A word from The Publican
From the team behind Blackbird and avec comes this homage to beer, pork, and fish. Executive Chef Paul Kahan and Chef de Cuisine Brian Huston have developed a network of proveyors to supply the restaurant with hand-selected, sustainably-harvested fish and seafood as well as sustainably-raised heirloom pork to anchor a rustic menu of simple, eclectic fare. The extensive international beer list, developed by partners Eduard Seitan and Terry Alexander, features 100 or so ales, lagers, stouts and ciders by the bottle, 12 of those available on tap. Like Blackbird and avec, The Publican is a design partnership from the James Beard Award-winning team of Thomas Schlesser and partner Donnie Madia.Continued

  • "Knowing it was our first time at the restaurant, & we went to celebrate Patrick's birthday, waiter was not attentive/helpful/kind. He sped thru the menu, made no suggestions, never once checked on how we were doing, didn't even say 'Happy Birthday' when the restaurant sent out a treat for Patrick's birthday. Waiter made poor eye contact & rude. He was kind and checking in on all guests around us, but never once us. He asked if we wanted another round of drinks & then immediately ran off to put in our order, not giving us one second for us to even tell him what drinks we wanted! When we corrected him he did not apologize. I don't understand why we were treated poorly. We're paying customers like everyone else. The wait staff was much better."

  • "The place is beautiful, we felt welcome, and the food was great. What else can you say? The small plates are a perfect way to start, and the shared entrees are perfectly cooked and portioned. The food service is well paced. Service is exceptionally friendly and personable. Overall, this is a wonderful place. We will be back!"

  • "I will state up front, that community seating is, in my opinion, a black stain on the restaurant industry and needs to go away forever. Our server was great, and the Old Fashioned was delicious, but the food was mediocre. The real problems began when a rather loud, large woman and her other two friends were seated virtually on top of my partner and I during our 1st course. These women seemed to be friends of the staff, and one particularly slovenly server, decided he would use my partners chair to lean on and bump her head with his not-so-sneaky fat pop belly while he chatted with these ladies. This infuriated us both and we left. Management did apologize and tired their best to make good - which is appreciated. But too little too late."

It became hard to order anything , and at one point, after no seeing our server for over 10 minutes, I had to ask the back waiter for another drink. The food was okay, nothing special. The oyster were literately the highlight of the restaurant."

  • "Upon our arrival we were greeted by three different severs asking if this was our first time. None cared what our answer was running off to another table. We had to flag our waitress down constantly. The servers share service but all they really share is utter chaos. The chairs and tables were very uncomfortable not even able to cross my legs. The management had put soft surfaces on the bottom of the tables to deal with the ridiculous amount of noise. The platters for our food were even missing a huge piece and broken The communal tables are to cluche New stork to even comment. Would love to go back for the fantastic food but we won't This is fast food for yuppies"

  • "Came for brunch. We had the lobster scrambled eggs and the biscuits and gumbo. The gumbo was excellent, but the eggs were not great. Just throwing lobster into scrambled eggs doesn't make a $20 dish--especially when we have to salt it ourselves. Really good pastries, fine coffee. The coffee service is very fast, which is surprising given how busy this place is; our cups were always full. We were in a group of four, and we were allowed to linger, while the servers/bussers continued to fill our glasses, even though it was clear that the hostess wanted our seats. This was really a nice touch among the busy Chicago brunch places (see: Au Cheval) which can't seem to stand diners who linger longer than it takes to leave a tip. We'll be back."

My favorite dish was the suckling lamb - not to be missed! We appreciated the free after dinner drinks offered because of a very long wait time on our last dish.   • "This is a great restaurant for a small group. Because of the seating arrangements, I wouldn't recommend it for a first or second date (you're either in a booth that has double doors, making it perhaps overly private, or you're at the long table, where you may be knocking elbows with your neighbors). The food is pretty fantastic but it's worth looking at the online menu before booking to make sure it's in your wheelhouse (we have to make sure there is enough on the menu without mushrooms or mustard ... more challenging than you'd think). If it is, you'll probably love it. Having said all that, I have to add that their list of ciders and sour beers is one of my favorites."

  • "Visiting Chicago for the first time. Went here on a suggestion of a friend. Had the pork rinds which were really good. Was expecting something similar to the averse type of pork grinds you get elsewhere that almost taste like burnt bacon but these were way better. Also had the steak and eggs. After I ordered it, I regretted it a little because the only time I've had this or seen it before just plain steak and eggs which was ok. But I was very pleasantly surprised again. Steak tasted great and loved the dish. Huge beer selection was a big plus."

  • "My husband & I were in Chicago celebrating my birthday. A friend recommended the Publican & I'm so glad he did. The service was beyond excellent! Our server, David, was very knowledgeable about the menu, which changes everyday, and had he had us in stitches. The manager, Tracy, was also very attentive and her hospitality really added to our experience. I ate things I never thought I would consider, like rabbit, and was blown away by how amazing it all tasted. Thank you Publican for a top notch experience!!!! We will definitely come back on our next visit to Chicago."

  • "Perfect spot for 4 Montreal Girl's visiting Chicago for the first Time! The food was amazing, especially the selection of ham (wow), the beets, the rabbit and most of all, the deserts (Apple fritters + wipped chocolate cheesecake). The noise Level was very hight as was the energy level but the ambiance of the shared tables was great! The service was very friendly and curtious. Would go back anytime!   • "The Publican is known for the meat that it serves and rightly so. My date and I arrived right on time for our reservation but had to wait 10 minutes due to the seating style at Publican (family style). The restaurant contains many round tables in the middle to stand up at and have a drink while you wait. It seems like this was a normal process for the restaurant so I was surprised when they wouldn't transfer our tab to our table but we moved on. We ended up getting a two top and I was very excited about this since the family style tables sounded extremely loud. Our server recommended about two plates/diner so we went with his suggestion. We went with the crudo, chicken, ham sampler, pork rinds, and brussels sprouts. Get the pork rinds!"

  • "Is the restaurant decor unique? Absolutely. But the noise level is extremely high as there's nothing to baffle it. The cubicles with the swing doors are awkward at best. If you have to ask your server for an explanation of every item on the menu and how many people it serves, there's a problem. Problem #2 was the delivery: We sampled a lot of things, and frankly, the only thing we thought tasted good were the french fries. The service was delightful, they have an excellent beer list, but the wine list is populated with off and unrecognizable brands. Overall, this restaurant had very little appeal to my wife or me."

  • "Five of us went to this restaurant for a birthday brunch. This place was so LOUD that we were barely able to have any sort of conversation. One dish was so salty it was inedible. Another...supposedly their take on the Korean dish Bi Bim Bop...wasn't even close and was so tiny that it was gone in a few small bites. I have food sensitivities and most restaurants are happy to accommodate. My dish...scrambled eggs with crab and creme fraiche...had pickled onions. I asked for a substitution and our wait person explained they were just a garnish and there would be other 'garnishes.' I was served a plate with a mound of watery scrambled eggs and nothing else. I was shocked that a plate like that would leave the kitchen much less be served."

  • "Dined with two friends who had not yet been here. They shared something that looked like a coffee cake, said it was delish. The three of us shared a hashbrown and a thick cut bacon. One had a dish with rice, loved it, the other had something with fish (I can't remember which) and they both loved it. The one who drank the bloody mary said it was super spicy but that didn't deter her, she liked it. The place is noisy and boisterous, energetic. Food's so good...it's all about the food."

We were a table of 3 and even after ordering 7 or 8 dishes none of us were that full. While I like being able to try many different things, having to 3 plates a person to have a full sized meal is a little ridiculous."

  • "Saturday brunch with family, including elderly grandmother. Food was excellent (I had maple ham with fingerling potatoes, escarole and cannelini beans). But service was rushed. Server asked for drink orders before we had finished sitting down. 2 dishes came out 10 minutes after the other 3. Servers were already trying to take away plates from the first three. They kept asking every few minutes if we were done, even though there was still food (because the food was not just then on its way into someone's mouth?). It was all unpleasant and rushed. We were in the restaurant for less than an hour altogether. I thought weekend brunch was supposed to be a chance to relax with family. This was anything but."

  • "First off, this place is more than energetic, it's downright noisy, it is nearly impossible to carry on a conversation, although clearly lots of people were doing just that. We were a group of three, all of whom with some food issues and while we had all checked the online menu before committing to the reservation, the menu changes daily and so on our night, because of food intolerances/preferences, the menu offered limited choices. I will admit, I am from elsewhere, but this was not a $$ evening. For me, it was more like a $$$ meal. The food was very good, the servers were super busy and so a bit impatient, and in my mind, it did not live up to its reputation. My guests had eaten at The Publican before and they were disappointed as well."

  • "Our meal at The Publican was a wonderful experience. I have a gluten sensitivity, and our server had a great understanding of which items on the menu contained gluten. Our server was helpful and very attentive. The atmosphere was busy, but we enjoyed the communal seating. Our favorite items on the menu were the oysters and the scallops--to die for. The beer and wine selection was also fantastic. I appreciate most that The Publican is dedicated to supporting local, family farms that raise high quality meats and produce. We cannot wait to visit again!"

  • "We came here for dinner last year and loved it so much that we decided to check it out for Sunday brunch this past weekend. Awesome Bloody Mary's (we had ours with vodka) with a great spicy kick, and loved that they each came with a five ounce beer side car. I had the amazingly delicious red wine poached eggs (more or less an Eggs Benedict) and husband had some sort of stew, also delicious, that I can't for the life of me remember the name of! Our waitress was great and even brought us out some of their crab scramble because she could tell we were having a 'date brunch'. And you cannot leave without getting the bacon - giant slabs of maple soaked deliciousness. Highly recommend Publican for any meal!"
