The different flavors that the chef manages to put together are such that I would never think of myself and the colors combine to delight. I am specifically referring to the English Pea Soup, which was truly incredible. The ceviche was fresh and flavorful; the truffles at the end worth every calorie and then some. The service was impeccable; no attention to detail missed and the ambiance fresh, modern and inviting. Rouge Tomate is a one of a kind. To start, and I must note, the service was beyond gracious, although very high end cuisine, the restaurant accommodated our staggered dining that evening, arrivals of our husbands imparied by weather delays. Our "table" , a cozy "room -table"--the only way I can describe it--was akin to a private dining room. And, now for the food. Just delicious. Some of the best crudo appetizers I have had in the city, followed by outstanding duck, fish and assorted accompaniments. You simply cannot be disappointed. So next time, don't pass by your neighborhood spots. Servers were knowledgable, helpful and understanding but seasonal tasting menu was a hidden dairy disaster. Our table had to pass on their signature experience because of lactose lurking in nearly every course. Perhaps the chef and others responsible for the menu need to expand lactose and gluten free options?

The tasting menu was well designed and the pairings were interesting, unusual wines, which matched the food well. The food itself was also inventive and very fresh. It is hard to pick favorites from so many excellent dishes, but I loved the use of rhubarb with the oyster appetizer, and also the cocoa nib garnish on the halibut.

The tasting menu was six courses (+extras) of beautifully presented appropriately small, tasty and imaginatively prepared dishes, highlighted by uses of fresh vegetables, some pressed to crunchiness, and subtle sauces.. Our outstanding waiter presented each dish and wine--happily, we chose the wine pairing, sharing each glass , which was just right for us--with a brief and helpfully informative description. While not quite our favorite tasting menu--still shared by Jean George and Asiatic--it came reasonably close. I say "reasonably" as a pun, because the price ($85 each plus $50 for the wine pairings) was a bargain in comparison. Everything was gorgeously presented and perfectly flavored! This will be my go-to restaurant for NY visits from now on! This may be the only top restaurant in the city where I always want to try the new dishes on the menu.
Of course, I always ask the wait staff what they think, Tonight I sat at the bar with a good friend. We had the amazing new Tofu main course, the reinvigorated fluke ceviche, and one of the great fish main courses -- this time the arctic char a la plancha. Don't forget the oysters!
Pascaline, the wine director, picked some amazing wine matches with our dishes.
The bar attracts a very interesting clientele. This evening we got to speak with the sommelier from one of the top seafood restaurants in the city who sat next to us.

The food was outstanding with brilliant combinations and flavours all fantastically presented. We were able to savour every dish and, with starters and desserts both 'trio' dishes, we, in effect, had 10 different tasting experiences. Service was impeccable although possibly verging on the over attentive as there were probably as many staff as customers, which was surprising for a Saturday night. When booking, I would recommend requesting a table in the quiet back alcove. The halibut was good, but the squab was perfection, cooked rare with a bit of foie gras on the side. It was perfect for friends catching up so we didn't have to compete with others' conversation. The Hawaiian Walu appetizer absolutely melted in your mouth and all of us raved about the Cow’s Milk Ricotta Gnudi. I chose the rabbit entree and could not have been more pleased as it turned out to be my favorite over the halibut and lamb. The rabbit wrapped in Prosciutto married with the pickled ramp au jus was phenomenal. The beet salad was a stunning, fresh combination. Rabbit was beautifully prepared. I would recommend that anyone visiting leave a little room for the stupendous deserts.

The bar and seats not in alcoves are a bit noisier (or livelier, depending on your perspective). I particularly enjoyed the octopus appetizer. The "sides" in every one of the dishes I ate were flavorful and creative.
