The bartender Maria (the best) doubles as our waiter, making the most delicious mojitos with fresh pressed fruit puree. Normally I stick to one, but it was so hot/humid outside that the first one simply cooled me off, so I ordered a second. This time I got adventurous and tasted the mojito made with Lulo juice (then Googled what the heck a Lulo was...ends up it's the royal fruit of Colombia! Looks like an orange outside, kiwi color inside, very subtle, delicious lime flavor, especially in a mojito) Everything on the menu is delicious, but you must order Camarones al Ajillo.6/1/2013 12:00:00 AMNice Mother's Day there...Never been before. We split several small plates, but somehow always end up with too much food! This visit was no exception: beef empanadas (must order), camarones al ajillo (shrimp in amazing cream sauce), ajiaco soup (good), and bistec a caballo (best chimichurri sauce)...we washed it all down with two of their fruit pulp mojitos. All we needed was a siesta afterward! The Parva has to be tasted to be appreciated...Latin fusion at its best! We will be back. I probably would not have known about this place otherwise. I'm so glad we tried it! We loved everything about it: the ambience, service and food. And the best mojitos I've had in a long time! It was also refreshing to find a great mix of Latin American food (Cuban, Colombian, Mexican and Peruvia).
