A word from The Publican
From the team behind Blackbird and avec comes this homage to beer, pork, and fish. Executive Chef Paul Kahan and Chef de Cuisine Brian Huston have developed a network of proveyors to supply the restaurant with hand-selected, sustainably-harvested fish and seafood as well as sustainably-raised heirloom pork to anchor a rustic menu of simple, eclectic fare. The extensive international beer list, developed by partners Eduard Seitan and Terry Alexander, features 100 or so ales, lagers, stouts and ciders by the bottle, 12 of those available on tap. Like Blackbird and avec, The Publican is a design partnership from the James Beard Award-winning team of Thomas Schlesser and partner Donnie Madia.Continued

  • "Here is a restaurant that is clearly 100% about the bottom line and 0% about the customer. Our server, Nancy, came to the table. I asked for Grey Goose on the rocks. No Grey Goose. ?? I then requested blue cheese olives with it. Nope, no blue cheese olives. I found that interesting because they have blue cheese and olives. As my friend ordered her $18 glass of wine, she asked for perhaps a large pour due to the cost. No, all pours were the same and suggested she order a cheaper wine. At this point, the dinner was pretty much ruined. All the good food in the world is worth nothing if accompanied by bad service in my opinion. Also, don't look for a spec of anything on the table gratis - no crackers or bread here."

  • "The Publican is all the rave and has been for months, maybe even a year or so. I'm glad I finally tried it for brunch but it won't be a place I return. I like the concept, the communal seating and the high-top tables for those waiting for a table to clear, but in my party of four, none of us were impressed with our food. It was okay. Not terrible, and definitely not so great that this place needs to be all the rave. I had the waffles, bacon and hash browns. My hash browns were way too crunchy (i.e. a little burnt) and hard to eat. The waffles were fine - very light and airy and the butter to add on top was good. Also, if you have certain dietary restrictions (no wheat, dairy or other foods) there is a limited menu here."

  • "Went to the Publican on the recommendation of a chef friend of mine, and put simply, I think it's one of the best restaurants I've ever been to. The menu changes often, depending on what they get from the market that day and everything is so amazingly fresh and expertly prepared. My parents and I order a snapper dish, the ham sampler, the half chicken, the daily pickles, a number of different vegetable sides, and two desserts (one was a coconut milk sorbet which was unbelievable). The chicken was probably the best I've ever had and I wish the would sell their pickles and sorbets. Everything is done family-style and comes out as it's ready, which makes dinning there a fun and unique experience. The only problem was the noise level - too loud"

  • "I like Publican, but it is not the place to go if you want to hear others conversation. This is the second time I brought family here and we were yelling over the music. Even with having reservations both times, we had to wait. The most recent time we stood with an infant for 10 mins, even though our table was already set. It doesn't seem like a lot of time, but it really is. I like the food and the staff is very nice. It's more of an energetic date night spot than a family spot."

  • "Went for breakfast and had the coffee cake, sourdough glazed donut, custard french toast, lobster scramble and orange juice. The coffee cake was a little dry, donut was very tasty, the French Toast was not very good and a bit of a mess, lobster scramble was tasty and the orange juice awful. For some reason they try to be smarter than orange juice and either inject carbonation or let the OJ ferment to give it that nasty taste. Probably the worst OJ we've ever had. Almost forgot. We order the bacon expecting well bacon. Instead we got to large slabs of bacon drenched in syrup. The flavor was outstanding but would have like to have had their locally sourced bacon fried in a frying pan....like bacon. Overall. ....meehhh. Overhyped"

  • "This was a major disappointment. The food was mediocre at best. The toast for my Cheese Toast was so hard, I had to saw at it and I still couldn't cut it. My husband wanted a bite but I had to tell him no because it was impossible to cut! My husband's entree was not brought to the table until everyone else was done. Mistakes happen and we were not charged for the dish. Toward the end of the meal (late brunch), everything was suddenly removed...Good bye, bacon and coffee! The bus boy did not ask one person if they were finished or if it was okay to clear our cups and plates that still had food on them. I have waited a long time to dine at Publican and it was more like PubliCan't. Disappointing experience."

  • "I made a reservation for brunch for my group of 3 (we were all visiting from out of town). We arrived and was promptly seated and served. The food was just incredible. Everything we ordered was absolutely delicious. Even the bacon and hash brown sides tasted marvelous. For the 3 of us, the total came up to around $115, and it was well worth it. Sort of glad that I don't live anywhere near this establishment or I'd be really poor."

  • "To keep it brief, food was really good. Cocktails were good. The suckling pig was superb! The chicken liver pate was delicious, and the porchetta was very nice and tender. Service and ambiance, was odd. Not necessarily a bad thing. Lights were brighter than I personally prefer for dinner service. The server recommended we order everything at once and they'd bring it out as they saw fit, aka they would pace it, but it seemed like everything came out at the same time. We had a packed table, always trying to make room for the next dish. We were confused about their drink menu (we weren't given the cocktail menu upfront and the bar didn't necessarily look equipped for them) but once we asked, they brought the menu over. I'd visit again..."

  • "My wife and I went here for a nice night out without the kids. The food was great. We shared the pork rinds, bbq carrots, taste of ham, suckling pig, and country rib. Our favorite was probably the country rib, which I would describe as a fattier pork chop. The sauce on top was awesome. We thought the pork rinds were kind of forgettable, but neither of us eat them in the first place so if you like the store bought kind these are probably amazing to you. We were able to sit outside and avoid the large communal table so our night could be a little more private. Our server was pretty good, but not overly friendly. Overall a great night out."

Atmosphere was fun and energetic, but it was pretty loud and the tables are set up in a unique format so you are sharing a long table and sitting next to strangers. Made it difficult for conversation. Cool place to try and food was delicious! Would not want to go there for a romantic date night though."

Love the small plates for enabling us to try a nice number of options and not leave painfully stuffed. The lemon curd ice cream dessert is TO DIE FOR it is so amazing. I know there are a ton of choices when dining in Chicago, but this spot will be a regular stop for us."

  • "Menu is appealing - beers and cocktails are great. But sadly our food was less than stellar. Had the carrots, frites and eggs, sugar snap peas, prosciutto and porchetta. Carrots were the best dish. Prosciutto was the only other thing that was not over salted. Sugar snap peas weren't even stringed (one of my pet peeves). Most disappointing dish was the porchetta which was just chewy and tough except in a few lucky spots. Think I would try it again for just cocktails and some salty pairings."

  • "First and foremost, the food was simply stunning. Wonderful selection, and each plate had items that complimented each other, and the plates even complemented each other. Waiter was very helpful in explaining what was what on the plates, and even made some great recommendations for beer pairings based on what we ordered. HOWEVER, we felt like we were a burden to the staff, specifically the bar staff and the hosts. When we first arrived, the hosts (multiple!) were busy talking with friends, and hardly acknowledged us until after having met everyone in the friends' party, then had a conversation while we waited. We were led into the bar area by hosts, then other staff came by and refilled the same water cups that were from the prior party."

  • "This was our 3rd time at the publican and we find their standard is slipping. Although we made a reservation that was listed as available on open table the day of, we were offered a seat at the bar and given an eye roll upon opting to wait for a table. Did I do something wrong by booking a reservation that was listed as available? We were then seated at the worst table in the house which was basically in the bussing station and really should be eliminated from the restaurant. Food was as always outstanding. Service was sub par but may have been a result of our table. We sat with empty beer glasses for a solid 20 min before being asked if we would like another. The plus to dinning in the bus station was witnessing Beto, an amazing bus"

  • "This was our first time dining at the Publican, friends had recommended it. The food was very good (not blow your mind good, but very enjoyable), especially the Serrano ham and the pate'. We had a good waiter who took time to explain and recommend dishes based in what flavors we liked. We sat at the communal table which I liked, it was fun seeing what everyone else next it was eating. It was VERY loud though!! We were literally yelling across the table to each other trying to carry on some sort of conversation. There are no sound absorbing materials in this place, everything is wood. It's deafening. My ears were ringing all night after we left. Overall, the decor is uninteresting and the lighting is awful. Unsure if we'll go back."
