    The food was exciting.....you cannot find this type of food anywhere else in Dallas. Lots of unique South American/Central American dishes. We loved it and will go back!

    First, my Pisco Sour was fantastic, and they do a Pisco "flight" - go for that reason alone! The food was tasty, no question, but I have to admit, the flavors were not a pronounced as expected? We ate the four main recommended small plates: Causa Limeña Classico; Smoked Duck Tacos; Sweet Corn Humita; and, Yellow Fin Tuna Ceviche. The only one I would maybe not order again is the Ceviche - The Kaffir "gel" was truly just that one flavor, and overpowered the fish (for my palette anyway). In the Causa Limeña Classico, the spicy shrimp weren't "spicy." In the taco, the smoked duck not an interesting "smoke"... You get the picture. That said, I would definitely go back and did enjoy the meal!! Dessert was also fantastic. The sorbets!!

    I dined here on Friday night with two girl friends. This was my first time at the restaurant. I was excited to dine at another of Stephen Pyle's restaurant as I had a stellar dining experience at his restaurant in the past. This time I was unimpressed. I probably will not return. The service was great from the bussers to waitstaff. However, the dishes were pricey, but small. The ceviche was overly lemon flavored. My cabrito tacos were great, but small and came with no sides. Cocktails were fine. Decor was cohesive but uninteresting.

    First, let me say we were super excited to check out this new place in downtown Dallas. The restaurant had a great vibe with cool décor but the food was less than satisfactory. The portions were small. I ordered soup. I think the bowl had 1/2 cup inside. The items we wanted for dinner was sold out. We ordered another item that came out cold and undercooked. We will not go back to eat maybe for drinks.

    After being seated for almost 15 minutes without even an acknowledgement, we brought this problem to the attention of our hostess. They immediately determined that there had been a mix-up in who was assigned to provide service to our table. After several apologies, the staff was super accommodating and on point. The food was fantastic and something new and refreshing. Me and my guest had several small plates that were quite good. The black bean soup was very tasty with the cabrito barbocoa tacos coming in first place. The sweet corn humita with lobster and fried avocado was an outstanding mix of flavors and textures. Finally, we had the sweet potato donuts with Guanabana ice cream (picarones) to round out a very enjoyable dinner.

    We opted to try many smalls plates in lieu of a traditional salad and large plate dinner. We had a ceviche and the pork belly, two taco dishes, an empanada, a tamale and 1 dessert. We left full, but not stuffed. Everything was delicious, flavorful, and well executed.

    Ok, the duck tacos WERE spectacular, but the rest of the meal was fine, but not amazing. We had the duck tacos and shared the whole snapper, as it was pretty big. The fried pickles green beans that came with it were different but tasty. The fish was just fish. No real flavor distinctions. Dessert was ho hum. Nondescript custard with a cold, previously fried "something". (Want to be churro?)

    Stephan Pyles strikes again, but this time it's a swing and a miss. The decorations are a little excessive, almost tacky. The food, while good, was overpriced for the portion size. And the service, well let's just say there were awkward moments of staring and some uncomfortable hovering that was happening. Maybe next time, Stephan should just let the food speak for itself.

    Stephen Phyles always does a great job combining unual flavors (well, except for Stampede 66, disappointing.) and at San Salvaje he really outdoes himself. Usually, however, the descriptions are on the menu but here Stephen leaves the desciptins to the waiter and ours did a great job but by the time he finished we wanted it all! I think I prefer the descriptions on the menu so I can make a more thoughtful decision and it's fun to discuss with your dinner partners. Nonetheless, seems like whatever you order it's fabulous. We can't wait to return.

    First time here - server (Andre) was terrific. Manager (Victor) took the time to come over and introduce himself. They were both very interested in making sure that their patrons were all having a great time. The menu was very ambitious, with choices from throughout Central and South America. While the ceviche was somewhat plain (despite being served in a coconut), the smoked duck tacos and the lobster humita were really great. The carne asada was some of the best I have ever had and the picarones for dessert were really tasty and went very well with the guanabana ice cream. Would highly recommend this place. Engage Andre in conversation, as he has some great stories and tries really hard.

    After going to Peru in August and experiencing withdrawal from the many flavors we went to San Salvaje. We started with the traditional Pisco Sour which set the stage for a special evening. Pyles takes the traditional and adds new tastes and textures. My lobster humita had the sweet traditional corn that I had experienced in Peru with crunchy jicima and succulent pieces of lobster. For added flavor there was a fried avocado wedge on top. I would order it again but I have to try more on my next visit. It may be the duck tacos that my husband refused to share. He loved the green sauce so much that he questioned using the other options that were brought tableside.

    The menu was very imaginative. It was somewhat intimidating. However David our table captain was excellent at explaining the dishes and making them come alive. The food is unique in the Dallas scene and David was one of the best wait staff I have ever encountered and my wife and I have eaten at some of the best places in the world.

    We enjoyed our early dinner here before going to the theatre. Location is perfect for walking to the Wyly, City Performing Arts theatre, Winspear or Meyerson. Our group of 3 chose a variety of small plates to share -- all were interesting and ranged from good to excellent. We especially liked the duck tacos and the pork tacos. The wine list included some reasonably priced choices. Desserts were highly recommended, but we found them to be good, not great -- our favorite was the sweet potato doughnuts! The service lagged a little bit -- understandably -- when the restaurant got busy. I look forward to going back and most definitely recommend it for those who like to try something "a little bit different".

    Ceviche was not great. Peruvian places are judged by their two signature dishes, ceviche and lomo saltado. They didn't even use aji Amarillo or have any. The wife and I (she's Peruvian) were very dissapointed. We were hoping to find a fine dining Peruvian restaurant to frequent.

    I loved this restaurant when it was Samar. The San Salvaje menu looked great and I started with the chilled corn soup -it was very weird. Cold sweet creamed corn is not really my style but the dime sized piece of lobster floating at the top of it was delicious. Fortunately, the main course was amazing. I had the roasted chicken with yucca mash and jalapeno chimichurri. Everything about this dish was fabulousm For dessert I had the bread pudding. It was disgusting. It was cold and mushy. I've never had cold bread pudding and I was not a fan. The only saving grace of my dining experience was the roasted chicken. If I had only ordered this dish, this review would have been very different. Excellent service and cocktails

    The cuisine is imaginative, to say the least. Unusual food combinations, inspired -- I guess -- by traditional South American dishes. Some are outstanding; others are kind of blah. Nothing that we had was bad but my advice would be: Order carefully. Turned out the daily special was the best option; we should have listened to our server.

    This place is amazing. Simple food with explosive taste. Forget about what you know about Peruvian food, this is another level. The meat of the Lomo Saltado is masterfully cooked. Thin slices of beef tender and tasty, almost butter like consistency, it melted in my mouth. For dessert I chose the Banana Flan. One word, WOW!!! If you haven't been there, make a reservation today because it is totally worth it!

    A group of us came here for Rsstaurant Week. Service and ambiance were excellent, drinks were good, but food was a little uneven. The second course (entree) and extra appetizers we ordered were great, third course (dessert) was good, and first course (appetizer) was a little weak. However, we all are willing to go back again to try the regular menu. Our server told us to try coming during lunch because it is extremely inexpensive.

    It IS all in the details, and in this case I don't mean the food (which was outstanding). I am talking about the service. Andre was our server, and he was excellent...a stand-out. He paid close attention to detail and took great care of us. He was a delight to talk to and was such fun. At one point in our meal, the general manager, Victor, also came by the table to see if all was going well. He was also wonderful. He stayed for quite a while, showed great knowledge about wine, food, the origins of different dishes, etc...and was altogether charming. We were incredibly impressed, and will definitely be back...next time when the live music is happening!

    1. The food was fantastic, to be sure. 2. The service was strange, at best. I felt rushed to order and rushed to pay even though the restaurant was not busy/full. The server pushed us to have car brought out so the valet could leave, even though we weren't finished with our food. 3. It felt like a restaurant meant for tourists. 4. I can't imagine we'll return, which is a shame since the food was so good.

    I wouldn't expect anything less from Stephan Pyles. The food was wonderful and the service was wonderful. I was there for Restaurant Week so the choices were limited, and I was more limited by a food allergy and of course the chef accommodated me by substituting out the "offending" item so I could eat without worry. I love the entire menu and had fun with this visit as they narrowed my choices for me! I definitely recommend it for foodies!

    This is in regards to the noise level, decor and food. Music was too loud (thumping) and had to ask to turn it down twice. Decor is not subtle nor is it comfortable. Not a romantic, cozy dinner spot. And for the food, yes many dishes were delicious, but I felt there was too much going on with some and he lost focus. Others were simply off on the flavor profile. But did love the corn tamale with lobster, the tuna in coconut bowl and the whole snapper with fried green beans. Our table thought all three outstanding!

    Our first visit was during Restaurant Week, and it had incredible food and service. The corn/crab ceviche and potato causa starters were perfect and the beef and chicken entrees were so delicious and flavorful. We shared 2 desserts, the cinnamon bread pudding and mango flan, which were amazing! The wine pairings with each course were well chosen and great value with restaurant week. Brent our server was very friendly and helpful. We will definitely be back!!

    San Salvaje is Chef Stephan Pyles new restaurant and we were excited to try it during Restaurant Week. I loved the previous restaurant here, Samar and was sad to see it close. We started off with a great vodka mojito. Only one in our party of four opted for the restaurant week menu. I had the quinoa salad which was interesting but I would not order it again. I also had the cabrito tacos with goat cheese. They were just ok. My daughter had the chilled corn soup and the Lomo Saltado - a riff on steak fajitas which she enjoyed. Our friends both enjoyed the Yellowfin tuna ceviche with a great presentation inside a young coconut. Dessert - a Peruvian moonpie - Capirotada “Chocolate Mexican Bread Pudding with Cinnamon-Rum Créma - great!

    Steven Pyle has a way of coming up with unique cuisines and menus that generate curiosity. Not only that the food is great as is the case with all he does going back to the days of Baby Routh! Strongly recommend this for either small plates or "grande" plates.

    No review, just a comment. It would be great if restaurant staff bidding you farewell would ask if you need a parking ticket validated. With the wonderful food and ambiance, it is easy to forget that little detail. And it is not fun having to backtrack to ask for the validation. Love the artwork.

    We went to San Salvaje for restaurant week and were surprised to find that the selections were excellent, the food was incredible and the service was attentive. From the chilled corn and crab soup to the chicken on mashed yucca to the mexican chocolate bread pudding, there wasn't a bad moment the whole evening. We will definitely be back!! We were told that there is live music on Fridays and Saturdays and outdoor dining. We can't wait for the temps to drop a bit so that we can enjoy another wonderful meal with music under the stars.

    My wife and I dined for restaurant week and couldn't help but to order additional food off the regular menu. The drinks were beautiful and delicious, the ceviche (Cobia restaurant week central market) and yellow fin were worth making another trip for any occasion. The rest of the meal was extremely satisfying as we enjoyed each bite. The staff was every bit as good as the food, with employees flowing through the area being aware of every glass that needed to be filled or any crumbs that needed to be wiped. Our waitress knowledgeable of the menu and reassuring about food allergies (shellfish). They also had live music playing with a group of people dancing yet, I figured I would save my dancing shoes for the next visit.
