The Heathman Restaurant takes advantage of local bay shrimp and Oregon razor clams when they are at the peak of season, they use mushrooms unearthed and brought to the kitchen early each morning. The menu aspires to be a constant expression of the vast diversity of ingredients that Oregon has to offer.
