If your menu is based on 3 concepts, tell diners what the meals will contain beforehand. Apparently, this was skipped at our table, and we ended up guessing which course to order.
At the price point you're offering, the cheese course should not be optional. I've never been "upsold" DURING the dinner at any other establishment.

The view is breathtaking and the ability to walk out to the Terrace Bar and look around adds to the fun. The food was exceptional! We did the wine pairing with the eight course prix fix dinner and it was a truly unforgettable experience. We have done them before at other restaurants and usually are disappointed but this one lived up to its name. The wines were ones we would never have tried and actually didn't like when sipped on their own but the pairing with the food was delicious.

Regardless of which of the three tasting menus you choose: pasture (veal), stream (freshwater fish), or field (foraged greens), you will be wowed by several courses plated and finished by the waiters right at your table. This requires an intense level of training and knowledge by the front of house staff that impressed me. The food was pretty great too. In the pasture menu, which had several veal courses, the sweetbreads course with almonds, cherries and asparagus was my standout favorite of the savories. Desserts were stellar too, from the criollo chocolate and ice milk to the olive oil cake and clover granite dessert from the spring menu.6/6/2013 12:00:00 AMSixteen StarsI do not live in Chicago but when I come here, I make Sixteen a must. Last time, I was here the Chef was gunning for his first Michelin Star. Now after being Michelin-starred, I must say the menu is completely different and absolutely worthy of the Michelin Star. My two friends and I tried the 12 course tasting menu with pairings because we could not make up our minds whether we liked The Stream (food from within and around water), The Field (again, in and on the field) and The Pasture (things in, beside and on the pasturelands). And what a denouement of exquisite food with beautiful pairings with wines mainly from small vineyards. The service has also been kicked up a notch to well-appointed and consistent. Wine list is so "impressive" as there are bottles of more than two thousand dollars! Menu consists in gourmet options, but the best idea might be to choose the four courses menu (although it is another of eight), so you can enjoy several flavors. No doubt you will be fascinated by seen and taste every dish served! It is not as expensive as might be, lets say is "costly" but fear for what is offered. Food was excellent, creative, but a little minimalist....you can leave hungry after 8 courses. Diners choose themes for the set of courses: stream, prarie, and pasture. These seemed vague to me, but there was a sampling to help make the decision. However the sample did not reflect many of the courses. We did the wine pairings, but with our "prairie" selection there was no red wine for any course. There were generous pours for the wines which perhaps made up for the lack of food. The service was outstanding, but a little "Trumpy" (overeager to please). We had a great view, impeccable service and wonderful flavors to savor throughout the night. My wife "normally" drinks only red wine, but the "field" menu (one of three that you can choose from) has been paired exclusively with white wines. Both she and I were thoroughly impressed with the excellent wines that were chosen, from France to Italy, to Germany to Austria; we loved them all!
The 8-course meal itself has many different combinations of fresh flavors that continuously amazed us.

We are frequent fine diners and this was one of our best meals in the past couple of years. Every course was great with four really being memorable and having a "wow" factor. With all the extras (trilogy of amuse bouches, ample bread service, a palate cleanser and an impressive mignardises cart) this was a true feast. I think Sixteen is the best restaurant in Chicago right now. I had the 8-course tasting with a caviar and cheese supplement. Every course was outstanding, but what was most memorable was how Chef Lents wove a story of a winter's day through food. I also enjoyed how spoiled guests are with extras, from several canapes (glazed and roasted chestnuts, mince meat pie, apple cider) to start the meal, to the best mignardise cart in town. And when you are stuffed and on your way out, you are treated to a take-home pastry. Wine pairing very disappointing. We stopped it half way through and ordered a bottle of our choice. Strongly recommend asking what the wine pairings will be before ordering. The have a good wine list so plenty to choose from if you don't do the pairing- this is what I would recommend. We will go back for sure, every plate was delicious. Beautiful presentation and perfect blend of flavours.
