A word from The Publican
From the team behind Blackbird and avec comes this homage to beer, pork, and fish. Executive Chef Paul Kahan and Chef de Cuisine Brian Huston have developed a network of proveyors to supply the restaurant with hand-selected, sustainably-harvested fish and seafood as well as sustainably-raised heirloom pork to anchor a rustic menu of simple, eclectic fare. The extensive international beer list, developed by partners Eduard Seitan and Terry Alexander, features 100 or so ales, lagers, stouts and ciders by the bottle, 12 of those available on tap. Like Blackbird and avec, The Publican is a design partnership from the James Beard Award-winning team of Thomas Schlesser and partner Donnie Madia.Continued

  • "My wife and I went here for a nice night out without the kids. The food was great. We shared the pork rinds, bbq carrots, taste of ham, suckling pig, and country rib. Our favorite was probably the country rib, which I would describe as a fattier pork chop. The sauce on top was awesome. We thought the pork rinds were kind of forgettable, but neither of us eat them in the first place so if you like the store bought kind these are probably amazing to you. We were able to sit outside and avoid the large communal table so our night could be a little more private. Our server was pretty good, but not overly friendly. Overall a great night out."

Atmosphere was fun and energetic, but it was pretty loud and the tables are set up in a unique format so you are sharing a long table and sitting next to strangers. Made it difficult for conversation. Cool place to try and food was delicious! Would not want to go there for a romantic date night though."

  • "This was our second meal here. The servers are very knowledgeable about both bar and food offerings and pairings. Love the small plates for enabling us to try a nice number of options and not leave painfully stuffed. The lemon curd ice cream dessert is TO DIE FOR it is so amazing. I know there are a ton of choices when dining in Chicago, but this spot will be a regular stop for us."

  • "Menu is appealing - beers and cocktails are great. But sadly our food was less than stellar. Had the carrots, frites and eggs, sugar snap peas, prosciutto and porchetta. Carrots were the best dish. Prosciutto was the only other thing that was not over salted. Sugar snap peas weren't even stringed (one of my pet peeves). Most disappointing dish was the porchetta which was just chewy and tough except in a few lucky spots. Think I would try it again for just cocktails and some salty pairings."

  • "First and foremost, the food was simply stunning. Wonderful selection, and each plate had items that complimented each other, and the plates even complemented each other. Waiter was very helpful in explaining what was what on the plates, and even made some great recommendations for beer pairings based on what we ordered. HOWEVER, we felt like we were a burden to the staff, specifically the bar staff and the hosts. When we first arrived, the hosts (multiple!) were busy talking with friends, and hardly acknowledged us until after having met everyone in the friends' party, then had a conversation while we waited. We were led into the bar area by hosts, then other staff came by and refilled the same water cups that were from the prior party."

  • "This was our 3rd time at the publican and we find their standard is slipping. Although we made a reservation that was listed as available on open table the day of, we were offered a seat at the bar and given an eye roll upon opting to wait for a table. Did I do something wrong by booking a reservation that was listed as available? We were then seated at the worst table in the house which was basically in the bussing station and really should be eliminated from the restaurant. Food was as always outstanding. Service was sub par but may have been a result of our table. We sat with empty beer glasses for a solid 20 min before being asked if we would like another. The plus to dinning in the bus station was witnessing Beto, an amazing bus"

  • "This was our first time dining at the Publican, friends had recommended it. The food was very good (not blow your mind good, but very enjoyable), especially the Serrano ham and the pate'. We had a good waiter who took time to explain and recommend dishes based in what flavors we liked. We sat at the communal table which I liked, it was fun seeing what everyone else next it was eating. It was VERY loud though!! We were literally yelling across the table to each other trying to carry on some sort of conversation. There are no sound absorbing materials in this place, everything is wood. It's deafening. My ears were ringing all night after we left. Overall, the decor is uninteresting and the lighting is awful. Unsure if we'll go back."

  • "Location and ambience were really great. Love the neighbourhood. The beer list is very impressive. Locally brewed beer was delicious. The food was good, family style is something to get used to. There was at times an overwhelming salty flavour in most of the food especially the chicken. But overall the menu is impressive. We don't live in Chicago but would definitely go back."

  • "The food at The Publican is very good, no question about it. The menu is diverse, offering quality options spanning meats, poultry and sea food. The vegetable sides are also unique, and well thought out. Similarly, the drink lists (both beer and wine) are extensive! Without a doubt, you will find many things on both lists which catch your eye. All said, this restaurant is a "foodie" must. So what could be better? The service was fair. By no means, poor or insulting, just not particuarly warm or inviting (in my experience). The ambience is also not exactly what I expected, particularly given the price points on the menu. Lastly, The Publican is a GREAT group spot, however not a great date or "romantic" venue in my opinion."

  • "have eaten here a half-dozen times, always enjoyable. First time with my wife and was really looking forward to it. Unfortunately, everything, well everything that was cooked ( the oysters and cheese were great) was really, really overspiced and salty. We sent back the lobster but could have sent it all back. Got a glass of limoncello and the waiter seemed genuinely upset, but no attention from the manager whatsoever."

The food was good, but it wasn't amazing, and the lights are too bright in the dining room. Nothing specific to complain about, but we didn't leave in love like we did the first time. They did have a great selection of midwest meat, though."

  • "The Publican is one of our favorite restaurants in the city. Our most recent meal there was excellent, as we have come to expect it to be. The staff is friendly, helpful and never rushes you. And the food is superlative - of course the restaurant is known for its meat and pork dishes, which are delicious, but do not overlook the amazing seafood and vegetable options. The squid dish we had was unbelievable - our favorite of the night, as was the tomato salad and spring peas on toast. Thanks to Nick and Antonio for making us feel as welcome as friends."
