A word from The Publican
From the team behind Blackbird and avec comes this homage to beer, pork, and fish. Executive Chef Paul Kahan and Chef de Cuisine Brian Huston have developed a network of proveyors to supply the restaurant with hand-selected, sustainably-harvested fish and seafood as well as sustainably-raised heirloom pork to anchor a rustic menu of simple, eclectic fare. The extensive international beer list, developed by partners Eduard Seitan and Terry Alexander, features 100 or so ales, lagers, stouts and ciders by the bottle, 12 of those available on tap. Like Blackbird and avec, The Publican is a design partnership from the James Beard Award-winning team of Thomas Schlesser and partner Donnie Madia.Continued

  • "The food at The Publican is very good, no question about it. The menu is diverse, offering quality options spanning meats, poultry and sea food. The vegetable sides are also unique, and well thought out. Similarly, the drink lists (both beer and wine) are extensive! Without a doubt, you will find many things on both lists which catch your eye. All said, this restaurant is a "foodie" must. So what could be better? The service was fair. By no means, poor or insulting, just not particuarly warm or inviting (in my experience). The ambience is also not exactly what I expected, particularly given the price points on the menu. Lastly, The Publican is a GREAT group spot, however not a great date or "romantic" venue in my opinion."

  • "We took friends from out of town here for dinner so that they could try some local meats. We were in a booth and liked that. I had been once before, but liked it better the first time. The food was good, but it wasn't amazing, and the lights are too bright in the dining room. Nothing specific to complain about, but we didn't leave in love like we did the first time. They did have a great selection of midwest meat, though."

  • "have eaten here a half-dozen times, always enjoyable. First time with my wife and was really looking forward to it. Unfortunately, everything, well everything that was cooked ( the oysters and cheese were great) was really, really overspiced and salty. We sent back the lobster but could have sent it all back. Got a glass of limoncello and the waiter seemed genuinely upset, but no attention from the manager whatsoever."

  • "The Publican is one of our favorite restaurants in the city. Our most recent meal there was excellent, as we have come to expect it to be. The staff is friendly, helpful and never rushes you. And the food is superlative - of course the restaurant is known for its meat and pork dishes, which are delicious, but do not overlook the amazing seafood and vegetable options. The squid dish we had was unbelievable - our favorite of the night, as was the tomato salad and spring peas on toast. Thanks to Nick and Antonio for making us feel as welcome as friends."

  • "Best dishes we ordered from July 2014 menu - country pork rib with ramp kimchi and 1/2 rabbit with zucchini, black beans, and chermoula. Those were great! For anyone who has food allergies, the menu descriptions do not fully list all the ingredients. Please be sure to ask your server."

  • "Had heard from friends that we MUST visit the Publican when in Chicago. It was certainly solid advice. Everything we had was fantastic, particularly the chicken liver pate and the blood sausage--my girlfriend obsessed over the duck so it must have been stellar. The beer list was eclectic, well-rounded, and full of great selections. The service left nothing to be desired, although I wouldn't describe it as warm. I suppose that's to be expected when you're as busy as she, and they, were. We will definitely be coming back next (and likely every) time we're in Chicago."

  • "Although the brunch fare was just fine, I don't think it gave the Publican an opportunity to shine all that much. While things were good (chicken liver paté), others were just not that memorable (something I had made with eggs). The service was prompt, friendly, and observant. The hosts were welcoming and accommodating. They've got that side down. Now, I'll have to come back for a proper dinner to get a better sense of the kitchen."

  • "Food was quite good. That said, the service was only so-so and we were misled about what table we'd get. We booked through opentable and requested not to sit at a communal table, however when the reservation was confirmed we were told we'd been moved to a communal table. With an odd number of guests, we then requested an end table at that time...but they didn't plan well enough and there wasn't one available for us! Also, restaurant was out of a number of beers on the menu because of a "big party" two days earlier."

  • "Trying on many levels to reinvent the, "pub" -trying to be more things than one (raw bar, long beer list, porktopia, locavore foodie spot); we had a reservation at 8 but weren't seated until 8:45. Some of the food was odd and not what I expected, but some was truly delicious - especially the desert. Large, design-award-winning space is very impressive, but also leads to a high noise level. Recommended, but you have to know what you're getting into and order right. Oh, and they want everything ordered to be shared..."

  • "Everything we had was terrific. The Spicy Pork Rinds were light and dusted with cayenne pepper. The Asparagus spears were topped off with bacon and pistachios and some kind of creamy sauce. The Cod was coated in expertly rendered bread crumbs, tasty and fluffy, covered by delicious onion rings. The Pork dish was astonishing, slow-cooked and given a light fry at the end, resulting in a crispy skin that covered a juicy and tender meat. What a great restaurant! I can't wait to return."

  • "I've been to the Publican a few times so I know what I'm getting into. The noisy ambience is unfortunate, and the service is snooty and incompetent, but I love their raw bar and pork. Our last visit I was really annoyed. The biggest complaint I have is with the service. I've never seen such a large staff hustling and bustling, and yet had to beg for refills on coffee and water. It wasn't even full (Sun. 2 PM), so what was the negligence all about? The brunch menu was fine, but not spectacular. I wanted the pork shoulder; five minutes after we put our orders in we were informed they were out. Come on, this place is famous for its pork. Stock up. So I had the red wine poached eggs benedict thingamabob which was good, but mostly a novelty."

  • "We had a 1:30 reservation last Sunday. We all ordered Bloody Marys when we were seated and 5 people got them within several minutes and the other 2 people had to wait another 20 minutes for their drink. We asked several times about it and still didn't get them. By this point it was not as busy as it had been when we got there at 1:15. We were also very disappointed that they were out of most of the popular brunch items. I realize we were there on the later end but there wasn't much to order and we were all disappointed. I had a waffle that was overly sweet but the bacon was delicious. I might go back for dinner but definitely not brunch."

  • "Our third trip to Publican (second time for brunch, and went once for dinner) and still had a wonderful experience on both food and drink. Husband and I were having a great time sipping our (wonderful) coffee and (also wonderful) bloody mary's when our server came out and with a pecan sticky bun and a piece of coffee cake telling us that he apologized our food was taking so long and wanted to give us the treats to tide us over - for the record, our food was not taking a long time as far as we were concerned, but we happily took the wonderful bun and cake because they were amazing! Over the past year this has become a favorite of ours on our visits to Chicago (we're from Cincinnati) and we will return yet again next time we are in town."

  • "Publican is a unique destination for which you want to say, "I ate there." Nice waiting bar with high-top tables and drink service came pretty quickly. Ordered appetizer that came just as our table was ready. Had to close out the bar tab, unable to port it over to the table. Not a fan of long communal tables. Our group of 6 sat with unknowns on either side of us - awkward. The food: delicious $21 cheese charcuterie came with 3 measly crackers. The seafood stew was out of this world! Plenty for 2 or 3 people. The BBQ pork ribs were delicious. The sirloin was (surprisingly) sliced, which seems to have drained it of flavor. Fried brain: tasty if you get past the consistency. Overall a cool experience. Very nice waiter and good drinks."

  • "I had been looking forward to dining at Publican for several months as I had heard so much about it. Well....will never return. Pancake was burned on the bottom and hard as a rock....had to use a knife and muscle to cut through it. Grits were cold, lobster eggs sounds good but would "taste" good if the eggs were cooked. Terrible meal and will never return. Too bad because the atmosphere is nice and decorated well."

The chairs and tables are clunky, we did not like the communal table, and the space was too live. For the price of this restaurant, I expected more. Don't think we would return."

  • "Outstanding Bloody Mary's started us off with great servers and a creative, fresh menu. Everyone in our group was pleased with the ambience, meal, and service. I would come back in a heartbeat and would either repeat my lobster scramble or try the chicken liver special. We all walked away with a smile on our face after finishing off shared sticky buns that were melt in your mouth delicious!"

  • "Hard to imagine, as we approached this nondescript restaurant in a rather transitional neighborhood, what a treat was in store for us. While pork is the name of the game and oh so good, Ceviche was off the charts! Also their veggies are expertly prepared. Wine flights good as well."

  • "My family and I came here after my graduation. My sister is a non-carb vegeterian and I am a foodie, so I was trying to find a place that was nice, not ridiculous or too posh, and a variety of vegeterian options. The Publican was the perfect match. Service fantastic, food fantastic, interior fantastic. We were lucky to grab the end table at the bar so it wasn't full on farm table. One complaint is at night, they bump up the music to a point where you have to tell at your dinner guest. If you're looking for a place that wow's you with surprising food combinations (strawberries, pancetta, and fava beans) and decent portion sizes, then I would highly suggest coming here. It was one of the best meals I've ever had."

  • "Everything on the menu we tried was outstanding and creative from the chicken liver pate with blueberry jam to the classic weiswurst pretzel with witbier mustard, the tasso ham biscuit with black beans and kale, and corned beef hash with horseradish aioli. The seating stalls were cleverly designed but quite hot and stuffy at Saturday brunch because the place was packed. The location is in a fascinating revitalizing neighborhood. We will definitely revisit at dinner hour next time in Chicago, to try the grilled rabbit, suckling lamb, sweetbread sauerbraten, and oyster selection."

  • "It was a rainy evening and because so, there was no outside seating available. Having a feeling the dinning room would be busier than normal I arrived for my reservation 20 minutes early. The hostess was friendly and accommodating even though she was clearly being pulled in a hundred different directions. We were seated shortly after and what followed was probably one of the best meals I've ever had, definitely top 5. Everything we ordered was spectacular, the trio of hams (salty pig parts for days!), the porchetta, the scallops and mushrooms, and the sorbet (strawberry?) were all amazing. The server was incredibly helpful in explaining the menu and attentive to our needs. I would tell anyone I know to eat here."

  • "This place is nice; I'd give it 3 stars and 1/2 if I could. I went with my bf on a Monday night: it was crowded and loud and we waited some 10 minutes for our table. Once seated, our server was very helpful in explaining the menu. The beers on draft improved my mood considerably: their tasty, lively and light. Not all like beers from the bottle! Our main, the rabbit, was expensive but delicious. We had oysters and a charchuterie plate as a starter. All the food was very good but for desserts: the panna cotta was disappointgly sweet and flat and the waffles came with a dubious salty cream. Overall, I'd say I would definitely go again, possibly with friends, enjoy the meet and the beers but skip dessert."
