Award winning Culinary Director, Philippe Boulot and Executive Chef Michael Stanton uses the very best in seafood, steaks, game, and more: from line caught salmon to organically raised lamb….from heirloom tomatoes to the best berries and fruit available in the Willamette Valley. The Heathman Restaurant takes advantage of local bay shrimp and Oregon razor clams when they are at the peak of season, they use mushrooms unearthed and brought to the kitchen early each morning. The menu aspires to be a constant expression of the vast diversity of ingredients that Oregon has to offer.
