The historic Marshdale Lodge which was built in the 1920's is now home to The Bistro, where traditional European cuisine meets the quaint locale of Evergreen.

    5 star all the way. We were seated next to the real wood fireplace, the temperature was perfect. The waitress was courteous, friendly, and attentive. The beef Carpaccio and Brussels salad were great. My filet was prepared perfectly medium rare and tasted better than any I've had in years. My wife's beef bourginone was prepared exactly as it should have. The garlic lavender mashed potato's were unique and delicious. I will recommend this place to everyone I care about and visit often.

    We have dined at the Bistro several times, and have enjoyed every visit. The service is great, as is the food, and a table by the fireplace makes it a cozy place while watching the snow outside.

    Nice place for a special occasion. Tables are a bit close which means you get to hear others conversations, especially if they're loud... but overall, great experience. Wide array of foods on menu.

    The Bistro was very very good. Being that I travel quite a bit and am in a number of large cities, I reserve 5 stars, for true 5 star restaurants. Believe me, for the area that it's in, it's 6 stars. Evergreen/Conifer is not known for their fine cuisine. Bistro has an excellent menu choice. Everyone will find a variation of a favorite. It's wonderful to find good fish on the menu. The special the night we went was parmesan mahi, and it was excellent. I will certainly make this one of my new frequented spots. Price point not too bad either.

    The Bistro was recommended by a local bed and breakfast. We picked it for the 3rd Friday night special, prime rib. The menu was so great that only one person had the perfect prime rib. The meals, atmosphere and staff were just perfect for this occasion. It definitely calls us back!

    Small main dining area and a piano player on Friday and Saturday nights are not a good combination. To talk with table mates, you must raise the voice level to be heard. The side dining room is much better on those nights.

    We dine at the Bistro about six to eight times a year because they offer the best combination of cuisine, service, and ambiance in the foothills. We particularly like the evolution of their appetizer menu with the inclusion now of duck breast tacos, the braised brussel sprouts, actually on the salad menu but also a great appetizer, and the dedication to selected fresh seafood. We both opted this time for the house seasoned beef tenderloin fillet, which was well crusted on the outside and perfectly medium throughout. Our server was always prompt, but unobtrusive. Truly, the best dining in the Evergreen to Conifer area.

    We always love the Bistro. The food is plentiful and outstanding. They are very good for gluten free. It is wonderful to have my own bread. We enjoy sitting in the porch area as it is quieter.

    A perfect setting to celebrate a special birthday, all aspects of the meal were outstanding. Our food was delicious, artfully prepared and presented. The chef is a true master. Our service was equally excellent. Despite a very crowded house, it was prompt and courteous. A delightful restaurant!

    Our dinner entrees for the restaurant week were superb. We chose the salmon and the night's special of sea scallops and mashed potatoes. One of the best dinners I have ever had. Server was friendly, helpful, efficient and added to our experience. The Bistro has never disappointed.

    Took our elderly neighbor to dinner 9/13. There was a large party in the dining room & very noisy. We wish we'd been given a heads up about that. The service was slow (? due to how busy the restaurant was), the food was mediocre and luke warm. Not our usual experience at the Bistro.

    We love to take visiting friends to The Bistro...it never fails to reward us with an exceptional meal in an historic mountain setting, accompanied by friendly and careful service. On this occasion, the restaurant was hosting an event for 100 guests in the main dining room, yet our dinner with friends was intimate, quiet enough for conversation and everything was brought to the table in perfect timing.

    Loved the duck comfit and the mousse is always good. The pork belly slider was a little disappointing as the bun was basic grocery store and dried out. Alison did an excellent job of serving me even when I unexpectedly ordered a cocktail between courses. A lovely dinner.

    Having read with interest the 5280 menu of this out of the way Bistro we decided to give it atry. It was well worth the 40 minute drive. The atmosphere is very rustic but the food and service are anything but. It started with the beet salad which was excellent and particularly pleased my wife because they cut off the stems of the spinach, a step most restaurants omit. My wife said the salmon preparation was one of the best she has ever had. My smoked short ribs were fall off the bone delicious. In fact everything about the meal was exceptional. We have definitely added it to our must return list.

    We have been in the area for about a year and The Bistro in Marshdale is one of our favorite spots. While the food is "fine dining" the atmosphere and dress are strictly Colorado casual. This is not to say it isn't run professionally. The owners and staff are very friendly and do everything they can to be sure one has a great experience! You will not be disappointed.

    Beautiful drive to get there. Great food. Fabulous service. And it was a great thing when we moved to the porch because I thought my brains were going to be rattled loose by the jarring noise level of the main room. NOT your romantic date night spot. Maybe some plants or sound absorbing materials in the room?

    We went with our friends for Restaurant week, they'd been before and recommended it, and I thought the menu looked great! To start we ordered a bottle of wine that we knew was rated 90 points, but of course they didn't have that vintage on the list anymore… turns out the one they had was 83 points and gave me heartburn. Rarely do I not finish my wine! The first course was fine, but my friend and I ordered the duck confit for dinner. What a disappointment!? Dry and tasteless, the worst both of us had ever had. His wife's roast beef was excellent, and my wife's ravioli was good also. Desert was fine. Service was good, but the noise level was so high we had a hard time carrying on a conversation across the table.

    We have enjoyed the Bistro at Marshdale in the past few years. The wait staff were great. The food was fantastic. We found it was noisy and sometimes hard to talk to each other, but we had a great corner table and enjoyed the experience. The chocolates for our Anniversary were wonderful. We will be back.
