Sage is James Beard Foundation Award-wining Chef Shawn McClain’s first venture outside of Chicago.     We were so excited to try this restaurant and the absinthe "tastings" it offered. Once we were seated I asked the waiter about it and got a condescending response. I let it go and started to ask about different items on the menu only to be made to feel stupid about my questions. If you don't want wine they don't have many other mixed drink options. The food was good but nothing exceptional for the $100 per person the dinner cost. There are plenty of other restaurant options in Vegas and would suggest skipping this place. The Aria Hotel is beautiful though!

    Wait staff were a team. They were attentive but not in your face. I had veal cheeks with chestnuts that melted in my mouth. Could have used a little more polenta. Brussel sprout side dish was really good. My husband had black cod (a few bones) but it too was great. I would go back in a heartbeat.

    Everyone at Sage treated me like royalty. I had fois gras brulee, fois tourrine, duck, warm mushroom salad, and a fois gras candy bar. Every bite I put in my mouth was beyond delicious. The chef really knows how to create an impeccable meal, and the bartenders and bar manager were incredible from start to finish. This was a truly memorable meal that I will never forget. Sage has set the bar to a brand new level.

    Every dish from the appetizer to dessert was sheer perfection. I was a bit surprised that the price point was substantially higher than what was advertised (well worth it though). Each course came very quickly and was served at exactly the right temperature. We both selected the chef's signature menu by the way. I had heirloom beets, scallops, pork loin, and a panna cotta. Each dish was uniquely flavorful and a combination of lightly sweet and savory save the desert. The desert was cool, light, and mouthwatering.

    We enjoyed our meal at Sage. The wine service was excellent but the food was a bit disappointing. We did the $89 tasting menu. The oysters were amazing, some of the best ever. The beet salad was good but nothing too unique. The main course portions were on the small side. I had the Iberico pork and it was a tiny piece of meat with a larger belly portion that was 90% fat. The desserts were pretty but not overly flavorful. In general I think the quality of the ingredients is top notch but the preparation was neither overly unique or flavorful. For the $ I think they can do better. Service was also quite slow, I think so we would drink more wine, which we accommodated.

    Impeccable food, excellent service, but food comes quiet fast and sometimes you need to feel you are not in a rush. The bar area is really comfortable and nice ambiance as well as the restaurant. Great choice!!!

    The food at Sage was the best food I've had in Vegas in a very long time - the flavors of each component were distinct and married beautifully with the whole dish. I would highly recommend this restaurant.

    I was intrigued by some of the dishes I tried at Sage during my first visit for a late birthday celebration. We tried the signature tasting menu, and some of the dishes had some unusual and unexpected flavor combinations which were delicious and surprising. I found myself really concentrating on the flavors as a result. It was the most interesting food experience I've had for some time.

    The good: great beer list; the duck was tasty The OK: nice beet salad but too small for the price; The BAD: The chicken with mashed potatoes and carrots. The chicken was filled with sausage, which had a strong flavor that was not pleasant - we think fennel. There was LITERALLY about 1 tablespoon of mashed potatoes lying beneath the chicken - we weren't even sure if it was them at first - we thought it was a sauce. There were also about 5 skinny slices of carrots. Do not come here if you are really hungry.

    I brought customers to Sage for an experience and our expectations were exceeded. The decor with a Renoir backdrop and a modern forward setting was impressive. The service was impeccable. I wanted to order the tasting menu (everyone at the table must order it) but one person wasn't quite adventurous enough. After trying what she ordered there wouldn't be a question that she would go with the tasting menu if asked again. Our server provided excellent information and recommendations. Sage will be a must stop the next time I'm on the Strip. Thank you Sage and staff!

    Shawn McClain is an inventive chef. A varied menu and the chance to try different tastes you thought you never would. If you go, ask for Jason. He will help steer you from cocktails, to wine, to appetizers, to entrees, and, finally, dessert. One of our favorites, not only for Las Vegas, but anywhere. After each visit, we end up telling ourselves that we just had a wonderful dining experience. Try his other restaurant at Aria also, Five50. One of the best pizzas we have ever had.

    Way better than any meal I was expecting to have in Vegas. Gorgeous room, wonderful service and each dish at out table--fish, meat or veggies--perfectly prepared with lovely reductions. Veal cheeks were a big hit, but so were the scallops and the duck.

    Sage was by far the best dining experience my wife and I have had in the last couple of years. Since determining that she has severe food allergies, going out to eat is a bit like roulette, sometimes you get a winner that can accommodate her needs but often the meal is lacking something. Sage was like hitting a 00 after you bet the table max on it. The front of house staff assured me that they could meet my wife's needs, and they did an impeccable job. We provided her avoidance list to the wait staff, and the kitchen was able to adapt the excellent tasting menu to it. It was a rare pleasure to not have to negotiate potential options. Even with the above aside, the food and drinks are excellent and we will be back.

    Our party of three had the four course tasting menu with wine pairings. Notable standouts were the foie gras brulee, scallops and beef belly. The desserts were disappointing especially the ricotta cheesecake. The service was a little offhand for a fine dining experience and the room was very noisy but the food more than made up for these minor quibbles.

    With so many great restaurants in Las Vegas, it's difficult to choose. Sage is what you would expect for a top level restaurant here, creative dishes, good wine list, attentive service and moderately high prices. Slightly noisy with that hip buzz around you, but comfortable enough for a business meeting. The appetizers starred here the veal sweetbreads and grilled octopus were excellent, but nothing exceptional. THe sweetbreads were tasty and not heavily breaded. The foie gras custard was incredible And the wagyu beef tartare was perfect. The night we were there they had a duck dish that was delicious; tender, moist with a nice touch of crispiness at the ends. My guests both had pasta purses filled with squash and were very pleased.

    One of the most rich delicious dinners ever. Beyond enjoyed the foie gras creme brûlée with salted brioche bread, rich slow poached egg & toast. I ordered the iberico poin lion and my husband ordered duck both were decadent. We finished the dinner with foie gras candy bar & milk chocolate earl gray pana cotta. Such a delicious dinner. Service and ambiance were great as well.

    Good food but service far too fast by European standards. We went for a romantic dinner to celebrate our anniversary and ordered the 4-course chef's menu. Sat down at 6.45, food started arriving at 7 and we were out of there by 8.15. Slow down! What's the hurry?

    Spectacular food- delicate and rich at the same time. The cauliflower amuse was incredible and the scallops delicious. The desserts were particularly impressive- incredible presentations. Our server was lovely and I appreciated her suggestion not to go with the paired tasting wines but we barely saw her after the initial order. The busboys who delivered our food seemed hurried and couldn't remember the ingredients in the dishes. With my back to the room I felt like they crept up and then ran away before I had a chance to ask anything. All together, a beautiful meal but impersonal service - not the 5* experience I was expecting. The meal I had at the steakhouse in the Monte Carlo was just as good, and a third of the price.

    My experience at Sage was just so-so only because the seating was poor. The food is beautifully presented and most of the restaurant is beautiful. I was seated at the back part of the restaurant even though there appeared to be a lot of empty tables throughout the restaurant. I cannot say I enjoyed the atmosphere there. I would recommend requesting better seating. Scallops are excellent and the prefix dinner is well worth it otherwise.

    Drinks, service and food were all top notch. Duck was delicious as was the creatively prepared barramundi. Kompachi was very fresh as was the Brussels sprout salad. Decadent foie gras chocolate dessert and table side prepared absinthe for dessert capped off a wonderful dinner. Elegant dining but not stuffy and the entire wait staff was friendly but professional. We will be back

    I have been here several times since it opened and was disappointed for the first time. Apparently our waiter did not listen to me when I have my allergies and he neglected to tell the chief. The one thing I thought would be safe based on the waiter wasn't! Thank goodness I had Benadryl with!!! Oh and he never came to the table to see how the food was or if we wanted another drink. We had to have other staff bring the manager over and then we were provided service. Only an apology was giving for causing me to have an allergic reaction!

    Sage was recommended by a Foodie friend and we were not disappointed. Everything was perfectly prepared and presented beautifully. We were quite satisfied and decided not to have dessert....dinner was so good, BUT we asked our server what was her favorite dessert and she recommended the Foie-grais chocolate bar with popcorn, soooo we ordered it, to share of course and it could not have been more amazing, smooth, the foie-grais added an undescribable lusciousness, chocolaty, crunchy and OMG delicious! Thank you Sage for a truly memorable evening!
