Sage is James Beard Foundation Award-wining Chef Shawn McClain’s first venture outside of Chicago. Introducing his distinctive style to ARIA, Chef McClain combines farm-to-table produce, artisanal meats & sustainable seafood with an emphasis on simple, clean flavors & seasonal ingredients. Sage's award-wining cocktail program visits America's classic libations & rewrites them with a contemporary edge through natural ingredients & limited-production boutique liquors.

The 112-seat dining room & 49-seat lounge display a seductive & comfortable elegance. Designer Jacques Garcia, know as much for his opulent French style as his pure-form minimalism, echoes Chef McClain's culinary sensibility with a refined, modern aesthetic brimming with character & whimsy. Hand-painted murals by Paulin Paris offer reinterpretations of famous early modernist paintings.

  • "Amazing room, incredible service, spectacular food. That pretty much says it all! A truly beautiful space, elegant and warm. Our server, Bond, was a true professional, made great suggestions, very warm and friendly, honestly the perfect server. Corn chowder, heirloom tomato salad as starters--delicious. Snapper, veal cheeks, halibut, and scallops as entrees, cooked to perfection and every bite was wonderful. Shared lemon pie and carrot cake mousse (amazing) for dessert. From start to finish, ambience, service, and cuisine were perfection. Bond, one of the best servers anywhere. A lovely evening with incredible food and service. Loved Sage."

The $24 lobster appetizer was literally only a couple of bites, though the octopus starter was more substantial (and also delicious). The scallops with oxtail is a solid choice, and they know their way around the bar here- my Vesper was excellent (though poured with a light hand)."

  • "We opted for the pre-show prix-fixe early dinner that has a wine or beer pairing with each course for an extra $29.00. We did not know what to expect, but we were presently surprised. The service, food (I had the beet salad, flat iron steak, and dessert (no choice) with the wine pairings), and the amuse bouche were great. I think that the wine pairing could be better for the steak, and that is my only complaint. It was excellent, the service was great, and the decor is modern and sleek. I highly recommend this for any occasion."

  • "We have had some very good food but what we tried at Sage was phenomenal! We had the octopus it was tender and delicious, my husband had the Coby skirt stake and I had the calf chicks. I can’t stop dreaming about it! Our waiter didn’t pay much attention to us but our water gentleman got us what we needed he was fantastic attentive and polite, I do hope that when we come back in November for my 40th he will be a waiter and not just our water guy. The restaurant was fantastic, beautiful; we fell in love with it. I can’t wait to go back! Thank you"

  • "Of seven high-end restaurants on a recent Vegas trip, this was our favorite and one of the two best (the other being Julian Serrano-Aria.) Service was impeccable, matched by truly memorable food (we are still talking about the braised veal cheeks and the roasted sweetbreads) and a truly elegant setting. Our other Vegas venues felt like the chef had put the kitchen on automatic and walked away - this felt like Shawn Mcclain was right there (and who knows, maybe he was) A stellar evening with highest recommendation!"

  • "This restaurant was a true disappointment. Our service was terrible! In fact, the waiter was rude and condescending. We tried several appetizers, the soup, a few of the main courses and a dessert. Although the food was good, there was nothing that we tried that was worth going back. Considering the number of fabulous restaurants in Vegas, I would recommend skipping this one. Go have a drink at the bar because it is a beautiful restaurant, but then go eat somewhere else."

Like many restaurants on the strip, it was overpriced. The food was good but not magnificent and certainly not worth the more than $400 bill for a party of four."

  • "Had a Friday evening dinner. Waiter was clueless. My guest had allergies to cows milk that we told the waiter and yet he kept bringing dishes with butter in them. Steak came out super rare even though we ordered medium. Portions are small. Best part of the evening was Christian the wine sommelier. After dinner when we were leaving the waiter asked if anything was wrong! Manager Robert then wants to talk to us and offers (at first) to buy us a drink. Thanks! We spend $350 on dinner for 2 and he wants to buy us a $5 drink!! Then he starts to offer more, please come back, etc. Not a chance. There are much better dining choices in Vegas. Save your $$ and go elsewhere."

  • "We celebrated my wife's 40th birthday at Sage. Our reservation was supposed to be 8:15 but they didn't have the table ready till 9:00! That was a disappointing way to begin but to be fair they paid for our drinks while we waited. However, the food was good and the ambience was pretty cool. We had a party of 10 so it might be better for a smaller party. Overall, good food, decent service."

  • "I hosted a dinner with potential clients here while attending a conference in Las Vegas. The food and service were extremely good, if not excellent. Nearly four hours passed with my guests, whom I had not met in person before. Clearly, this was an excellent environment for entertaining. The noise level was moderate - quite conducive to civil conversation. The only knock, if I had to have one, was that the wine list skewed quite expensive with only a modest selection of bottles in the double digits. Nevertheless, the wine steward helped us select an excellent wine that matched quite well with a diversity of dishes. Well done."

  • "Wonderful meal all around. Kudos to Lauren our server - she was engaging, knowledgeable and all around pleasant and on top of things but never overbearing or hovering. I highly recommend requesting her but only if you promise to tip at least 20% - it's what she deserves. Food was lovely as well. Must get the wagyu tartare and poached egg with black truffles. And the oysters with Tobasco gelee. And the foie brulee. Wine list is expansive and contains an interesting mix of typically inflated Vegas priced bottles and some real delicious values - trust the somms, they're both honest and smart in their recommendations. Decor is refined but far from stuffy so equally good for date night or client wooing."

The decor in the restaurant is very modern and a little romantic. We have been to a lot of restaurants in Las Vegas and Sage is now our favourite!"

  • "Funny that the waitress indicated they have an 'aggressive menu'! She was right! I tried Octopus app which I have never had - it was yummy and not rubbery like one might think. Food was great, lots of attention @ the table. We went for our 7-year anniversary and live in town. Portions are small enough that you can eat an appetizer, entree and dessert...and not feel totally gross leaving the table like you over-ate. It's Vegas pricey...no surprise there..but worth it."
