Took the man for his birthday. We live in Denver so don't get up to Boulder and to Salt as often as we would like. The food is always fun, fresh and very tasty. The wines are good and really reasonably priced - a bit of a rarity in Denver or Boulder. Our server, Chelsea, was fantastic. Fun, good sense of humor and the right level of attentiveness without obtrusiveness. We didn't do cocktails this time around - just wine - but their bartending staff is also attentive, inventive and happy to get nerdy on cocktail formulations. We love, love, love Salt. The polenta cakes are worth a return visit (we did) And they do have decent vegetarian options. Bar drinks also different in a good way, albeit on the pricey side. Only downside on a recent Sunday visit @lunch, an anniversary gift to ourselves, found us one of only 4 occupied tables yet salad, meal was unexpectedly slow. The decor and the historically-significant building contribute to a fine dining experience. Salt is a casual place that serves consistently good food at reasonable prices in an atmosphere that is quiet enough that you can carry on a conversation, yet energetic enough to make you feel that people are enjoying themselves. Wait staff are attentive, well trained and always willing to try to accommodate your wishes. The wine list is reasonably priced and, while not large, offers a good cross section of international and American wines. We particularly like sitting outside and "people watch" while enjoying a late lunch or early dinner. The table was ready when we walked in, the Make-Me-Mimosa was a great idea and JUST enough champagne for two people to have a nice time of it. The food was fantastic and would have been taken home, but we were in town only for the graduation. I had the flatiron steak-- OMG! We ordered from a prefix menu-- and as a pickier eater, I can say that I was satisfied. YUM! The food is always well prepared and tasty and the wine selection is a good match to the menu. Service, from your first step in the door to the time you leave, is excellent. On this occasion, we had an early reservation (5:30) and enjoyed a leisurely early dinner. Salt never gives you the impression that they are trying to turn the tables quickly, so this is a good restaurant to go to when you want to socialize and enjoy a conversation. We've taken friends and family to Salt and have recommended it to others as a place to go to have a good, friendly and relaxed meal.
