Up restaurant focuses on classic American dishes by incorporating seasonal and premium ingredients from Texas to all over the world by using a classic timeless European technique. Known by generations for her hospitality, proprietress Elouise Adams Jones, a.k.a. Ouisie, serves an eclectic collection of Southern & Mediterranean foods with an excellent wine list to match. The Bird & The Bear gives Ouisie’s much-appreciated eclectic tendencies even more freedom. It is a little more casual than her San Felipe restaurant, Ouisie's Table, with lots of Southern flair and no shortage of surprises - in both menu and decor.

Welcome to Olympia! Let us tell you a bit about ourselves. We are first generation Greek-Americans born and raised in Galveston, Texas. We credit our father (Seawall Café) and our uncle (The Golden Greek) for teaching us to follow in their footsteps as great restaurateurs. In their kitchens we were taught Gulf Coast, Creole, and Greek cooking styles.
Each day our kitchen prepares the freshest foods continuing with our treasured traditional family recipes.
