Saboré is a world-fusion restaurant featuring a variety of European, South American, Mediterranean and Asian inspired tastes. Our namesake is from the word "sabor" meaning "flavor". Chef Willy Hernandez’s menu features mouth watering dishes that take you on a trip around the world while sharing and tasting multiple plates with family and friends.

    Our family is not local to the Newberry / Gainesville area, so I looked online for a restaurant to celebrate with our family of four after our son's University of Florida graduation. We could not have been more pleased. What a surprise, even upon first walking in! The decor is extremely creative and fun. The food as well as the decor is "eye candy". It was a delight to have so many varied, gourmet type entrees to choose from. I love trying dishes that are new to me and Sabore' certainly gave me that wonderful option. Everyone was pleased and Sabore' provided us with a memorable celebration!

    This was our third time at Sabore. The food seems to just keep getting better. However, even though the server was friendly and polite, there were periods of server absence longer than normal; although the server apologized for that, that type of service had an effect on the overall experience. We hope Sabore keeps improving its service and doesn't fall back on its past laurels.

    Knowing Sabore is a bit loud, we opted for outdoor dining. Perfect. I had worried that being outside service might suffer and we'd be forgotten. Not so, service was excellent and we never wanted for anything. The warm radicchio and goat cheese starter was super creamy and the strawberry sauce that went with it was a perfect accomanpiment. The sizzling chorizo was wonderful as was our entree pork topped with fried plaintain. I have never had anything bad at Sabore and love eating there. After finishing our meal, the evening was so pleasant that we decided to enjoy being outside. Not a problem for the staff - stay as long as you like!

    My husband and I went to Sabore the day after Valentine's Day. It was such a pleasant experience! Even though it was the day after, it still had a decent crowd of people! We ordered the tuna squares and the beef empanadas. The empanadas were amazing, the tuna was a little too spicy for my liking and definitely to much salt. My husband ordered the half chicken (perfectly cooked and nicely seasoned) and I ordered the duck (definitely a must try)! For dessert, we had a mango margarita and it was the best I have ever had! We really enjoyed the experience and are playing to go back again in a couple of weeks for my birthday while my parents visit!

    I liked the food. Except the soup was cold but they were very nice about it and with no problem and really good service they took it back to heat up for me :) It is overpriced, but most Tapas places are, this place is definitely for a special occasion and a treat otherwise hopefully you are not extremely hungry or you will pay a fortune.

    Frankly I prefer Sabore for brunch on Saturday or Sunday than for dinner now. The atmosphere is more laid back and it is not as crowded. (And the faux cowboy Maitre D that I cannot figure out is not there for brunch). One can order from a menu including salads and sandwiches or from one featuring typical brunch items. I usually get the house eggs benedict with crab cake and love that but most recently I had regular eggs benedict and they were equally delicious. They serve a delicious coffee. The only problem we incurred this visit was very slow kitchen service.

    What a nice surprize right here close to home. We loved the decor and the energetic atmosphere. We tried a wide variety of items and thoroughly enjoyed every one of them. Service was great and prices fair. We'll make Sabore part of our regular rotation.

    Worst service I've had at a restaurant in 10 years, took 30 min. to get out 3 entrees and none were served at the same time, didn't know what wines they had in-stock, 20minutes for dessert to be served - I will never visit this place again.

    This was my first visit for brunch/lunch although I have had dinner at Sabore several times. The restaurant was nearly empty since the University of Florida football game was underway and the noise level was very low. We were actually able to converse easily. Service was wonderful and food was delicious. Best of all, the out-of-place faux cowboy who wanders around with black hat and bolo tie in the evening was not there.

    Good food, but the service was a little spotty. I had specifically asked for soy sauce with my sashimi, which they didn't bring and it took me a while to hunt down the server. I think the manager saw me though and asked what I needed and came right back with it. I think it's a little expensive for what you get, but I really liked the environment. They had a dance floor for Halloween and it was pretty awesome. I would recommend this place.

    It has quite a modern and somewhat eclectic appearance to the decor, but the chairs are comfortable. The food was incredible! We had the pan seared chicken and the rigatoni papalina, followed by the creme brulee, all of which I would highly recommend! In addition, their Grape Lemonade Martini is a show stopper! If nothing else, go there just to try one of those! However, you mojito fans might be a little disappointed, as their technique needs a little polishing. Overall, if you haven't been, GO!

    Sabore focuses on tapas-style portion, with 'fusion' theme. I think it's an idea that often falls short when restaurants try to have too diverse a menu, but they are pulling it off here. Just enough playfulness and mixing to make it fun with interesting spins on everyday items thrown in. We had a great time and definitely will be back. Highlights.. Tuna Tostone - tostone-style plantain topped with seared ahi tuna, Ginger Creme Brulee (beautiful presentation)....and plenty more on our 'to try' list for next time. Can't wait!

    I came with my foodie son and his wife, along with my other two sons (also adults) and my mother - a real mix. My mother is a vegetarian, and she was very happy with the choices. My foodie son like the food, and my picky son liked the food, and with the tapas style dining it was a fun free for all - and not as expensive as it could have been. Our waiter seemed to forget about us after a while - not good for him since our drinks were empty (so our tab was smaller than it might have been). But I will go back.

    Restaurant is too bright. Went to dinner at 530 and felt like the entire place was empty and yet they insisted on seating us right next to the only other 2 tables that were occupied. Food was great! Fried goat cheese with guava sauce is the best thing we had.

    We were crammed into our tiny table which was crammed amongst several large tables with large groups. The food was ok, but not outstanding considering the outlandish prices. The portions were quite small so you had to order several items each. But even then, by the end of the evening we were not filled up and our wallet was empty too. The only food we really enjoyed was the tuna tostone which was a small but delicious appetizer and the veal tortellini which was tasty but should have been measured in nanometers because it was so small. Josh says "if tapas are smaller than these portions, then we are NEVER going to eat tapas".

    The best thing about Sabores is the decor and the fun atmosphere! Had their special crispy fried pork belly - which was excellent and interesting. The ceaser salad topped with a frico was nice, but since tapas is about sharing it would have been nice to have more than one anchovy. The churasco was good as was the shrimp with provolone, but the mushroom risotto was creamy and excellent. There is an extreme lack of vegetable offerings. I wanted something more, but not meat or dessert. They have a lack of good wines by the glass and the service was sketchy. Our server was nice, but the food came out so fast that he wasn't around when we wanted a bottle of wine for our meat dishes. I'll go back, but be careful about how and what I order.

    overall, it was okay. definitely not the best tapas in town, but certainly not the worst. a couple of the things we tried were really great and a couple were unremarkable, especially for the cost. the hostess gave us a rough start, but our server was very attentive and friendly. probably won't go back because it's a little hike from where i live in downtown gainesville, but it could be a good fit for some.

    Mommy's night out in Gainesville. Four women, eight dishes, and not one dish anyone loved. Too many dishes featured cheese that tasted reminiscent of nachos at the ball field when I was a child. Everything else was pretty bland and unexciting. Drinks were great. Service was not terrible, but the waiters seemed overly intimidated by us and came across as very flustered...to the point they made several mistakes in our orders and our drinks. The ambiance was fabulous, decor was fabulous and I would recommend it for casual drinks but I would also recommend other tapas restaurants over Sabore.

    It's hard to find a restaurant that is fit for foodies, has outdoor seating, and also kid friendly. Food was wonderful - really a cut above the type of food normally found in the Gainesville dining scene. While it has a romantic ambience, it is not stuffy, and I felt comfortable bringing my toddler (who happens to be a foodie). Was quite surprised to find that they had highchairs, booster seats, and starred items on the menu that are "kid-friendly." It is not on the menu but they also offer a set $5 child meal that is made to order - whatever you think your child would like the chef will make. Much better than chicken nuggets and hot dogs. Highly recommend the king salmon - baby corvina also good. Caesar salad was done very creatively!

    I and my friend went for brunch here. We ordered waffle/mascapone/berry, kobe beef burger and sabore egg Benedict/crab cake/asparagus. All food tastes great. Bruch items's prices are rather high compared to the portion. We enjoyed the overall experience. Staffs are very helpful and prompt.

    This was our first time at Sabore. The food was good with exception of the tortilla española. It had the texture of a quiche but had absolutely no flavor. It was almost as if they added egg and forgot everything else. Service was quick and friendly. The restaurant was loud but manageable overall, but was surprisingly more like a chain restaurant than a local specialty place. Prices were good - two persons with alcohol for less than $65.00.

    This was our family's second time dining at Sabore and again, the food was outstanding! We love the Lobster Roll and the Kobe Beef sliders...amazing flavors and the presentation is beautiful. It's a trendy, fun place to meet with family and friends! The only issue that I have with this restaurant is the service, which was poor, we happened to have the same server both times so it might be an isolated problem.

    It started with the reservation. We called and were told that reservations are not taken. However, OpenTable clearly contradicts this statement. We arrived on time and were seated quickly. All seemed well, when it was explained this was a tapas-style restaurant with slightly larger portions than usual. So far, so good. We started with six servings for the four of us. Unfortunately, fresh plates and silverware, as found at places such as Cafe Tu Tu Tango, were not available. Thus, many of the flavors of the average food ended up melded together. We did receive one round of fresh plates. Service was generally less than acceptable. I would recommend not eating tapas style for all the reasons stated. OF NOTE: We went on Saturday, at 7pm.
