pork belly was so fatty my daughter could not eat it - it was like gelatin. The red curry mussels were bland. I cant remember our other entree except that the brisket risotto was not well received. I ordered a cocktail (a mule) and I could not drink it. Maybe they were having an off night or maybe their cuisine is just not to our taste."

  • "The Pullman was exceptional, far exceeding our already high expectations. The menu is completely intriguing - I want to go back again and again to try everything. Lots of organic and local ingredients - plus things you don't find every day. Our server (John) was out of this world - extremely knowledgeable and helpful. We don't get to Glenwood too often but you can bet that next time we do, the Pullman will be top on our list of place to visit! We will also be trying your other restaurants - Harman's in Denver and Town in Carbondale... can't wait!"

  • "After a great meal and amazing recommendations from our server, it was disappointing to be made to feel like our business and presence weren't welcome. I dined with two other restaurant industry and foodie friends, and at the end of our meal, we were told there was no coffee ( already discarded ), and the staff put up all the chairs around us. I get it, restaurants need to close down, but there are less intrusive ways to do it. Our conversation later that night and the next day was, 'that was amazing, as always, too bad we got the boot.' We'll be back but hope they re-evaluate their closing procedures."

  • "Ever since we discovered this restaurant we have been back many times - we even schedule our vacations to pass through Glenwood Springs in order to dine. It is that good. Two small plates are equivalent to one main course. This time we tried an arugula salad with roasted brussel sprouts, duck confit and pine nuts. The duck melted on the tongue and the flavors complemented each other amazingly. Lamb bolognese over homemade gnocchi turned out to be more like a deep rich lamb sugo over gnocchi that were SO fresh and tender. Wow! Thoughtful, affordable wine list. In Carbondale, the owner/chef has recently opened a new Main St. restaurant, "Town". Less formal than the old "689", same luscious ingredients as The Pullman, worth a trip!"

  • "We were recently in Glenwood Springs for a couple nights. Due to research on Open Table and Trip Advisor, we decided to make reservations at the Pullman. It was conveniently located right near our hotel. Everything about our meal was excellent. The wait staff was attentive and helpful in picking out a bottle of wine to coordinate with the meal. I had their nightly special, a roasted Pork Tenderloin that was absolutely delicious. My husband got the Salmon and it was done perfectly. However, I have to rave about the dessert. The Rice Pudding Empanadas, fried and rolled in cinnamon sugar with a scoop of dulce de leche ice cream and a drizzle of coffee infused syrup were to die for. I would probably eat here again just to have those!!"

  • "The Pullman has become our favorite on visits to Glenwood Springs. Service is always excellent, the inventive menu is perfectly executed by the kitchen staff, and the eclectic (and reasonably priced) wine list never ceases to amaze. This time one of the standouts was the appetizer of brussels sprouts, potato and duck confit . The lamb bolognese gnocchi was superb as well. And the smoked mashers that came with smoked salmon? Odd, but delicious."

It is not a chain or typical huge serving kinda place if you want a gigantic portion of marginal food then try Chilis or somewhere else, If you want tasty, creative, good, satisfying, and fun offerings then you cant go wrong here."

  • "I was told by two people who have been to Glenwood to definitely go to the Pullman, so we did. I honestly was only mildly impressed with the food, and the two drinks that they recommended were awful so we sent them back (full) but were still charged for them (as well as the wine we ordered, which we did enjoy). When we asked about the drink charges, they took off the lesser priced drink only. This dissatisfaction with the service honestly may have contributed to not enjoying the food as much as we might have. They do have a very eclectic selection of entrees."

  • "You know, it used to be very hard to be a foodie in Glenwood Springs... everything closed early, selection was pretty limited, and you thought that the Italian Underground was the best thing you could get. I can definitely recommend going to the Pullman over anything else in this sleepy town. I went there 3 times over my 3 days there, and wish they'd give me the pork belly recipe! hint*hint*"

  • "Everything on the menu completely unique. Combos you would never think to put together and yet it works... Fabulously. My husband and I both enjoyed our meals immensely. Our server Tiffany gave her opinion and suggestions when we asked and she was dead on. One of my favorite new places and will definitely be adding it to our repertoire every time we visit Glenwood! NOT for the faint of mouth!"

  • "With Glenwood Springs not being my thought as a foodie scene, The Pullman changed my mind. Was ten minutes early for my valentines day reservation and was seated romantically in the corner and was able to have a quiet table with a view still into the kitchen! As a trained chef myself, the kitchen ran brilliantly and they know what they are doin, as well as the chef putting out brilliant dishes.. the confit salad was rockin as well as pork belly dish being perfect, right on the money. the sauces with our chicken and duck were flavorful and im glad your not afraid of salt as many are these days! I would defenetely recommend this to anyone in the area and wouldnt hesitate going back, and the prices are awesome!!!!! Thanks for an amazing night"

  • "The chefs are creative but that's not always a good thing. The special, Opa from Hawaii, was rubbery and tasteless. Everything else was good, especially the burger and the duck. Love having oysters this time of year."

  • "We eat here whenever we go to GS, which is a couple x a year. It never fails to serve excellent food and we are amazed they continue to keep their prices more than reasonable. The atmosphere is in a cool building, we always enjoy that. This time was the least busy we've seen it though, and funnily the service was the slowest we've had. The waitress seemed to lose interest in us after a bit and we had a hard time getting her. Trout beignets were ok, we were curious, but probably wouldn't order again. The chicken has an amazing sauce, and meat so tender. Brussel sprout/bacon hash like eating candied veggies (a good thing). Steak salad very generous but steak a little chewy. Always more things on the menu that we want to try; we'll be back."

  • "I took my girlfriend here for her birthday and was pleasantly surprised. I read a lot of reviews on it and saw alot of what others experienced. We were treated great by Tiffany, she is knowledgeable, friendly and all around fun. We tried a few different appetizers and entrees and a dessert, they were all great. Each item had a very good mixture of ingredients that came out in amazing flavors. The portions arnt large but the taste made up for it, So live a little and expand your taste buds horizions."

If you are into being slightly adventurous and like different food combinations, this place is great. The wait staff are very knowledgable about the menu and know food options for those with allergies. Chefs are accommodating to change requests for those with allergies. My family loves this restaurant! Can be very noisy at times."

  • "The food was wonderful. We were one of three tables in the entire restaurant, yet service was disappointing. I sat at our table and watched my beer flight and glass of wine sit at the bar for some time. The bartender made eye contact w/ me couple of times as I sat there wondering why he didn't bring to the table since the waiter was out of sight for a good 5-7min. I feel this restaurant may have the employees a little too comfortable w/ chatting with each other than waiting on guests. It's always a shame when a restaurants service slacks, service is just as important as the food to me... Service can make or break the meal."

I told her my dining plan and asked her to pair a beer or wine with it...just surprise me. She was spot on. She brought me a wine with my appetizers and a beer with my dinner I would have never picked myself. Really terrific! I'll be back. Truly keep up the great work."
