Mark Kiffin, celebrated chef, owner, and author of the Compound Restaurant, has won the James Beard Foundation award as one of America's Best Chefs. The Compound is Santa Fe's premier restaurant with Chef Kiffin's acclaimed seasonal Contemporary American cuisine derived from Santa Fe's rich heritage of regional and Mediterranean influences. The New York Times, Gourmet magazine, The Wall Street Journal and Wine Spectator have all selected the Compound as Santa Fe's favorite. Equally impressive is the attentive, highly knowledgeable and friendly staff.
Chef Kiffin's menus focus on the exclusive changes in seasons such as hearty braised dishes in the fall and winter using apples, pears and cider from local harvests, osso bucco and porcini risotto while in spring and summer feature fresh local vegetables and naturally raised organic lamb and delectable strawberries.

  • "We had a mediocre meal. My salad and dessert were delicious though. For the prices charged I expect much better. One of us ordered the lamb. Each piece was cooked to a different level of doneness. Our waiter didn't know how to compare the wines and had to call someone else. I expect such a restaurant to have better trained wait staff. Our tablecloth had some spilled food on one part so the staff just covered it with a napkin. My husband and I had eaten here years ago and had good memories of the place. But considering the top prices here and all of our other great choices in Santa Fe, we won't choose to eat here again. It's not worth $100 + per person."

  • "The corn bisque and crab cakes were beautifully presented and equally tasty as was the wild mushroom and polenta and the poussin- fantastic. We are first and foremost wine enthusiasts but loved the Sprig Martini- wish we could have gone back the next day for more- if we can't get the recipe we will have to spend endless hours in the kitchen trying to recreate. By the way, great wine list. We were in Santa Fe for 4 nights and went to 4 great restsaurants but the Compound tops our list. Can't wait to return."

  • "Our second visit and we weren't disappointed! Everything about this place is superb. Friendly, welcoming staff. Outstanding seasonal menu. Superb service. Lovely atmosphere. We enjoyed the summer menu, our group sampled the tomato and corn bisque, soft shell with grilled creamed corn appetizer, and tuna tartare. Entrees included fresh northern halibut and Scottish salmon, plus a side of charred snap peas. All were prepared perfectly. We had a taste of every dessert --blueberry mousse, watermelon sorbet, strawberry shortcake, apricot tart and liquid chocolate cake. Don't miss this gem!"

  • "Had my birthday dinner at the bar at the Compoind. (Make your reservation for the bar-great place to socialize). Food was, as always outstanding. my wife raved about the tuna tartare followed by sweatbreads and foie gras. I loved my tomato-corn bisque followed by scampi. The shrimp were huge and perfectly done. Two nits. One is the prices on the dinner menu and the bar menu differ for a couple of dishes. Two. When we were seated, staff at the bar were updating the winelist accross from us, seemed tacky."

  • "We ate at compound for the first time. We started with drinks on the patio. That was a charming space with delicious drinks. We moved to a table indoors for our meal. The meal was perfect. I had the corner bisque and salmon with risotto. Some of the best salmon preparation I have ever had. Hubby got soft shell crab which was a 10 he said and the rack of lamb. The lamb was slightly over cooked for medium well, no pink in center as they said it would come. Why this didn't get a 5 star is we did not care for the indoor ambiance. We started dinner at 6:30. We faced a large group and a wall with a rainbow painted on it!"

My friend and I were celebrating significant birthdays and were so pleased with the cuisine, the atmosphere and the service. The 'special' Compound cocktails were amazing. For dinner our entrees of duck and salmon were both lovely presented and tasteful. We enjoyed different types of ice cream for dessert--the regular dessert menu did not appeal. For lunch we sat on the lovely patio and had the absolutely wonderful chicken schnitzel--a preparation to swoon for. We also enjoyed a gin and tonic. I already have plans to return in August, The wait staff is professional with the right touch of personal attention."

  • "I truly enjoyed the setting and atmosphere of The Compound Restaurant as we were seating immediately upon entering. It looked like everyone present was enjoying their food. Our servers, Reggie and Alejandro, were so very good and were very helpful in our selection of first and second courses. The crabcake was very tasty and it was so nice of the chef to separate the course for us. Excellent presentation! Our main courses were the duck and chicken breast. I found the duck prepared the way that I had requested and was very tasty and tender as well as the vegetables and paired very well with the Pinot-Noir wine. The portions were good also. My wife had the chicken breast that seemed to taste bland and was obviously missing something."

Most impressive is the wait staff; An art form that has been lost is revived here at the Compound. They were knowledgeable, attentive without being intrusive and made you feel like they were your personal assistant for your dining experience. We ate at the top 3 rated restaurants in Santa Fe. The Compound was absolutely magnificent and by far, the best in Santa Fe. This restaurant will be on our list every time we visit Santa Fe. "

He was very knowledgeable about both the food and the wines - and spirits (new local vodka). The appetizers were excellent. the Lamb and the Haddock with lobster sauce got strong reviews. My duck breasts were unexceptional and for the first time I found the pastry in the desserts too doughy - but I am picky."

For an enjoyable special occasion we expect a leisurely pre dinner cocktail followed by main course with wine plus or minus dessert taking about 2 to 2.5hours. If we did not ask for breathing space after our mains we could have been done in 1 hour. We had the impression they were determined to have as many sittings per table as possible. "

  • "We had a wonderful dinner, even in the middle of a rainstorm. We were early because we didn't know how long it would be to get there with all the rain. Even no electricity in our Hotel. But we were seated immediately and told it was not a problem. The food was so amazing! The mussels were the best I have ever had. The service was great, It had been a couple of years since we had been to SF and The Compound, but it did not disappoint! Will definitely be going again."

Lobster pieces on the Alaskan Halibut tasted sweet and fresh (the rest was superb also). Dessert was incredible. If you like chocolate, order the Liquid Chocolate Cake. Heaven. Comfortable, easy environment. We're new to Santa Fe and had only had lunch there previously - outside in back. That was also excellent (food and environment). "

Everybody in our group rated thier meal as one of their all-time top 10. The wine list is extensive but doesn't include any of the "standards" that show up at restaurants of this level of quality. No matter, the recommendations from the wait staff were excellent. "

We had dinner with clients on a Tuesday night, the flavors were lacking, the timing in between courses was off, we did have a special request which may have altered the timing, but it should not have.   • "We had a truly wonderful, delicious, birthday celebration dinner that was unfortunately marred by the restaurant's poor choice of table arrangements. We were seated too close to a large group of very noisy, very buzzed, raucous young women for which a long table had been arranged for their party. In addition to the unacceptable noise level, my chair backed up to this group not leaving enough room for the wait staff to pass without knocking into me. I was unable to move my chair out of this narrowed "passage way" and even though some wait people did graciously apologize, no one made any attempt to rectify the situation. I left with a headache. To me, this was unacceptable, especially at the price of a $400.00 dinner!"
