  • Parking Details: Most of our dining events are in the evening making parking fairly accessible. There is metered street parking that is available in the front of the mill building which is usually available and free in the evening. The parking lot across the street from the mill building is no longer available at any time for parking.
A word from Stages at One Washington
Stages at One Washington provides an upscale, unique, and enjoyable dining experience to guests. The kitchen is headed by Executive Chef and Owner Evan Hennessey, who is an acclaimed local chef with experience working at some of the country’s top restaurants. The cuisine is contemporary American and European, as Chef Hennessey is known for his avant-garde style. Stages offers nightly tasting menus with beverage pairings, and the menu changes frequently with what is seasonally and locally available, so check the website for the current menu. The restaurant is reservation only and typically limits its nightly seating to the 6 seats located at the kitchen table which allows guests to watch and interact with the chefs throughout the meal. Stages also periodically offers unique theme dinners and popup dinners which tend to revolve around a specific inspiration for the event. Continued

  • "This was a total let down!! service was sooo bad 5 of us started laughing about it. She had no idea About the menu items then gave the wine for the pairing 30 mind before that course was ready. Reservations were At 7:30, did not walk out until 11:15... That is litterly how long it took and the food was not worth the time And money none if us said we would go back or recommend it."

  • "If you haven't experienced an evening at Stages, well you simply haven't experienced one of the most memorable dining events of your life. We had a fabulous time at the kitchen dining bar watching Chef Evan Hennessey and his sous chef prepare 4-courses of artfully presented and delectable plates paired with wonderful wines suggested by our host. This was our third time at Stages and the experience of dining with a small group in the kitchen was so much fun we will sure to be back again. We've dined in high-end restaurants in NYC and in Boston and for certain, Evan can compete with all of them. Stages is a great value and a truly memorable place."

  • "Pre-fix chef's table is such a wonderful concept. 8 lucky diners each evening get to sit in the kitchen and watch the three chefs create your dishes with expert precision and gorgeous plating. The combination of flavors and textures on each plate are an explosion on the palate. Foodies need to try this place! It really makes one respect the amount of work that goes into the plate!   • "Stages is hidden away on the third floor of a converted mill, if it weren't for Open Table we never would have found it. This is a restaurant that's strictly for foodies, it's very small, only eight seats located in the kitchen. The menu is prix fix and changes depending on what's available, for example i had the razor clams for one of my courses which were only on the menu the night we were there because they managed to get a few from their clammer. The chef prepares and serves each dish with explanations and wine recommendations, because you are at a bar in the kitchen you can interact with the chef as much as you want. The meal was innovative, perfectly prepared and delicious. Stages has the potential to be our new favourite restaurant."

  • "I made reservations for my wife and I to try this restaurant for a Valentine's Day dinner. I expected the four-course prix-fixe menu; at $40 pp, expensive but worth a try. When we arrived we learned that tonight was a special eight-course prix-fixe menu, $80 pp, with chocolate in each of the courses. We decided to forge ahead (it was too late to leave without embarrassing ourselves). The food was certainly 'avant-garde' -- miniature-sized portions in artistic presentation. Tastes were unusual (chocolate with fish?) but surprisingly better than I expected. In the end the experience couldn't justify the expense for us. Others with a more refined pallet and a larger bank account might find this this restaurant more to their liking."

  • "The pork belly was the best I ever had. The beef needed some salt or something. The ceviche seemed bland. Difficult to pair chocolate with food for every dish. Some went better with chocolate than others. I expected more. This is only my second dinner here but I would try it again."

  • "If you want to understand the future of imaginative cooking, Stages is a must destination. Granted a little hard to find once your inside the renovated artist warehouses of Dover,once inside it is magnificent. The artful blending of flavors is nothing short of stellar. You really have a hard time thinking your in Dover, NH. Chef Evan and his charming wife have created a must destination for Seacoast foodies. Our waiter was as professional and unassuming as any I've experienced. The artwork on the walls adds to the definition of a truly memorable dinner excursion to the future of what fine dining will be. Chef Evan's lineage from cutting edge chefs Thomas Kellar and Grant Achantz really shine through. A great dining experience for foodies."

  • "It was my wife's birthday and we wanted a very special dinner. Dinner was a four course prefix with two choices for each course. The meal was prepared in the kitchen for 6 patrons and the chef explained each course. The combination of ingredients and the flavors were sensational. Each bite was an absolute delight. We haven't had a meal this good/special in years. You can select a flight of wines to accompany the dinner which I would recommend. Stages is a gem and I highly recommend it for a special night. The menu is constantly changing and Chef Hennessey is always experimenting."

  • "I am not a foodie, and frankly, not very adventurous when it comes to food, so I was a little nervous about going here. It turned out to be amazing. I ate things I never would have thought I would, thinks I didn't think I even liked, and loved every bite. Sitting in the kitchen was so much fun, being able to watch Chef Evan and his team work. I can't say enough good things about Stages, and can't wait to go back again!"

  • "Great for foodies who can appreciate the work that went into the planning and preparation of the meal. I really enjoyed the direct interaction with the chef who took our order and served the meal. There is no waitress. He only seats 6 people at a time. Great opportunity to meet other couples who are probably also foodies. This is a very unique dining experience that is unlike anything in the local area or Portsmouth. The food is high end cuisine and not for everyone. Although the food and wine was delicious, I think there is room for improvement to achieve a 5 star meal. I think the food concepts are great but not yet perfected. I think this will improve with time and experience. I would definitely return."

The entire dining experience was just that, a wonderful time with the most unique food. The setting was simple yet elegant. The food was absolutely delicious and served in a most appealing way. Our waitress was informative about the various dishes and yet not intrusive. We had a long, leisurely dinner and enjoyed every aspect."

  • "I had several friends go to Stages this fall and they raved about Stages. I was excited to finally try it out for my birthday this past weekend. The intimate setting is great for a date night or special event and they have dining events throughout the year for larger groups. The food was incredible! Evan and the other chefs were welcoming, informative and entertaining to watch prepare our dinners. I loved it and can't wait to go back. In fact, we made reservations for the NYE Great Gatsby event while we were sipping coffee and finishing off the gingersnap ice cream. So excited! Make your reservation now. It is so worth it!"

In his very advanced kitchen setting he personally cooks and serves up to six diners who get to interact with him and his talented staff. Evan chooses the menu and the paired wines and describes every aspect of how the amazing dishes are created. It was a culinary experience that is unforgettable.   • "A must do experience for a top-notch culinary delight.......the chefs prepare all the courses right in front of you using a vast array of local products from area farms and fishermen......the presentation is fabulous as well! Don't be put off by the initial price as remember you get a 4 course meal which you and your partner would undoubtedly pay just as much at any area restaurant if you do the math to include appetizer and dessert."
