Sage is James Beard Foundation Award-wining Chef Shawn McClain’s first venture outside of Chicago. Introducing his distinctive style to ARIA, Chef McClain combines farm-to-table produce, artisanal meats & sustainable seafood with an emphasis on simple, clean flavors & seasonal ingredients. Sage's award-wining cocktail program visits America's classic libations & rewrites them with a contemporary edge through natural ingredients & limited-production boutique liquors.

The 112-seat dining room & 49-seat lounge display a seductive & comfortable elegance.     In the beginning we were seated in the outside bar area which was not very cosy and cold from the air condition and quite empty and we felt very dissappointed because it seemed different what we had expected and seen on the website. Then we noticed there was one more room next door and we were allowed to change to another table inside. Much better! Vibrant atmosphere, lot of people but not crowded, beautiful decor - just much better. The service was very attentive and the food was outstanding! Great chestnut soup, risotto with mushrooms and white truffles lacked a bit of salt but was very good, goose liver creme brulée just delicious. The desserts were strange and are not so recommendable. But overall: It was a nice evening we enjoyed and would not like to have missed!

    I travel to Las Vegas for business dozens of times a year. I have sampled all the great restaurants in Vegas, and Sage is the best. Every dish is fresh, delicious and memorable. The service is perfect, and the wine list exceptional. Perfect for a date or small-group dinner. Exceptional.

    best dinning experience we enjoyed while in Vegas, Lobster salad was excellent. Would highly recommend the short rib or scallops for main course. For dessert the Brulee was the best we have ever had. Extensive wine selection. Service was very attentive without being too entrusive.

    Besides being very pricey, even by Vegas standards, the food was UNINTERESTING and disappointing! Service was disjointed, ie. we were served our appetizers before our drinks. The coup de grace was the dessert! A SLIVER of raspberry crisp came on the half filled plate with a grape sized scoop of ice cream for $15. Won't go back and won't recommend.

    We were sat promptly by the concierge and addressed immediately addressed by our server as well as the bus. They were polite and graciously answered all of our dietary questions. I would highly recommend this place for anyone on healthy diet.

    The place it's self is very nice and the service overall is excellent. My boyfriend and I thought the food was average or below. We had just run the Las Vegas 1/2 Marathon and were starving. We had been looking forward to dinner since before the race. He ordered the chicken and I had the bacon wrapped pork. The food wasn't very good and the price was expensive. We were both very disappointed. Neither one of us plan on returning.

    Until this weekend I loved living in San Diego....where my favorite Restaurant is Mr A's. ...then we visited Sage in LV. I now have a new favorite restaurant... The service, the people, the customer experience, the Sommelier,..the food! From the minute you taste a appetizer....an explosion of flavors detonates which you wish could continue for ever. Recommend the Poached Egg Appetizer, the Brussles Sprout salad and the Duck! OMG!! I paired mine with a Cotes du Rhone and perfection for a evening meal was there. Just try it!!! Romance that someone in your life and visit Sage!

    The short ribs were fantastic. The scallops are a signature dish and they were good - nothing to write home about. Can't remember the two appetizers, so not memorable. The $14 dessert was disappointing - tiny portion, almost too small to share. Just enough for a taste. We always order dessert, but this one was not up to par. The menu needs a little revamping - a little more zing. The service was very good. Restaurant is just missing something. Wine was very good. Oh - and the tables are quite wide, so makes talking quietly and closely difficult. Didn't feel cozy, a little like a cafeteria.

    Came here a second time with friends on a business trip. Not the same without my wife but the food was exceptional as was the service. We had to have the foie gras creme brûlée and my friends that didnt like the idea of liver were pleasantly surprised by the depth of flavor, richness, and creaminess. My grilled Spanish octopus and Braised Veal Cheeks were outstanding!

    Our server, Bond, was excellent. He made us feel comfortable and tended to our needs well. The food was perfectly prepared and it was nice that the chef specially made a dessert to accommodate my lactose intolerance.

    Expensive but fine dining in Las Vegas tends to be that way. We enjoyed the chef's creativity in assembling a fantastic chef's tasting menu. We appreciated the server's advice to not add the wine and beer pairings as it was more economical to purchase separately. Our server overheard my wife say she enjoys a dry Riesling and brought out two bottles of wine, one being the riesling she had ordered and another she thought she may prefer which she did. I appreciated the extra effort and attention.

    poor service, salty food , stuck up wait staff . From the time we walked in the hostesses were too busy talking to each other and trying to keep their breasts in that we bypassed them and went directly to the bar. At the bar i was asked if we had reservations we said yes but the gilts were busy. The bartender told me I had to go and check in .. the rest .. done we are locals and will never return

    I ordered the poached lobster, foie gras creme brulee, bacon wrapped rabbit, and the duck. We started with the foie gras, amazing and full of flavor. The lobster would have been great if we started with that one but next to the foie gras it was underwhelming. I love rabbit because of the game taste but for some reason in this dish out tasted like pork tenderloin but extremely tender. The bacon was too dominant and over powered the whole dish. This was a special of the night. The duck, that was amazing, skin was crisped perfectly and the combination of flavors from the caeb and the crisped green was perfect. Speaking of that, if we had the time, we would have loved to get the trading menus...

    Two of us dined at Sage and both had the tasting menu. We were in for a real (and very long!) treat. I believe it was 8 courses, meticulously created in appearance and taste. A few of them were misses, but that didn't detract from the overall greatness of the restaurant. A true gem in Vegas.

    Have been here twice. First time we sat at the bar and ate sweetbreads while chatting with the bartender. The second time we got a table. Our server didn't make a great first impression - he interrupted a conversation we were having at the table and just kept talking over the top of the guy that was speaking. After the initial faux pas, he ended up being good. Love the sweetbreads here. I had the veal cheeks and they were good. Not great, but very good. Other two in the party had the beef shortrib, which again, was good, but not great. The after dinner amuse-bouche (I know that's not the name - always though it was referred to as the maitre'd, some sites say petit four or lagniappe) - whatever you call it - was excellent.

    They were not open to any changes to the menu and kept trying to direct me to what they wanted me to eat. I left feeling worse because of the service even if the food was just okay. The octopus and the wagyu was covered in so much oil I did not finish both dishes. And I can't even remember what I had for desert and the dinner was yesterday! Definitely would not recommend this place to anyone!

    This is our third visit to Sage. First experience was dining at the bar and having a great conversation with the bartender about Crown Royal. We had dinner in the back area on our second visit and in the front area on our third visit. Noise level is a bit higher in the front area. We tried three different appetizers - Brussel sprouts salad, lobster salad and the oysters - all three were great choices! Dinner for five was a mix of pork tenderloin, short ribs and scallops - again, all great choices! Our waiter, Jerry, was very attentive and informative. Enjoyed the brief discussion in French he had with my wife. Ended the experience with four in our group trying absinthe with Jerry walking us through the different choices.

    Our evening at Sage was perfect from beginning to end. We started in the bar where we learned all about Absinthe from the knowledgable and personable bartender. Our waiter was also personable and very attentive. The food was fabulous! I had the pork loin which was perfectly cooked. My friends had the chicken which was moist and delicious. My husband had the braised short ribs. They were so tender and flavorful, they melted in hi mouth. The food all had wonderful combinations of flavors that went perfectly together. I would highly recommend Sage for a special night out.

    We thoroughly enjoyed our dining experience at Sage. The foie gras custard brulee was absolutely devine! My husband had scallops as his entree, and I had the black cod. However, the wonderful tastes of these two entrees was somewhat diminished by what was added to the plate. The scallops had oxtails and the black cod had chewy mussels. Neither of these add-ons did anything to enhance the wonderful entrees. But, overall, we had a delightful dinner with impeccable service!

    We were so excited to try this restaurant and the absinthe "tastings" it offered. Once we were seated I asked the waiter about it and got a condescending response. I let it go and started to ask about different items on the menu only to be made to feel stupid about my questions. If you don't want wine they don't have many other mixed drink options. The food was good but nothing exceptional for the $100 per person the dinner cost. There are plenty of other restaurant options in Vegas and would suggest skipping this place. The Aria Hotel is beautiful though!

    Wait staff were a team. They were attentive but not in your face. I had veal cheeks with chestnuts that melted in my mouth. Could have used a little more polenta. Brussel sprout side dish was really good. My husband had black cod (a few bones) but it too was great. I would go back in a heartbeat.

    Everyone at Sage treated me like royalty. I had fois gras brulee, fois tourrine, duck, warm mushroom salad, and a fois gras candy bar. Every bite I put in my mouth was beyond delicious. The chef really knows how to create an impeccable meal, and the bartenders and bar manager were incredible from start to finish. This was a truly memorable meal that I will never forget. Sage has set the bar to a brand new level.

    Every dish from the appetizer to dessert was sheer perfection. I was a bit surprised that the price point was substantially higher than what was advertised (well worth it though). Each course came very quickly and was served at exactly the right temperature. We both selected the chef's signature menu by the way. I had heirloom beets, scallops, pork loin, and a panna cotta. Each dish was uniquely flavorful and a combination of lightly sweet and savory save the desert. The desert was cool, light, and mouthwatering.

    We enjoyed our meal at Sage. The wine service was excellent but the food was a bit disappointing. We did the $89 tasting menu. The oysters were amazing, some of the best ever. The beet salad was good but nothing too unique. The main course portions were on the small side. I had the Iberico pork and it was a tiny piece of meat with a larger belly portion that was 90% fat. The desserts were pretty but not overly flavorful. In general I think the quality of the ingredients is top notch but the preparation was neither overly unique or flavorful. For the $ I think they can do better. Service was also quite slow, I think so we would drink more wine, which we accommodated.

    I was intrigued by some of the dishes I tried at Sage during my first visit for a late birthday celebration. We tried the signature tasting menu, and some of the dishes had some unusual and unexpected flavor combinations which were delicious and surprising. I found myself really concentrating on the flavors as a result. It was the most interesting food experience I've had for some time.

    The good: great beer list; the duck was tasty The OK: nice beet salad but too small for the price; The BAD: The chicken with mashed potatoes and carrots. The chicken was filled with sausage, which had a strong flavor that was not pleasant - we think fennel. There was LITERALLY about 1 tablespoon of mashed potatoes lying beneath the chicken - we weren't even sure if it was them at first - we thought it was a sauce. There were also about 5 skinny slices of carrots. Do not come here if you are really hungry.

    I chose Sage for an anniversary dinner because of the positive reviews as well as its location. Impression on arrival: a very nice space. Noise from a crowd watching football made its way into the dining area from a bar. We chose the tasting menu with wine pairings. Our server seemed attentive, asked about allergies and disinclinations, but 2 things that were on our list were served to us. Our sommelier was absolutely wonderful but disappeared at 10pm, replaced by someone who simply came out and poured wine into our glasses. Disappointing considering we both had a pairing menu. Finally, no joke, our dinner and personal space were interrupted by 2 vacuum cleaner salesmen. All in all the food was average to good, far from our expectations.

    I brought customers to Sage for an experience and our expectations were exceeded. The decor with a Renoir backdrop and a modern forward setting was impressive. The service was impeccable. I wanted to order the tasting menu (everyone at the table must order it) but one person wasn't quite adventurous enough. After trying what she ordered there wouldn't be a question that she would go with the tasting menu if asked again. Our server provided excellent information and recommendations. Sage will be a must stop the next time I'm on the Strip. Thank you Sage and staff!
