Sage is James Beard Foundation Award-wining Chef Shawn McClain’s first venture outside of Chicago. Introducing his distinctive style to ARIA, Chef McClain combines farm-to-table produce, artisanal meats & sustainable seafood with an emphasis on simple, clean flavors & seasonal ingredients. Sage's award-wining cocktail program visits America's classic libations & rewrites them with a contemporary edge through natural ingredients & limited-production boutique liquors.

The 112-seat dining room & 49-seat lounge display a seductive & comfortable elegance. Designer Jacques Garcia, know as much for his opulent French style as his pure-form minimalism, echoes Chef McClain's culinary sensibility with a refined, modern aesthetic brimming with character & whimsy. Hand-painted murals by Paulin Paris offer reinterpretations of famous early modernist paintings.

  • "We visited Sage Sunday night for dinner and the restaurant was busy. We were seated promptly by a very polite hostess. Our sever (a French guy) did a great job. He offered us grilled octopus, beef carpaccio and foie gras - a great choice. For entrees we choose scallops and branzino fish. The food was amaizing. Superb wine list, moderate prices. Our Somm, Christian, paired our food with different wines - great job, right on the spot. Everything was outstanding - food, service and ambiance - we will visit Sage again definitely. Highly recomended!"

  • "I have stayed at Aria many times and this was my first visit to Sage. We were 15 minutes late and they were holding our table. We chose the tasting menu without the wine/beer add on. Our server, I believe his name is Jason, suggested a French wine that was fantastic, we drank two bottles. Both the service and the food were terrific. They always mentioned ingredients in the dishes as 2 guests have food allergies. I will certainly return the next time I am in Vegas. Thanks for a wonderful experience."

  • "My wife and I recently dined at Sage in Aria as part of our ten-year anniversary. The experience was among the most incredible dining adventures we have ever had. We ordered the Chef's Menu, which was several courses, and we each had a Manhattan cocktail. The drink was balanced and fragrant, sweet and smooth, just like a good Manhattan ought to be. The meal started with a brilliant amuse-bouche, a simple but delicious cold soup. The dinner progressed, and the quality of the food and service never faltered. I must say that the Sea Scallops in Salted Caramel broth is just about the most amazing thing I have ever had the privilege to eat. I'm still in awe at the incredible assortment of subtle flavors the chef presented."

  • "Our third time eating here and still the best restaurant in Vegas, hands down. The short ribs? OMG - no really. My husband had the veal cheeks and is still talking about them. Mother in law had the special beef belly. These folks know how to cook - well. The salads are great as well. Skip desert - too weird - and get something at the cutesy cake place in the Aria. You can't miss here."

  • "The restaurant itself is very nice. It has an awesome bar with a very good selection of single malt scotches. However, the menu items were way too funky. It appears that every item on the menu was created for the sake of being unique, seemingly without consideration for the actual taste of the resulting plate. I would suggest keeping it a little simpler or at least having a few items for the more common folk like me. I also found that $490 for a party of 5 with no wine or dessert (had to,rush to,a,show) was a bit steep."

  • "We were a group of 3 for dinner on a Wednesday night. The service and ambiance was very nice. The food was not what we were hoping for. Of the 3 main courses, we had to send 2 of them back to be re-made. A meal was sent back from the table next to us as well, so I don't believe we were overly critical. Very small serving sizes. The main issue was that everything was exceedingly salty. It tasted like a mouthful of seawater accidentally swallowed at the beach. They remade 2 of the 3 meals, but got the 2nd one wrong too on one of them. The server said that the chef "heavily seasons" all meals and that he would remake it without the sea salt garnish. We expected more & would not return to this restaurant."

  • "I got the chefs signature menu and every bit of it was amazing. I'm ruined with scallops now. I don't think I'll ever eat any better ones. I highly recommend the beef tartare and then the beef belly. The food is so rich and full of flavor. I also got the beer pairing with the menu, which was a nice touch. The menu is reasonably priced. Your definitely getting your money's worth in both quantity and quality. The wait staff were also very helpful and prompt with service. I will definitely be coming back."

  • "We were very excited to try Sage and celebrate our anniversary. The restaurant knew we were celebrating our anniversary so I was shocked when they sat us at the only table in the place that was right next to other diners, not a very romantic spot. The hostess was offended when we asked to be moved to a more intimate table and made sure we knew about it because she walked off in a huff without one word and who I assume was the Captain came over and reseated us. Her unpleasant attitude was not the way we hoped to begin our anniversary dinner but the spectacular food and other staff made up for it in the end. I wish the Captain had decided to come by and check on us and apologize for her attitude but we never saw him again."

Would had been great if they give us more time to savor and discuss the previous course before serving the next. The server needs to speak clearly about he iis offering us.   • "My brother and I celebrated our birthday dinner here. We had a table of 4. My husband talked to the manager and asked him if we could do something nice, such as a small birthday dessert, which the manager replied yes. Our server was sweet but she was impersonal. Our busser was the highlight of our night. He answered all our questions and described the food. I wish I remember what his name was becasue he needs to be a server! At the end of the meal our server presented us with the check without offering us coffee or bringing us a dessert. For the amount of money we spent, shouldn't we get something with a candle in it? We left the restaurant with a sad feeling. We will not return and will not recommend this restaurant."

  • "Restaurant was amazing. Had a group of 6 ladies celebrating for a Bachelorette Party. Excellent cocktails and wine list. We didn't have the taster menu since not everyone at the table wanted to do it. I ordered the heirloom baby beets to start and the tortellini with prawns for dinner. Food was fantastic. The chef sent over an amuse bouche to start of tomato gazpacho with pistachios. Everything was perfect. The restaurant looks great and seems fancier than the price point. It was definitely worth every cent."

Our server, Bond, was a true professional, made great suggestions, very warm and friendly, honestly the perfect server. Corn chowder, heirloom tomato salad as starters--delicious. Snapper, veal cheeks, halibut, and scallops as entrees, cooked to perfection and every bite was wonderful. Shared lemon pie and carrot cake mousse (amazing) for dessert. From start to finish, ambience, service, and cuisine were perfection. Bond, one of the best servers anywhere. A lovely evening with incredible food and service. Loved Sage."

  • "We opted for the pre-show prix-fixe early dinner that has a wine or beer pairing with each course for an extra $29.00. We did not know what to expect, but we were presently surprised. The service, food (I had the beet salad, flat iron steak, and dessert (no choice) with the wine pairings), and the amuse bouche were great. I think that the wine pairing could be better for the steak, and that is my only complaint. It was excellent, the service was great, and the decor is modern and sleek. I highly recommend this for any occasion."

  • "Of seven high-end restaurants on a recent Vegas trip, this was our favorite and one of the two best (the other being Julian Serrano-Aria.) Service was impeccable, matched by truly memorable food (we are still talking about the braised veal cheeks and the roasted sweetbreads) and a truly elegant setting. Our other Vegas venues felt like the chef had put the kitchen on automatic and walked away - this felt like Shawn Mcclain was right there (and who knows, maybe he was) A stellar evening with highest recommendation!"

The $24 lobster appetizer was literally only a couple of bites, though the octopus starter was more substantial (and also delicious). The scallops with oxtail is a solid choice, and they know their way around the bar here- my Vesper was excellent (though poured with a light hand)."
