Mark Kiffin, celebrated chef, owner, and author of the Compound Restaurant, has won the James Beard Foundation award as one of America's Best Chefs. The Compound is Santa Fe's premier restaurant with Chef Kiffin's acclaimed seasonal Contemporary American cuisine derived from Santa Fe's rich heritage of regional and Mediterranean influences. The New York Times, Gourmet magazine, The Wall Street Journal and Wine Spectator have all selected the Compound as Santa Fe's favorite. Equally impressive is the attentive, highly knowledgeable and friendly staff.
Chef Kiffin's menus focus on the exclusive changes in seasons such as hearty braised dishes in the fall and winter using apples, pears and cider from local harvests, osso bucco and porcini risotto while in spring and summer feature fresh local vegetables and naturally raised organic lamb and delectable strawberries.

  • "Food is generally very good, although cooked fish is too often sub-par. Halibut was overcooked, despite our request that it be cooked less than the chef's "medium." (On several previous occasions, light fish has been served with inappropriately heavy brown sauces.) Tuna tartare was excellent as usual. Wine list is well organized, somewhat heavy on expensive wines; we had a nice generic bourgogne blanc for $50. Ambiance is lovely, unless there are loud-talking tables."

  • "The best thing about this place was the ambience. The food was not bad. I had the chanterelle and egg appetizer, which was flavorful. Strong balsamic taste, but very little chanterelle. The egg was cooked soft but I thought it was a little overcooked, in the sense that very little yolk came out when you sliced it. For the main course, I had the halibut. Everything on the plate was good except for the halibut. The sides and sauce were all done well, but the fish was overcooked. It dried out a bit and I wished I had a better piece of fish. So if you go out to this restaurant, know that you are getting a great ambience. The food is good enough for a romantic night out but maybe it's not a place just for food or for foodies."

  • "This is a great restaurant on Canyon Road in Santa Fe. It is in a relatively secluded location with plenty of parking. The outdoor dining is delightful and very comfortable.But, best of all is the food. Three of us had the Duck and we all agreed that it was teriffic, almost to die for. We go to Santa Fe often and never tire of the Compound. I think you will love the food and ambiance as much as my wife and I do."

  • "Very courteous staff. We were seated immediately and the waiter was excellent in his knowledge of the menu. My hamburger (I know . . . you are thinking . . . hamburger??? ) . . . but honestly, I am impressed when a restaurant can transform the mundane (burger, fries, soup, etc.) into an unbelievable experience. . . . I have to say . . . this is the best burger I have ever eaten."

  • "Three of us each had delicious salmon, properly cooked to order, and excellent desserts. Service was attentive. Our waiter gave the price of the special but sadly this does not seem to be the general policy since I overheard a waiter at the next table fail to state the price of the special. We have experienced this attempt to deceive customers in the past at The Compound; in this case the special was chanterelle mushrooms at $25."

  • "Arrived with my wife for lunch reservation on time at noon. Asked to sit on the patio, which was virtually empty. Told it was fully reserved. Over next 40 minutes, two of eight open patio 2/4 tops were seated. Thought it might be our casual attire until the guy with "STP" t-shirt and NASCAR hat got seated on the patio. Order was taken immediately with wine. Food was brought out in three minutes. Local "favorite" chicken schnitzel was oily and undercooked. Twenty-five minutes after arriving, we had finished eating. Inside and out still 3/4 empty. We lingered 15-20 more minutes, watching the 2/3 empty patio."

  • "A perfect restaurant for special occasions or fine dining. The Compound is very pricey but the food is delicious and innovative. The wine list is deep and the service was perfect. The desserts were a little disappointing: $7 for some tiny chocolate chip cookies that were hard as a rock? Everything else was great."

The service was very slow, I think there was something wrong because the wait staff working seemed to be quit stressed. I must assume they were short staffed the evening we went, will probably try this place again."

  • "Have been here twice in the last two weeks. My husband and I usually split dishes to control portions. Both times we split the TunaTartare and their special tenderloin- a glorious 8 oz total-giving each of us 4 oz with a wonderful sauce and tiny roast potatoes and carrots. The Tuna Tartare was delectable. We also ordered some Chantrelle mushrooms that were a specialty item. Great on the tenderloin. We had a nice Spanish Ribera del Duro wine. I honestly did not care for the watermelon sorbet we chose- just tasted like watermelon ice. Overall, however, have been coming here off and on since the early 80's when we visit and think it is a very special place. Best restaurant setting of all--and you can hear each other talk!! Very romantic."

  • "The Compound lived up to the negative reviews. Took an hour for the waiter to take our order. It was clearly short staffed and the server had too many tables. It was clear the manager was not on it nor helping with the chaos. All the restaurant employees were running around frantically and making comments, "like, Oh, God" as they were stressed. There was no attention to our needs or to make it a pleasant dining experience. The soup and tuna tartar was fantastic. The steak however was over sauced and salty. It had a Foie Gras Hollandaise sauce. It all tasted like cheap A1 sauce. For the price i paid for that meal, I expect the management to be on it with the staff and to make it smooth and not feel like you eating at a cheap diner."

  • "We had a mediocre meal. My salad and dessert were delicious though. For the prices charged I expect much better. One of us ordered the lamb. Each piece was cooked to a different level of doneness. Our waiter didn't know how to compare the wines and had to call someone else. I expect such a restaurant to have better trained wait staff. Our tablecloth had some spilled food on one part so the staff just covered it with a napkin. My husband and I had eaten here years ago and had good memories of the place. But considering the top prices here and all of our other great choices in Santa Fe, we won't choose to eat here again. It's not worth $100 + per person."

  • "The corn bisque and crab cakes were beautifully presented and equally tasty as was the wild mushroom and polenta and the poussin- fantastic. We are first and foremost wine enthusiasts but loved the Sprig Martini- wish we could have gone back the next day for more- if we can't get the recipe we will have to spend endless hours in the kitchen trying to recreate. By the way, great wine list. We were in Santa Fe for 4 nights and went to 4 great restsaurants but the Compound tops our list. Can't wait to return."

  • "Our second visit and we weren't disappointed! Everything about this place is superb. Friendly, welcoming staff. Outstanding seasonal menu. Superb service. Lovely atmosphere. We enjoyed the summer menu, our group sampled the tomato and corn bisque, soft shell with grilled creamed corn appetizer, and tuna tartare. Entrees included fresh northern halibut and Scottish salmon, plus a side of charred snap peas. All were prepared perfectly. We had a taste of every dessert --blueberry mousse, watermelon sorbet, strawberry shortcake, apricot tart and liquid chocolate cake. Don't miss this gem!"

  • "We ate at compound for the first time. We started with drinks on the patio. That was a charming space with delicious drinks. We moved to a table indoors for our meal. The meal was perfect. I had the corner bisque and salmon with risotto. Some of the best salmon preparation I have ever had. Hubby got soft shell crab which was a 10 he said and the rack of lamb. The lamb was slightly over cooked for medium well, no pink in center as they said it would come. Why this didn't get a 5 star is we did not care for the indoor ambiance. We started dinner at 6:30. We faced a large group and a wall with a rainbow painted on it!"

Food was, as always outstanding. my wife raved about the tuna tartare followed by sweatbreads and foie gras. I loved my tomato-corn bisque followed by scampi. The shrimp were huge and perfectly done. Two nits. One is the prices on the dinner menu and the bar menu differ for a couple of dishes. Two. When we were seated, staff at the bar were updating the winelist accross from us, seemed tacky."

  • "I truly enjoyed the setting and atmosphere of The Compound Restaurant as we were seating immediately upon entering. It looked like everyone present was enjoying their food. Our servers, Reggie and Alejandro, were so very good and were very helpful in our selection of first and second courses. The crabcake was very tasty and it was so nice of the chef to separate the course for us. Excellent presentation! Our main courses were the duck and chicken breast. I found the duck prepared the way that I had requested and was very tasty and tender as well as the vegetables and paired very well with the Pinot-Noir wine. The portions were good also. My wife had the chicken breast that seemed to taste bland and was obviously missing something."

  • "Within the last week I have been to both dinner and lunch at The Compound and found them both delicious and delightful. My friend and I were celebrating significant birthdays and were so pleased with the cuisine, the atmosphere and the service. The 'special' Compound cocktails were amazing. For dinner our entrees of duck and salmon were both lovely presented and tasteful. We enjoyed different types of ice cream for dessert--the regular dessert menu did not appeal. For lunch we sat on the lovely patio and had the absolutely wonderful chicken schnitzel--a preparation to swoon for. We also enjoyed a gin and tonic. I already have plans to return in August, The wait staff is professional with the right touch of personal attention."
