Shinbay is a very good restaurant, some very good food. However, I was looking for amazing sushi in Phoenix, and that is not what Shinbay is. There is some sashimi and nigiri, and it is quite good, but they make up a small part of the omokase 4 course menu. Shinbay is a Japanese restaurant, that serves a little bit of sushi. If you want terrific sushi, and a full meal, go somewhere else. If you want a light Japanese meal, sure, go to Shinbay.

Prepare to experience Foodie Nirvana. Your choices are three course or four course dinner. I experienced the three course dinner. Beverage list is modest...small wine selection but quality choices; extensive Sake selection; modest mixed drink selection. We ordered a wonderful Pinot Noir. Each course provided a vivid pallette experience. 1st course: fresh exotic seafood; 2nd course: fresh lean kobe beef I sautéed to my liking with an array of exotic seasoning and fresh vegetables; 3rd course: fresh exotic sushi. Suspend your normal culinary expectations. Place your trust in the Chef's culinary judgment. Try everything. Dinner was capped with a delightful fresh custard topped with fresh exotic fruits. This was an exceptional experience.

This is more of a fusion restaurant than what some people refer to it as; a sushi restaurant. The chef tasting plates are fabulous and the service is first rate. The portions are, however, very small and very expensive. The restaurant is taking extra care to make people aware this is not a typical sushi restaurant which is wise. Hope they survive as the food is really great.

ShinBay serves the best Japanese food in Arizona, hands down. I eat out much more often than I'm comfortable admitting, and ShinBay is easily my favorite restaurant in Phoenix. I often feel like I'm overpaying when, for example, I go to a steakhouse and get a $40 filet, but for $80 the "Yu Course" at Shinbay is an absolute bargain. I'd probably pay twice as much and still feel good about it.

Some of, if not the, best Japanese food we have experienced, and we used to live in Hawaii where it is easy to find. We were a little leery at first given what seemed like a limited menu, but each serving is not only uniquely prepared and oh so delicious, there is a lot with each serving. Trust the chef's selections. They are all wonderful. What a wonderful dining experience! The service was excellent and the server explained each dish as it was served. The setting is very peaceful. We will definitely return again and again.

Finest meal ever. Courteous, caring, eminently professional service. Exquisite and meticulous food. One of the most sensual meals I've ever luxuriated in. At over $300 for our meal for two people, you would expect at least decent service. We had to ask several times for water before we received it, and it got no better from there. Our waiter had to be new (I'll give him that benefit of the doubt), but even still, no one else seemed to care that we were getting bad service. The food was great, but would I go back to spend $300 for two people to eat great food with horrible service? Unfortunately not.

Took my husband here for his birthday. We notified the chef of our dietary restrictions, and all was taken into account. We had the multicourse dinner, and it was more than enough food, with so much variety. The fish was fresh, the accompaniments very interesting and delicious, and the presentation beautiful. It was a very special celebration and we thank the chef and management for making it so.

ShinBay is probably the BEST and most authentic Japanese restaurant one can experience in Scottsdale, Az. If you are looking for the usual "sushi" this is not the place for you. ShinBay is Kenseiki style, an unique and super refined dinner set using only the freshest ingredients of the day. No menu, just wait for the chef to bring you one surprise after another for total of 6-8 courses delightful dinner, including desert. Japanese are know for their simplicity and refinement of cooking, ShinBay brings you all that and more. We went there a couple of times, price is hihg, but worth every bite and you will want to go back again!

Now as a preface, I have lived in Japan for 12 years and am extremely discerning about Japanese Food. In the Phoenix area there are only a couple of really good places to eat "Real" Japanese. This is my favorite by far. ShinBay takes it to a whole new level. The chef's course is a "culigasmic" experience that would rival many places I have been to in Tokyo. The food is thoughtfully prepared and takes you on an experience like no other. I will definitely be back and can't wait for the next chef's course. If you are wanting a couple of sushi rolls with suracha, then this is not your place, but if you are really wanting to explore the true flavors and culinary delights of Japan, this is your place. You won't be disappointed.

We decided on ShinBay due to the rants and raves we heard about it. If people rant and rave about it why was it empty? Two tables on a Friday night. We sat at the Chef's Counter, but not a word was communicated to us by either the chef or sous chef. The food was OK, but not fantastic, which it should have been for $100 pp + wine and tip. It was also disconcerting to watch the chef removed pre-prepared dishes from the refrigerator. Personally, I prefer my sushi to be cut just prior to serving. The experience was disappointing.

We will definitely be returning to Shinbay! We didn't really know what to expect and found out that we like it that way. All of the courses were phenomenal with amazing flavor combinations. Our only regret is not making reservations early enough so that we could request the Chef's Choice (has to be done 24 hours in advance). We can't wait to go back!!

Came to ShinBay last year for my birthday and decided I would make this an annual event. Chose the Chef's Tasting at $100 and wasn't disappointed. Love the presentation and the subtle combination of flavors with the seafood. Coming here is a delightful gastronomical experience. I ate slowly to savor each bite. My dinner companion does not do sashimi or sushi, but was please with the cooked items and was surprised and pleased with the black cod. He noticed the calmness behind the sushi bar and the ambiance of the restaurant - decor, classical music, and quiet conversations of the other patrons. I highly recommend ShinBay for it's uniqueness and high quality of food.

I was surprised to find that a sushi restaurant in the desert had received two James Beard nods. After eating here, I totally agree that it deserves the recognition. This was my 1st omakase experience that was not just sushi. While the menu is heavily seafood-based, the variety of preparations and combinations of various elements was really quite lovely. The restaurant is spacious and serene but the chef takes reservations only (no walk-ins) so it's never full, very quiet adding to the feeling that you've escaped from the everyday outside. the staff is knowledgeable about the menu and it seems more seasonal than changing every day. I left satisfied yet not too full - this was a lovely special occasion experience.

I took my wife here on our wedding anniversary because of course you want to make a day like that special and memorable. The place is pretty small, quiet (no music at all), modern décor, kind of trendy, immaculate, and very comfortable. There were only two other couples when we were there. Food was not a disappointment. Every bit of fare was exceptional; I loved every single piece of every course. The creations were honestly like little pieces of art work. Portions were rather small, but by the end of the dinner you go away satisfied, but by no means stuffed. So---bottom line, was it worth the $100 a person? Yes, definitely, at least on a special occasion.

Shinbay never disappoints. This was our third visit this winter season. As usual we choose the Omakase menu and left it up the chief to select our dinner. First course was Fluke in a terrific Hot Oil Carpaccio. Next we had the Tsukuri Six(Seafood Bites), all expertly prepared. The Tuna Tartar is to die for and the other bites were scrumptious. Third course was Asari Clams with Japanese Mushrooms in a delicious mild broth. Fourth course was Washugyu Beef, Asparagus tips, Enoki mushroom that you sear on a hot plate. Finally we finished with a wonderful assortment of sushi. "We will be back!"

We ordered the 5 course dinner. We were also given dessert (custard with seasonal berries... It was really good). So out of the 6 courses, all of them were incredible except for one. It was 3rd course. We received a really big bowl of lots of exotic mushrooms in a broth. The broth was really good. But the course was so big in this kind of dining experience. We enjoy mushrooms very much, but it was difficult to eat that much in one setting. That being said, every other course was perfect. So tasty and was presented beautifully!

We enjoyed each course which the chef created especially for us and our server expained each dish in detail. We loved it and celebrated a birthday on the day we were there. We enjoyed some rare fish from Japan, a wonderful clam and Japanese mushroom (7 different varieties) dish cooked in saki and a delcious beef that we grilled ourselves.
