A word from The Conservatory at Greystone
Led by Culinary Director & famed American chef Larry Forgione “The Conservatory” will “crop-up” at CIA Greystone featuring a $65 multi course menu both created & served by the students. Over the course of the semester these students taste & cook their way through Greystone CIA/Krug farm & kitchens. Friday & Saturday of each week this student led farm-to-table restaurant with emphasis on freshness, seasonality, local availability, & simple preparations will be featured at the Williams Center for Flavor Discovery.
CIA’s Farm-to-Table Cooking in America is a conservatory-style educational model for students who want to be part of a community working to create healthy, sustainable, & delicious food systems. The program will be a hotbed of activity where students can roll up their sleeves & get their hands dirty as they learn about gardening, farming practices & sourcing ingredients directly in the farms, fields, & forests of Northern California.

There was only one very minor error and they corrected that quickly and with many apologies. The food was very nice and some memorable flavors. We are still talking about the meal."

  • "We were looking forward to this given the other positive reviews. It was so disappointing that it was actually quite puzzling. Several of the dishes were very poorly prepared and most of the dishes seemed conflicted with components fighting for supremacy. The wine pairing was just plain boring and service was sorely lacking. I had to remind the staff to bring me my wine pairing after the course would arrive and the mignardises was served with absolutely no offer of coffee or after dinner drinks. There is a large glass door through which you can observe the kitchen. "Students," laughed, talked and took pictures while Chef Forgione appeared to supervise. It gave the impression of kids fooling around and the quality of the food matched."

  • "My wife and I were in Napa for our 10th Anniversary and I was looking for a special place for our anniversary dinner. I tried making reservations for both the French Laundry and at The Conservatory about two months in advance. After trying (and failing) to get into the French Laundry I was happy that I had booked The Conservatory as a backup. In fact, our experience and food there were so wonderful I was happy that we ended up there instead. The Conservatory offers a prix fixe menu with about 5 - 7 courses (You can also order different wine flights with each course for extra $$$ per person). Each one was more delicious than the next. I highly recommend dining here before everyone finds out how wonderful it is!"

  • "I had lunch at the CIA many years ago and I remember being knocked over by the wonderful food. We were looking for a place this year to celebrate a birthday and we thought about going back to the CIA. It wasn't until I went online that I realized that there are two restaurants at the CIA, the Wine Spectator Restaurant and The Conservatory. Since I couldn't remember which I visited those many years ago, we chose The Conservatory since it sounded more special. Well, the short of the story is that we chose incorrectly. It's not to say that the Conservatory was bad, it just didn't live up to my memory of a fantastic dining experience and even though the food was good it didn't wow us."

  • "A great place to have a nice and quiet sit down dinner. It is a pre-fixed meal, so you won't have to think about much. The food is well presented and you can tell they went out of their way to do so. Portions are just right and you sample many dishes. It is a great experience. The only drawback I can say was when the check came out, there is a service charge added to the bill. it was like $24 for two. The staff told me opentable should have notified me about this charge, but I guess I didn't see it and that was the only surprise. Otherwise a highly recommended place to dine."

  • "Anniversary dinner with my wife. Chose the prix-fixe menu with wine pairing. All wait staff were very attentive and our waiter in particular was very willing to answer questions about the institute and to explain the wines served, as well as, the individual courses. Made the whole dinner an experience. That being said, the food exceeded the experience. And the pairing of the wine was spot on. I was impressed with all six courses, especially the oysters and the short ribs. I would highly recommend dinner at the Conservatory to anyone."

  • "What a pleasant surprise when I ran across the Conservatory on OpenTable. It is a relatively new program and new concept that is true farm to table where they take it even one step further and they even plant and farm many of the vegetables and herbs used in the dishes. Anything not from their own farms is from local farms and meats and fishes from local purveyors. Overall: I absolutely love the farm to table concept and this program and would do it again in a heartbeat especially since the varying menu will offer a completely different experience each time."
