This was our third visit. I got the steak, and she got some fish. This was the first time the "first spoon" wasn't something mouth watering delicious. Now, it was still great just a mixing of different flavors and different tastes that developed as you consumed it. Everyone at the table said they liked it.
The duck fat fries are my go to first plate. They were wonderful again. I had the strip of the wagiyu (sp?) steak. It was good. One of our group had the collar, and it was interesting to tell the difference in just a single bite. Both were excellent.
Staff was awesome as usual with complete knowledge of the menu and my glass never going dry.

Every course was delicious and I enjoyed a rose wine from the wine list - not always the easiest choice to find in a restaurant. The ingredients were of the highest quality, and demonstrated the creativity and skills of the chef and kitchen. Every part of our meals was both beautifully presented and delicious. Staff was knowledgeable and friendly -- able to answer all our questions about preparation and food origin. My beef was a bit rare for my tastes, and this was remedied perfectly and quickly. Fresh spring vegetables could stand alone. No pretentious airs -- relaxed atmosphere, but with quiet attention to all details. We were warmly greeted at the door, seated quickly, and were given great recommendations by the waiter. The trout is the best I've ever had and showcases the chef's incredible talent and use of local, high quality food. Dessert was amazing with unique but delightful flavors. The entire staff was very hospitable and the chef was out busing tables, serving dessert, and making sure everyone enjoyed the experience. Ambience was great, not to noisy and restaurant was spacious. We ordered the duck fat fries, shadowbook farm's salad, and ranch bone-in wagyu ribeye. The ribeye was better than expected. Meat was soft and juicy and well seasoned. Service was great as our waiter would keep checking on us and would explain the contents of each dish.

It's not as elegant as the Flatiron(ambience is rather non-existent) but the food was terriffic, the service adequate, we didn't feel rushed (even on such a busy night).

But it wasn't until having them prepared by Chef Chapman that I realized how much. I think I can call myself a veteran of the Grey Plume and I can honestly say it continues to amaze me. The menu changes seasonally and new items will pop up now and then depending what special items become available. But what matters most is the quality, the innovation and the attention to detail that comes with each meal. I don't think anything they do is explicitly intended to be an overt demonstration of their excellence, but they pay great attention to your experience. The excellence of the Grey Plume goes above and beyond the menu. My wife and I went at 5:30 on a Monday, and it was very quiet (to be expected). The service was helpful and not too intrusive. The food was prepared well, and was unlike much of what is available in the Omaha area. The chef has taken time to prepare a menu that combines ingredients in a way that is unexpected, but interesting. He seems to favor competing flavors and textures, combining sweet with strong and such. The resulting meal, although not my favorite in Omaha, was an excellent experience. I love all the textures incorporated in the decoration as well as the food. If you are fan of Seasonally-driven restaurants and locally-grown food this is the place for you. We had heard many good things prior so my expectations were pretty high - they were met. First off the service was excellent. It was a cold wet Wednesday evening so business was slow but it seemed every member of the staff stopped by our table at least once to fill a water glass, pour wine, serve an appetizer, or just to chat. The wine service was wonderful, we brought our own bottle and the corkage fee was waved when we bought a half bottle off the wine menu. The food was fantastic from the Carcuterie board starter, to waygu steak and Chevre Agnolotti main dishes, and finally the tropical fruit flavored ice cream desert. Meals were outstanding, topped off by a delightful 2011 Donhoff Riesling Kbinett and the new desserts were delicious. Try the Chocolate and Coffee and the Beet and Carrot Semifreddo - yes...I said beet & carrot......try it.

We had a table of 5 so we sampled three different appetizers, the soup, four entrees, and three desserts and shared amongst ourselves. It was all delicious. The tobacco/bourbon creme brulee was so unique; never had anything like it. The service was wonderful as well. I had a couple of wine choices picked out, but the wine steward listened to what I like in a wine and steered me another direction (to a less-expensive bottle even!)and it was a perfect choice.

A bright smiling young woman, our ‘guide’ for the evening, knew every item on the menu, what it was made of, how it was made and where the ingredients came from.
Complementary fresh, zippy palate cleanser. Also really good hot peasant rolls. A Vouvray was smooth and moderately priced. Also cocktails of blood orange juice, spritzer and cinnamon syrup that were so good we got the ingredients.
Charcuterie appetizer which was a wonderful collection of small tastings of meats and cheeses. Also had Duck Fat fries. The food provided unique flavors, refined...but nothing came out and made me say "I have to come back again." For the repeated best of Omaha, I was satisfied, but not impressed.
The only hiccup of the night - they've got a wonderful in-house coffee roaster. Ordered lattes for coffee. First, they were out of milk...so they made with cream. Second, the beans were a bad roast...bitter, lacked in body. I'm a coffee aficionado, didn't finish it.3/2/2013 12:00:00 AM
