BEAST features the bounty of the Northwest with French inspiration in mind. A six-course prix-fixe dinner is offered five nights a week. Wine pairings are available for dinner and brunch. As our menu changes weekly, so do they.
Because of our small kitchen and a set menu, we don't have the staff and resources to tailor each course to individual dining restrictions. We are able to make an exception for allergies if given advance notice.
A credit card is required to secure all reservations. We have a 24-hour cancellation policy for parties up to five people and a 48-hour cancellation policy for parties of six or more. Any cancellations within the aforementioned timeframes will result in a $75 charge per person.

Established in 1879, Huber's is Portland's Oldest Restaurant. It was originally called the "Bureau Saloon". Mr. Huber was involved from the beginning as a bartender, bought out the original owner then changed the name to Huber's.
In the old days if you bought a drink you got a free turkey sandwich. This is how the turkey tradition started. Today Huber's cooks 150 lbs of turkey a day. It's Thanksgiving everyday at Huber's serving a traditional turkey dinner every day. We also serve Certified Angus Beef and fresh seafood. Huber's is also known for its famous Spanish Coffee. We believe in supporting our local artisans, and even though our chairs are original (recycled) post modern, they were refurbished locally and the couches and tables were made only a few blocks away. The wood on the walls and tables was salvaged from local barn lumber, and even the point of sale system was designed and is maintained locally.
We are at fault in only one way... our award winning wine list is Italian, like the owner.

As a young assistant manager at a 5-star Caribbean resort 20 years ago, when $1000/night was unheard of, I asked the resort owner why each year we failed to make Conde Naste's "Gold List" despite being 100% booked a year in advance. He replied, "Because we don't have a pool; 25% of the score is based on a pool." I retorted, "You've got 30 acres-why don't you build one?" To which he replied, "Because if I built one everybody would use it!" I failed to see the logic. "And?" I asked. "Because people tend to do what they are most familiar with and in our case, they'll miss the beauty. If all they remember is the pool, they’ll find one closer to home next year. Here, their memories should be of (pointing) THAT sun setting over THAT Caribbean ocean with their toes in the sand. I’m not here to give people what they're familiar with, Kent, I'm here to provide something they'll never forget."

Elevation, the student operated restaurant at Cascade Culinary Institute (CCI), uniquely engages community diners as an integral part of the student learning experience. The Elevation menu, which changes two times per term, boasts of high quality ingredients that are sourced from regional growers, ranchers and producers. Patrons who dine in a "live classroom environment," are provided with an opportunity to offer feedback via an e-survey at the conclusion of the dining experience. Guest input is then integrated into the instructional process on a weekly basis in order to enhance the student learning process. As part of the CCI Capstone Course, learning outcomes within Elevation associate with students developing confidence in cooking and service techniques and developing effective communication and teamwork skills prior to their transition into the regional hospitality industry workforce as future leaders and innovators.

Marche is committed to using only those ingredients that are at their best, so our menu evolves as we move through the seasons of the year. Marche also believes in using the highest quality and most healthful ingredients available and to that end use organic, free range, and chemical free products. The culinary technique is French-based: intensely flavored and simply but beautifully presented.
