A word from Sage - Aria
Sage is James Beard Foundation Award-wining Chef Shawn McClain’s first venture outside of Chicago. Introducing his distinctive style to ARIA, Chef McClain combines farm-to-table produce, artisanal meats & sustainable seafood with an emphasis on simple, clean flavors & seasonal ingredients. Sage's award-wining cocktail program visits America's classic libations & rewrites them with a contemporary edge through natural ingredients & limited-production boutique liquors.

The 112-seat dining room & 49-seat lounge display a seductive & comfortable elegance. Designer Jacques Garcia, know as much for his opulent French style as his pure-form minimalism, echoes Chef McClain's culinary sensibility with a refined, modern aesthetic brimming with character & whimsy. Hand-painted murals by Paulin Paris offer reinterpretations of famous early modernist paintings.

Ever raising the bar, Sage combines a brilliant culinary team, an ideal location near ARIA's main entrance.

  • "Perfect end to a long weekend in Vegas - the food was excellent and our server was fantastic. We had the Chef's Signature Tasting Menu and a bottle of excellent wine. The food was beautiful and the service was attentive, perfect for a special occasion or treating yourself to amazing food. We'll definitely be back on the next trip!"

  • "We were looking forward to dining here- had heard good things from friends. Disappointed in appetizer choices, dinner entrees were ok but portion sizes were very small. We felt it's very overpriced for what you get."

  • "I had reviewed the net for the best restaurants in Las Vegas and Sage was identified on a number of sites...however on this trip we also dined at The American Fish Restaurant and Le Cirque and they were both far superior to Sage...With Sage charging $35 for a glass of Absynthe, I felt that this was quite excessive....Have purchased bottles of Absynthe and there is no reason to charge this much....The price for other cocktails pushed the needle to the absolute highest range of any restaurants we frequented...The ambiance was probably the highlight as the food was ok but not exceptional...Service was quire good."

  • "I ordered a cake 2 weeks in advance for my mother's 50th birthday they and when i arrived the cake was not made. They didn't even apologize for the inconvenience. Very disappointed by the service."

  • "We had been looking for a nice dinner before a show. My wife & I snuck away for the weekend & were planning on splurging a bit. I eat anything, but my wife is a semi-vegetarian & only eats poultry. So we browsed restaurants based almost entirely on having a well varied menu. Sage had a few poultry dishes, & the ambiance we were looking for. The service was stellar! The Sommalier was incredibly helpful, & didn't make us feel like fools for our little wine knowledge. Our server was phenomenal, helpful, friendly, & willing to explain how our dishes were prepared. And the food! We both did a tasting menu, mine the standard & her's specially made. Oysters, fois gras, squab, duck pancetta... It's up there on the $ side but worth every penny."

  • "I was a little uncertain when making this reservation, since some online reviews were rather negative. I am so glad we went. We are early diners, and we were seated in a little depression in the wall which gave us some extra privacy--very nice. The food was complex, creative, imaginative, and very flavorful. It's the kind of place where you can go a little out of your comfort zone. Whatever you order, you'll be surprised how much you like it. Yes, the portions are not large. If that's your thing, there's a Cheesecake Factory in Caesar's Palace. That will be more your speed. I did not leave hungry, but I left satisfied. Very satisfied. It was our last night in Vegas, and it was our best meal. One complaint-the soundtrack was EDM."

  • "The food was excellent, however the service was so slow and the dishes were so small that I cannot recommend this place. I had to go buy a real dinner after three courses here failed to make a dent in my appetite and I'm not a big guy. My waiter dissapeared four times for over 15 min. Dinner took twice as long as it should have. Avoid"

  • "My girlfriend and I were very excited to eat here, however we both found that the actual restaurant didn't live up to the restaurants website. Not as hip and vibrant as we had thought. Food was good, but overpriced. There are too many excellent restaurants in Las Vegas to go back to Sage."

  • "We came here in a group of 8 to have dinner before going to see Zarkana, since it was in the same casino. Man, am I glad we did!! I had the pre theater prix fix menu and every course was incredible. The flat iron steak practically melted in your mouth. However, the beer pairings fell flat to me... The old Rasputin overpowered the steak and I'm just not a fan of Young's chocolate stout. That said, that is the only complaint I had about the evening - my wife and another in our party had the gnocchi which was incredible, and two others had the pork loin with rave reviews. The service was impeccable - we were well looked after without being hassled. You're going to spend a pretty penny here, but it's well worth it for a nice night out in Vegas!"

  • "I'm a food addict, foodie, restaurant junkie. Sage was beautiful. The food was well prepared, and beautifully presented. The menu was a bit limited, even for the taste adventurous. Our server was awesome, fun, engaging and made some fabulous recommendations. The foie gras candy bar, even though I was skeptical, is a must order dessert."

  • "Party of 5 so I tried all of the signature tasting menu. Foie gras brûlée is a MUST. Scallops as second course was the best. Dessert was a it disappointing...nothing wrong but nothing wowed."

  • "I was worried about dining at Sage due to the reviews that complained of noise, bad service, and mediocre food. The service was fine. Our waiter never introduced himself, but everyone was polite and accommodating. The wine list was extensive and the mark-ups on wine were not bad at all. The food was very good. I highly recommend the king salmon and grilled spanish octopus appetizers. The skirt steak was a bit tough, fibrous, and over-cooked (but was ordered medium rare). The gnocchi, although liked by many reviewers, fell flat. I wouldn't recommend the gnocchi or the skirt steak at all. I think Sage could do better with the main course in general. The menu is very limited. There's no filet or ribeye option."

  • "My skirt steak was very salty and nearly inedible. Service was great but overall I was disappointed."

  • "I attended a fundraiser in Columbus Ohio at Spagio . The owner was a participant as a Star Chef . I wanted to support his restaurant for his support at the event. The food was outstanding at Sage . Steak Tartare , Sweetbreads , Veal Cheek all prepared to perfection with clean but rich elegant flavors. Our server was knowledgable polite and engaging with respect to our conversation. A must visit in Vegas !"

  • "I love to eat. My wife loves to eat. We came to Vegas to celebrate our birthdays as well as our 10 year anniversary. After looking at every single restaurant available we chose Sage because of it's unique tasting menu for $89. When we arrived we discovered they had another tasting menu where you don't choose any of it, pretty much just let the chef cook for you. A few of the items on there were an oyster served with tequila and tabasco sorbet, foie gras and a bacon wrapped rabbit loin. All of these things we had never tried so we thought it would be entertaining. Boy was it ever. I could never eat any of it on a regular basis but it was definitely an adventure."

  • "Beautiful restaurant, excellent service, wonderful creative food. But was $622.66 for 3 people! And that is because the least expensive bottle of wine was$110.00. So build that into your budget if you plan to go. The beef belly was spectacular. And the beef tartar was the best I have ever had. The yellow and red baby beet salad is perfect. Deserts were visual feasts. Minus the wine, the bill was 400 for 3 people including the tip (I take the tax and double it) It was worth $133 per person for the food. Really worth it. Just not worth $220 for 2 bottles of wine (pre-tax) that tasted like $30.00 bottles of wine. All in all, it was a very beautiful evening. And I would go back, I'll just get "on the wagon" first."

  • "The issues started right out of the gate. We were seated right away, but on a tuesday night that means very little to me. Our server (who's name i can't recall) upon seeing myself and my date treated us like we didn't belong. Like we were trouble. Now I attribute this to my being heavily modified. That aside, most dishes were overly salted, Temps seemed off in most dishes. And most courses were so heavy with garlic it over-powered the rest of the components. Our servers demeanor seemed to change after he found out I was a visiting chef from Los Angeles. By then the damage was done. It only seemed to get worse as the tasting menu went on. Words can't describe the lackluster experience. NOT WORTH IT."

  • "We are in town for a convention so we get to see friends that we don't see very often. So we want to be able to converse and catch up on the latest gossip. Sage is a great place to do this. Quiet enough that our seven guests could have great conversation. Excellent service with just the right level of attentiveness. A menu that is extensive enough for seven foodies to order multiple courses with no duplication and praise every dish. All in all a wonderful evening"

  • "Short Menu, Attention from Personnel very poor, without interest, I orderer for a Kobe Beef, it was a regular Center RibEye, it was good, but it is not necessary to lie about the raw meat. Excelent Beverages from the Bar (Cocktails specially the "East Meat West")"

  • "Saturday night dinner at Sage was surprisingly not packed and service was excellent. Decor is sort of a modern, refined psychedelic, with good views for people watching in lieu of intimacy. Appetizer highlights included the scallops and the beets - I hate beets yet was impressed by the flavors. Garlic soup salty and not fully balanced by yogurt. Pork loin and rockfish both solid entrees - very good flavors and interesting/skilled prep (with exception of the shoulder - just a bit stringy - and rockfish garnishes could have been less starchy). Dessert of milk chocolate panna cotta both delicious and surprisingly light! Rosemary hot chocolate a very nice final taste. In sum, a lot of interesting flavors and preparations with good variety."

  • "In true fine dining fashion, the portions are small. But that, if anything, is all I can complain about. Started with oysters, sweetbreads (Thymus gland), and Salmon. The sweetbreads might be the highlight of my entire historical dining experience...of all time. They were wonderful. Main courses at my table - a party of 11 who was ever ready to share a bite - ranged from gnocchi to scallops to short rib. The latter was, as I stated in the subject line, meticulously cooked. 36 hours worth of pre-planned perfect deliciousness complemented with potato pave. Given the exorbitant fine dining options in Las Vegas and equally excessive assortment of ways to waste your money Sage was a gem. Dinner truly worth the price."

  • "We celebrated my wife's birthday at Sage and couldn't have been happier with our experience. The wait staff was attentive, timely, and discrete. We selected from the Signature Menu. The scallops with oxtail sauce was so delicious. The waygu was perfectly prepared. The beef belly was sinfully good. We tried two of the draught beers, both quite pleasing, but the Firestone was a delightful surprise and is now in close competition with Chimay as our favorite beer. Considering the extraordinary quality of service and food, this was an experience well worth our money."

  • "Party of 4 to celebrate daughter's engagement, wanted something special naturally. We flew in from NY and the happy couple drove in from LA for the celebration. The food - we all ordered the 4 course Chef's tasting - was excellent. Small portions, but excellent quality, really a culinary treat. Did not leave hungry or stuffed, so the quantity was fine and the quality was quite good and a fun meal for all. However, when you plan on plopping down 700 dollars for 4, you really expect the waiter to be on par with the meal. In this case, not even close. The Picasso at the Bellagio on the other hand is a different story, there, you get a 5 star meal and 5 star service. The Aria and the Sage could take a lesson."

  • "We had an exceptional dining experience at our Las Vegas Sage dinner. Although the dinner will be pricey, it is very, very worth it. The staff and service are wonderful - very knowledgeable and attentive. It was a fabulous way to end our Vegas experience."

  • "Super eclectic, seasonal menu, interesting ingredients used and elevated. The scallops with the braised oxtail is luckily always on the menu and one of my favorites. The way they cook the duck feels and tastes like the chef made love to it. Service is the best in Vegas. Do a tasting menu and wine pairing- you're cheating yourself if you don't get to taste more than 3 courses."

  • "My husband and I really enjoyed this restaurant. I had the foie gras creme' brûlée and the duck. Both were so delicious. For dessert I had the chocolate panna cotta, it was wonderful. Our server was awesome. I loved that they brought me a stool to place my purse on. I also loved that as we exited the restaurant all of the staff made it a point to wish us a good evening. This restaurant exemplifies hospitality at its finest."

  • "While planning my trip with friends to Vegas, I made a reservation here because the menu sounded great and it was close to where we needed to be on our first night. We started with an amuse bouche of duck sausage. My first course was the beef tartare with the most perfectly cooked egg on top. I also tried the oysters, which were incredible (and I'm not really an oyster person). Second course was scallops, although I tasted the octopus too, and both were wonderful. The iberico pork loin was delicious, and I will have dreams about the sous vide beef belly. Last course was chocolate panna cotta, and while it was a little firmer than I would like, it still tasted great. Our waiter was truly a gem - his name was Bond, I believe."
    Dined on 3/8/2014
  • "The food was excellent and so was the service. Jason Bond was our server (though he had what seemed like a team assisting him) and I cannot say enough about him. He made food recommendations which were amazing, as well as assisted with drinks for those of us who do not drink much and were looking to try something new. It is expensive but well worth it!"

  • "Our group of five did Chef McClain's signature tasting menu with a nice Burgundy. The food is always wonderful and I especially like the Foie Gras Brulee. I rarely order a beef entre but couldn't resist the Waygu Sirloin. I'm so glad I picked it. The cut was AMAZING. Service is always impeccable. This is one of a handful of restaurants I am happy to bring guests when visiting Las Vegas. The only reason the Ambience score is a three star rating is because of the seating in the rear dining room. I know this is sometimes used as a private dinning room and I try to keep that in mind if I am seated there but I HATE the banquet style chairs in this area. They are uncomfortable and dumb down the space in an otherwise beautiful room."

  • "Very noisy, almost impossible to talk. Most of the food was good but too salty (3 of 5 dishes)."
