A word from The Publican
From the team behind Blackbird and avec comes this homage to beer, pork, and fish. Executive Chef Paul Kahan and Chef de Cuisine Cosmo Goss have developed a network of proveyors to supply the restaurant with hand-selected, sustainably-harvested fish and seafood as well as sustainably-raised heirloom pork to anchor a rustic menu of simple, eclectic fare. The extensive international beer list, developed by partners Eduard Seitan and Terry Alexander, features 100 or so ales, lagers, stouts and ciders by the bottle, 12 of those available on tap. Like Blackbird and avec, The Publican is a design partnership from the James Beard Award-winning team of Thomas Schlesser and partner Donnie Madia.

    ate here with a group of 6 for a late dinner. service was very good and the food didn't disappoint. we found the veg dishes more creative and inspiring and delicious compared to some of the meat/seafood dishes. great for a special occasion or to experience one aspect of the chicago dining scene.

    I found myself severely disappointed after everything I've heard about The Publican. The food wasn't special, the seating was rather frustrating since you're forced to dine with total strangers, and the overall experience felt hoax-ish. Now I won't say it was bad, but it simply wasn't memorable considering what the prices were.

    The food combinations were nice, but overall my wife and I were surprised how much salt was used in each dish, and this is from a guy who doesn't care about salt intake. It simply got in the way of the flavors. Also the pricing was high for the teeny table space provided. Shared bench style seating should cost less. Our server was awesome.

    The service was awesome and the food was incredible! My husband and I enjoyes many small plates and loved everything. The ingredients were of impeccable quality and the flavors were all well balanced. We will go back again.

    This is a great place for groups because of the style of seating but also because of the small/share plate style of dining. Evry item on the menu looks amazing so when you bring a group of people you get to try a little bit of everything and every item I tried was great.

    Publican has been one of those places that we have meant to try for years. In this restaurant group we have enjoyed Blackbird and Avec several times but had simply not made it to Publican. We were overall certainly very pleased and not disappointed. The quality and diversity of the dishes was great and the beer selection was eclectic. The "but" comes in regarding the basic charcuterie and cheese. While we thought that the quality was wonderful, the selection and diversity simply was not there compared to a certain other "pig fest" competitor down on Michigan Ave. If you are going for a meat and cheese plate and you want diversity, Publican came up a bit short for us. Do not get me wrong: the quality of what was there was awesome, there just needed to be more diversity of options. The main courses that we tried were amazing and wonderfully flavorful...its just that we really went with the intent to nosh on meat and cheese plates and drink beer all night and, without repeating the same thing several times, you just can't do this at Publican.

    My wife and I love this spot. Sometimes we go there for appetizers after drinks in the neighborhood. Most of the time we go there to get silly and stuff our faces. It's smart but not too pretentious. I mean there are beer and shot combos so... But they'll also have lots of "something's" you've never eaten. Trying as many of them as you can makes it an adventurous experience.

    The food is really fantastic. This was my second time at the Publican, and since the menu changes periodically, I was able to get a completely different set of items. The service was helpful and friendly, and the ambience was energetic but not overwhelming. Each dish is unique and flavorful, and came in good-sized portions for a group to share. The beer and wine list was also very extensive.

    Outstanding food! Loved the atmosphere at brunch, and great service. Every single entree and side we ordered was excellent. (Brunch cocktails were just okay though). Can't wait to come back!

    My group arrived shortly before our reservation. We stood at a table and a man came up and asked if we were together. My friend asked, "Do you mean are we a group or all on one check?" He rudely said he was only interested in drinks not the check. My friends ordered first, and when he came back I ordered a cider... And he was gone and we never saw him againor my cider. Plus, it was LOUD, I was ready to leave at this point, but we seated about 10 minutes later. We had a booth (thank god), not a long awkward table, our server was great, the support staff was awesome, the food was pretty phenomenal (pork belly!). Hey, owners! Put some fabric on the bottom of table tops to dampen the sound! It's cheap and your guests will be more comfortable!

    Food is amazing, amazing - the flavors are incredible. However, the communal dining is uncomfortable, it feels like sitting in a dining hall. And the service is just average. Not enjoyable experience but the food wins.

    The waiter was not friendly, and seemed unhappy to be there. He gave us a hurried speach on the menu at the beginning and said little else. I had looked at the menu ahead of time on their website and planned on ordering the shrimp plate and scallop plate as those are the only "meats" I eat, I found neither of them to be on the menu when I got there. I ate potatoes while my date feasted on meats. He liked the food but agreed the staff was rude and neither of us would return here again.

    I totally recommend this place. Excellent service, AMAZING food, a bit noisy but not disturbing. Don't hesitate, just go and enjoy! (At some point during dinner, my friend said: "I think I could drive all the way from Montreal just to have dinner here again!" That's how much she liked it!)

    Have been here four times and each time I've had a great experience. The bread is amazing. We both had roasted cauliflower soup - not overly rich, and the white wine infused raisins were a great touch. We both had the frisee salad with poached egg and lardons. That's all I need to say. Poached egg and lardons. Delicious. I had the poulet roti with brussels sprouts. Such a simple meal but so delicious. My brother had the croque madame with frites, and it was wonderful as well. Server did a great job of pairing wine with my chicken. Oh, and the macarons at the Bouchon Bakery near the casino are not to be missed. Better than in Paris!

    At first I thought I was lost when I turned onto the street, with all the warehouses and docks, but once I walked into the Publican I knew we were in for a treat. The interior has a warehouse/loft/beer hall feel and the crowd was energetic. You are seated next to other groups, which we really enjoyed because you could check out their food as you're trying to make up your mind. The menu is expansive, but not overwhelming. Our server was knowledgeable and made good suggestions. We had the ham plate, which was fabulous, the brussels sprout salad that was worth writing home about, followed by the barbeque carrots, unique and delicious, and finished with the duck breast. The duck was cooked to perfection and had just the right amount of fat.

    Excellent food, but noisy. Service was very good once our waitress came to our table, but after being seated we waited a very long time before anyone came to our table. It appeared that each of the waiters/waitresses had too many tables to attend.

    The sirloin, whitefish, sweet potatoes and ham were very good. However, the ribs, while they were a different cut, were fatty and couldn't be cut, let alone eat. While they replaced the order and we were not charged, we couldn't continue to eat the meal. Not a very good experience.

    Really enjoyed our meal there, and were pleasantly surprised by the value-price proposition. Service was outstanding, 4 plates were plentiful for the 2 of us, and allowed to taste a wide variety of the Publican tasty offerings: selection of oysters, raw tuna, trio of hams and the most surprising of the lot, a burdock root salad with duck confit. Would definitely recommend this place if you're visiting Chicago.

    was definitely more of a "foodie" place. Most of the portions were fairly small and a tad on the expensive side. While the items we got were pretty good, I felt as if I dropped $100+ and still went away hungry. And, while it's just my personal preference, I'm simply not a fan of the communal seating.

    We had a 1:45 reservation for brunch and were told the kitchen was closing at 2:00, implying we needed to rush and get our orders in. The menu had about 1/3 of the offerings stamped in red with "sold out," making it difficult for a couple of members of our party of six to find something to eat. The red beans and rice were served with a skin on top as if it had been sitting under a heat lamp and were sent back. Very disappointing meal. It seems quality is suffering; this popular place is depending too much on its reputation and not tending to food quality. Certainly they should not take brunch reservations past 1:30 if the kitchen can't handle it.

    Enjoyed a lovely brunch here this past weekend. Unfortunate, a lot of their prime menu options were sold out by 1pm! I would suggest making earlier reservations to ensure you don't miss an entree you were craving. I guess its just another reason to return!

    We were sat at the huge community table as soon as we arrived. A Bloody Mary + choice of beer is a must for brunch. Loved their take on Spanish tortilla with boudin noir. The only weak spot were the pork rinds, dusted in some sort of powdery seasoning that felt like a movie popcorn cheese shaker.

    This dinner was the absolute worst experience of our lives! We made reservations about 6 weeks in advance. Our waiter was initially very nice, helped us choose items off the menu since per everyones' - recommendations "Get items to share, this is a family style." We ordered a trio of fish platter, steak and a side. We first got the WRONG drinks. Then we started getting everyone's food around us. We then received the tiny sliver of fish, not even suitable for sushi - to "SHARE" We then waited up to 2 hours for our other food, that NEVER came. the waiter also had the nerve to charge us for the items we initially ordered, but never received. We didn't pay a cent and walked out never wanting to go back!

    This restaurant came highly recommended by foodie friends in Chicago. I have to say I was somewhat disappointed. It's very expensive for the small amount of food. On the plus side, the oysters were amazing, as was the pork chop. The sirloin was flavorful, but over cooked. The brussel sprouts were good, but grated raw so more like cabbage, but the Burratta with it was good. The biggest disappointment was the Bass..served sashimi style, but sliced so thin you couldn't even see it on the plate. There was no flavor and it was like eating paper. Not worth the money. We tried 2 gin cocktails and they were good. Dessert was so/so. All in all for the $170.00 spent, I'm sure I could have had a more fulfilling and exciting dinner elsewhere.

    Usually the food is perfect, but the porchetta was stringy and tough. The noise level is high, and unacceptable for dining. I keep coming back because the food is usually very good, but never bring people with me that I want to talk with, because of the noise.

    We had a great time at the Publican. All the food was outstanding and the beer list was incredible. Good vibe to the place. You order all the food at once and they bring it out a bit at a time. However is in the back sequencing orders did an awesome job of scheduling the food as the meal progressed perfectly. Two main draw backs. One, I'd heard so much about beer pairing and food, but my waiter seemed to know very little about pairing. We still had great beer, I would have loved more guidance. Second, much of their food is incredibly high in sodium, as you would expect, but it got sort of one night as the evening went on. Those are both minor problems, as our experience was mostly awesome.

    The meal we had was shared plate, which is nice because everyone can try everything. The plate of 3 hams was melt in your mouth delicious. We also had the farm chicken and pork belly, which were both bursting with unique flavor. Each dish had secondary flavor aspects of it that really helped it stand out.

    Publican is one our favorite restaurants in Chicago. The food, which is shared, was excellent. I was skeptical about the chicken at first, but it is amazing along with the sausage served with it. Oysters served as a good starter, and various pork dishes were all excellent. The beer selection was also great along with the service. Highly recommended. I would consider this a fun (not romantic) date place.

    We made a reservation for a table for 2 and when the hostess showed us our place to sit, it was very uncomfortable: two empty chairs in a huge community table. We were very disapointed because we were expecting to had a romantic night, which was impossible with other couple right next to us and also a very loud birthday party with more than 15 people going on on the other side. I think this situation should be explained during reservation and there should be an effort too sit couples in private tables.
