A word from Sage - Aria
Sage is James Beard Foundation Award-wining Chef Shawn McClain’s first venture outside of Chicago. Introducing his distinctive style to ARIA, Chef McClain combines farm-to-table produce, artisanal meats & sustainable seafood with an emphasis on simple, clean flavors & seasonal ingredients. Sage's award-wining cocktail program visits America's classic libations & rewrites them with a contemporary edge through natural ingredients & limited-production boutique liquors.

The 112-seat dining room & 49-seat lounge display a seductive & comfortable elegance. Designer Jacques Garcia, know as much for his opulent French style as his pure-form minimalism, echoes Chef McClain's culinary sensibility with a refined, modern aesthetic brimming with character & whimsy. Hand-painted murals by Paulin Paris offer reinterpretations of famous early modernist paintings.

Ever raising the bar, Sage combines a brilliant culinary team, an ideal location near ARIA's main entrance.

Diner Reviews
  • "We were a group of 3 for dinner on a Wednesday night. The service and ambiance was very nice. The food was not what we were hoping for. Of the 3 main courses, we had to send 2 of them back to be re-made. A meal was sent back from the table next to us as well, so I don't believe we were overly critical. Very small serving sizes. The main issue was that everything was exceedingly salty. It tasted like a mouthful of seawater accidentally swallowed at the beach. They remade 2 of the 3 meals, but got the 2nd one wrong too on one of them. The server said that the chef "heavily seasons" all meals and that he would remake it without the sea salt garnish. We expected more & would not return to this restaurant."

  • "I got the chefs signature menu and every bit of it was amazing. I'm ruined with scallops now. I don't think I'll ever eat any better ones. I highly recommend the beef tartare and then the beef belly. The food is so rich and full of flavor. I also got the beer pairing with the menu, which was a nice touch. The menu is reasonably priced. Your definitely getting your money's worth in both quantity and quality. The wait staff were also very helpful and prompt with service. I will definitely be coming back."

  • "We were very excited to try Sage and celebrate our anniversary. The restaurant knew we were celebrating our anniversary so I was shocked when they sat us at the only table in the place that was right next to other diners, not a very romantic spot. The hostess was offended when we asked to be moved to a more intimate table and made sure we knew about it because she walked off in a huff without one word and who I assume was the Captain came over and reseated us. Her unpleasant attitude was not the way we hoped to begin our anniversary dinner but the spectacular food and other staff made up for it in the end. I wish the Captain had decided to come by and check on us and apologize for her attitude but we never saw him again."

  • "We always return to Sage when in Las Vegas. We have been fortunate to be assisted by Virginia each time who is professional, attentive without being intrusive and obviously enjoys her employment at Sage. I recommend Sage to anyone who stays at Aria. All items on the menu are from sustainable sources and are exceptional in taste and presentation."

  • "Pleasantly surprised. The service was impeccable, though a little bit rushed in serving the various courses(I had 8 courses and my wife had four). Would had been great if they give us more time to savor and discuss the previous course before serving the next. The server needs to speak clearly about he iis offering us. Will recommend to my kids who are all foodies"

  • "My brother and I celebrated our birthday dinner here. We had a table of 4. My husband talked to the manager and asked him if we could do something nice, such as a small birthday dessert, which the manager replied yes. Our server was sweet but she was impersonal. Our busser was the highlight of our night. He answered all our questions and described the food. I wish I remember what his name was becasue he needs to be a server! At the end of the meal our server presented us with the check without offering us coffee or bringing us a dessert. For the amount of money we spent, shouldn't we get something with a candle in it? We left the restaurant with a sad feeling. We will not return and will not recommend this restaurant."

  • "The chef tweaked the courses because my daughter is allergic to citrus. All courses were absolutely delicious and gorgeous. We will return."

  • "Sage has been entered as one of my top five restaurants. The incredible food served by a fantastic wait staff made the evening one to remember and hopefully repeat."

  • "Really nice to dine in vegas without loud music. The sorbet was ridiculously good! Overall really nice place."

  • "Restaurant was amazing. Had a group of 6 ladies celebrating for a Bachelorette Party. Excellent cocktails and wine list. We didn't have the taster menu since not everyone at the table wanted to do it. I ordered the heirloom baby beets to start and the tortellini with prawns for dinner. Food was fantastic. The chef sent over an amuse bouche to start of tomato gazpacho with pistachios. Everything was perfect. The restaurant looks great and seems fancier than the price point. It was definitely worth every cent."

  • "Last time we dined at Sage the menu was obscure (Summer 2013). I have to say, the new menu is wonderful! They have a little bit of everything. We ordered a few appetizers and three entrees and shared among three people. Service was outstanding and will definitely be coming back."

  • "Went to Sage for my wife's 40th birthday. We got the tasting menu and it did not disappoint, we enjoyed every single course. Our server Marcus was very attentive and took great care of us. There are probably no more than a few restaurants in Vegas that I think compare to Sage."

  • "Amazing room, incredible service, spectacular food. That pretty much says it all! A truly beautiful space, elegant and warm. Our server, Bond, was a true professional, made great suggestions, very warm and friendly, honestly the perfect server. Corn chowder, heirloom tomato salad as starters--delicious. Snapper, veal cheeks, halibut, and scallops as entrees, cooked to perfection and every bite was wonderful. Shared lemon pie and carrot cake mousse (amazing) for dessert. From start to finish, ambience, service, and cuisine were perfection. Bond, one of the best servers anywhere. A lovely evening with incredible food and service. Loved Sage."

  • "Just an amazing dining experience. Beautiful room, exquisite food, great service, and not stuffy. Will definitely make this a must on every return trip to Vegas."

  • "We opted for the pre-show prix-fixe early dinner that has a wine or beer pairing with each course for an extra $29.00. We did not know what to expect, but we were presently surprised. The service, food (I had the beet salad, flat iron steak, and dessert (no choice) with the wine pairings), and the amuse bouche were great. I think that the wine pairing could be better for the steak, and that is my only complaint. It was excellent, the service was great, and the decor is modern and sleek. I highly recommend this for any occasion."

  • "Of seven high-end restaurants on a recent Vegas trip, this was our favorite and one of the two best (the other being Julian Serrano-Aria.) Service was impeccable, matched by truly memorable food (we are still talking about the braised veal cheeks and the roasted sweetbreads) and a truly elegant setting. Our other Vegas venues felt like the chef had put the kitchen on automatic and walked away - this felt like Shawn Mcclain was right there (and who knows, maybe he was) A stellar evening with highest recommendation!"

  • "Sage is ultimately worth checking out...but like too many places on the Strip these days, it's quite overpriced. The $24 lobster appetizer was literally only a couple of bites, though the octopus starter was more substantial (and also delicious). The scallops with oxtail is a solid choice, and they know their way around the bar here- my Vesper was excellent (though poured with a light hand)."

  • "The food is always excellent. We did note this time, though, the main entree was very small, more an appetizer size portion."

  • "atmosphere is great, decorative and romantic. food was good especially 48hr belly beef. It's just our server wasn't so welcoming or friendly maybe because we took tap order at the beginning?"

  • "Service was invisible. We did not feel rushed but never felt we were missing anything. The food was beautifully prepared and we savored each bite. Amazing experience, can't wait to return."

  • "We have had some very good food but what we tried at Sage was phenomenal! We had the octopus it was tender and delicious, my husband had the Coby skirt stake and I had the calf chicks. I can’t stop dreaming about it! Our waiter didn’t pay much attention to us but our water gentleman got us what we needed he was fantastic attentive and polite, I do hope that when we come back in November for my 40th he will be a waiter and not just our water guy. The restaurant was fantastic, beautiful; we fell in love with it. I can’t wait to go back! Thank you"

  • "Went here for a business dinner. Decided to choose a place (Sage) in the Aria since our client was just getting into town and was staying at this hotel. Like many restaurants on the strip, it was overpriced. The food was good but not magnificent and certainly not worth the more than $400 bill for a party of four."

  • "Sage is just the right spot for a wonderful dinner in Vegas. The atmosphere has a chic and urban vibe. The food is delicious and the scallop entrée is outstanding. It a fun and energetic feel, but not too loud. It is still conducive for conversation. Enjoy!"

  • "Incredible atmosphere, delicious food, friendly staff. We had the signature menu and loved all the selections. The service was very attentive and meshed very well with the personality of our group. We were stuff by the time the 2nd dish came out, but somehow made it through all 4. The portions were very generous and all delicious. If I'm ever looking for an amazing dining experience next time in Vegas, this will definitely be my top option!"

  • "We celebrated my wife's 40th birthday at Sage. Our reservation was supposed to be 8:15 but they didn't have the table ready till 9:00! That was a disappointing way to begin but to be fair they paid for our drinks while we waited. However, the food was good and the ambience was pretty cool. We had a party of 10 so it might be better for a smaller party. Overall, good food, decent service."

  • "I hosted a dinner with potential clients here while attending a conference in Las Vegas. The food and service were extremely good, if not excellent. Nearly four hours passed with my guests, whom I had not met in person before. Clearly, this was an excellent environment for entertaining. The noise level was moderate - quite conducive to civil conversation. The only knock, if I had to have one, was that the wine list skewed quite expensive with only a modest selection of bottles in the double digits. Nevertheless, the wine steward helped us select an excellent wine that matched quite well with a diversity of dishes. Well done."

  • "We loved the amuse bouche teaser, Fois Gras Brûlée, Beef Tartar and Beet Salad as appetizers and finished it off with tortellini dish, short ribs and flank steak. Great restaurant albeit a bit pricey. Will definitely recommend it to friends and clients."

  • "Wonderful meal all around. Kudos to Lauren our server - she was engaging, knowledgeable and all around pleasant and on top of things but never overbearing or hovering. I highly recommend requesting her but only if you promise to tip at least 20% - it's what she deserves. Food was lovely as well. Must get the wagyu tartare and poached egg with black truffles. And the oysters with Tobasco gelee. And the foie brulee. Wine list is expansive and contains an interesting mix of typically inflated Vegas priced bottles and some real delicious values - trust the somms, they're both honest and smart in their recommendations. Decor is refined but far from stuffy so equally good for date night or client wooing."
