A word from Terramae
You might be wondering what an Appalachian Bistro is.

It"s a culinary celebration of the flavors loved from the peaks of Maine to the foothills of Tennessee and Georgia. From seafood to elk to chicken and more----all accompanied by farm fresh vegetables--It's as local and fresh as we can get it.

Did we say the unfamiliar? Definitely! But it's all from mother earth in our unique and creative way.

Five of us went to Terra Mae for dinner on a Friday evening. The décor is charming, but refined. Downstairs is the restaurant housed in a late 19th century brownstone. Upstairs is a hotel, the Stone Fort Inn, which comes with free full breakfast for guests, we were told. We were promptly seated, our drink orders taken and served, and appetizers followed. I had the Crispy Veal Sweetbreads with grits and a poached egg, drizzled with a lemon butter sauce. The sweetbreads had been properly soaked, pressed and drained before sautéing so that they were, in fact, crisp. Excellent. The other diners liked their appetizers equally well. For the main course, I had the 20 oz. Heritage Angus Cowboy Cut Ribeye Steak, which was cooked to exactly the medium rare that I ordered. Meat eaters' heaven. It was served on a large circular chopping block, though I would have preferred a plate or platter. It was accompanied by some broccoli rabe shoots sautéed in olive oil with just the right amount of garlic as well as a sizable side dish of tasty gratinéed potatoes. The others had duck breast, bacon-wrapped scallops, a fish dish and a filet mignon. All were satisfied with their entrées. The pecan pie was excellent, with more pecans than gooey filling and a flaky crust - just as it should be. My only complaint is that the coffee was weak, at least for my taste. Service was attentive, efficient and unobtrusive. The wine selection is decent, mostly American, wines at sensible, but not cheap, prices. I definitely would like to go back to Terra Mae and highly recommend it to anyone for that special occasion. A very welcome addition to the Chattanooga dining scene.

My wife were staying at the Stone Fort Inn and decided on our last night not to go out for the evening. Instead we made reservations with TerraMae, Appalachian Bistro. The restaurant is off the back street behind the Inn and places an interesting twist to it's menu. Frog and Rabbit were on the menu that night, and from what I understand, the menu does change with farm to table availability. The waiter was accommodating, the wife needed to make some substitutions, and the food was excellently prepared. My wife had the Trout and I the sirloin. First course choices were interesting, but nothing piqued our interest. The wine list was good but not remarkable, no Merlot, though we both found a wine to enjoy. Overall very good.

This was the first time that my husband and I ever went to Terramae. The hostess was all smiles and so very gracious. Speaking from a chef point of view, the flavors that Chef Shelley developed in every course was truly a three act play in every bite. The dishes were so well balanced that it was almost impossible to get mouth fatigue. You will not be disappointed. You get twice as much food as you would at one of your chain restaurants, and it is fresh food from scratch. The staff and the kitchen are amazing and impeccably clean. What a wonderful experience. The atmosphere creates a small cocoon and the wait staff are never intrusive and very well trained in the fine dining experience.

Our dinner was absolutely lovely. The farm to table trend is very appealing. Terramae has an upscale menu with appropriate pricing. The serving sizes were very satisfactory. I hate it when I go to a nice restaurant, pay a nice price, but the serving is a swish of sauce and the entrée sits in a tiny heap in the middle of the plate. Our server was very efficient and friendly. The vegetable plate was delicious. We also had a pork dish that was excellent. Our server recommended a reasonably priced, Spanish wine that complimented our meal. Lastly, the atmosphere was elegant, but casual dress was acceptable. We really enjoyed it.

I certainly recommend this restaurant to anyone who enjoys fine dining in a unique atmosphere.

Booked reservation for 8:30 and due my own stupidity went to wrong area had about 15 min walk to get there as a consequence we arrived 10 min before 9 and they close at nine but they took us anyways a few people were just finishing up. We ordered wine and our meal and it was everything we had read about it being great best meal we had on our 10 day holiday. Waiter recommended nice white with the trout and it was excellent as was the trout done to perfection I had the duck breast was great but trout was the winner. We stayed for dessert we had fruit cobbler and the bread pudding both were excellent. Presentation of food was top notch and for me adds to the dining experience Thanks to the staff for taking us 10 min before closing

I brought in flowers and a bottle of wine hours before my reservation and was greeted and treated very well. When my date and I arrived, our table was set with the flowers perfectly on display. As our server, Eric, came to greet us, he poured our wine and complimented my taste. To start we had the Frog Leg special which was wonderfully set on cornmeal grits, absolutely delicious. Our entree's took quite long to arrive, but to accommodate, Eric brought out two glasses of complimentary wine to apologize. The rabbit was wonderful, and the Veg plate was truly fantastic. The ambiance, the service, and food are amazing. This restaurant is a new personal favorite. If you're stopping by, ask for Eric. I know I will next time.

This was our first time at Terramae. The menu was eclectic with many items of interest. We ordered the organic chicken and the Appalachian Sampler and collards. The chicken dish burst with flavors I had never previously known. The Sampler was an Applalachian version of a ploughman's lunch, incredibly varied and tasty. The wait staff were very friendly, even offering us a different vintage of a wine We had ordered. I can't wait to go again.

The brunch on Sunday was our choice, the noise in the restaurant was surprising - apparently a wild baby shower in the next room. However, our service was very good and the food (a burratta mushroom omlette and salmon eggs benedict with friend green tomato instead of bread with a tarragon lemon hollandaise were excellent). The $10 per person mimosas were a nice touch as well. We will be back.

Our sole experience dining at Terramae this past Sunday was hugely disappointing. Even though we made reservations for brunch ahead, we were ushered to a table crowded together among other diners in the back of the first floor. The noise level was deafening! We were informed that there was a Baby Shower going on in an adjoining room and a birthday party in a front dining room. When we mentioned to the hostess that the noise level was simply too uncomfortable, and that we'd prefer not to sit out of doors (it was a hot day), we were offered a seat at the bar near the front. Although surprised at our being seated there, the woman was quite gracious and understanding. The food was a horrible disappointment! Precooked and microwaved!

Appetizer of ham wrapped figs was good but too pricey. My wife ordered a steak cooked medium well and it was served rare. Had to wait about 12-15 minutes for them to fix. Did comp a dessert to cover the error. I had the lamb shank, which was good. Drinks were quite good - I had Hemingway daquiri and she had the albarino (Spanish white wine). Although we again left our stress at the door and enjoyed the quiet atmosphere, the food lacked some of its normal sizzle.

My husband and I went to Terra Mae for dinner and ordered the fig appetizer, which is wrapped in bacon and blue cheese. It was fantastic, light enough for two people to enjoy without ruining our appetite for dinner. We enjoyed one of the specialty cocktails which was light and lemony and not too sweet. For dinner we both had the scallops with corn and crab risotto. The scallops were prepared absolutely perfectly, with a beautiful, brown sear on the outside and a tender, juicy, succulent texture inside. The risotto was to die for. It was tender and creamy, and seasoned to perfection with a delicate addition of crab and corn. It was truly a memorable meal, and we're sure to be repeat customers.

We had 3 different appetizers The Surf and swine was amazing! Great flavor.. The bacon wrapped scallops were good but the corn and crab risotto which is usually fantastic was lukewarm flavor good but not hot enough for me. The Painted Hills Beef tenderloin was great! The black garlic steak sauce was incredible. My husband thought his Rabbit Special was excellent (special for that night). My wife and I dine out together relatively often at the end of the week. She is an excellent cook and she utilizes the wonderful produce from our large vegetable garden to create wonderful meals. In addition, I travel almost weekly on business, which results in me dining out a great deal through the week. We like to be "wowed" when we dine out. Terramae definitely takes a fresh look at our southern heritage incorporating both traditional and non traditional food ingredients. Along with the ingenious combinations, the presentation is quite stunning. Service is first class from the entrance to the departure. A great dining jewel for Chattanooga.
