This place has great food and yes, it looks terrific and feels even better as you enjoy your dinner and finally get up from the table. The dishes here are just as delicious, wih the added bonus of no added pounds on the scale the next morning. This may be the only top restaurant in the city where I always want to try the new dishes on the menu.
Of course, I always ask the wait staff what they think, Tonight I sat at the bar with a good friend. We had the amazing new Tofu main course, the reinvigorated fluke ceviche, and one of the great fish main courses -- this time the arctic char a la plancha. Don't forget the oysters!
Pascaline, the wine director, picked some amazing wine matches with our dishes.
The bar attracts a very interesting clientele. This evening we got to speak with the sommelier from one of the top seafood restaurants in the city who sat next to us.

The food was outstanding with brilliant combinations and flavours all fantastically presented. We were able to savour every dish and, with starters and desserts both 'trio' dishes, we, in effect, had 10 different tasting experiences. Service was impeccable although possibly verging on the over attentive as there were probably as many staff as customers, which was surprising for a Saturday night. When booking, I would recommend requesting a table in the quiet back alcove. This was a pleasant riot going on in my mouth during the course of the meal. Each plate was not only pleasantly presented but the taste was in croyable, as the French would say. This is one restaurant and one type of culinary experience that all foodies should watch.. The amuse bouche, a trio, or sampler of three delectable small tastes was to die for. The Arctic char little log was fantastic, as we're all the baby vegetable garnishes, a medley of different tastes and textures which burst with flavor and freshness and crispness. The halibut was good, but the squab was perfection, cooked rare with a bit of foie gras on the side. The dessert, once again a trio of lemony tastes, one better than the previous one, again different textures which created the grand finale to a superlative evening. It was perfect for friends catching up so we didn't have to compete with others' conversation. The Hawaiian Walu appetizer absolutely melted in your mouth and all of us raved about the Cow’s Milk Ricotta Gnudi. I chose the rabbit entree and could not have been more pleased as it turned out to be my favorite over the halibut and lamb. The rabbit wrapped in Prosciutto married with the pickled ramp au jus was phenomenal. I'll call out the sommelier as one of the best in the city. A tremendous knowledge of the list, and for the second time made a wonderful suggestion of a wine to pair with the meal.
The beet salad was a stunning, fresh combination. Rabbit was beautifully prepared. I would recommend that anyone visiting leave a little room for the stupendous deserts.

I had the asparagus salad, the fish and a fancy dessert. All had artistic presentations, and were deelish. Vegan guests had lots to choose from. Gourmet healthy, organic, artisanal. The bar and seats not in alcoves are a bit noisier (or livelier, depending on your perspective). I particularly enjoyed the octopus appetizer. The "sides" in every one of the dishes I ate were flavorful and creative. Our companion said the Artic char was the best-prepared restaurant-served fish he'd ever had. Both wine-by-the-glass list and main-course menu are somewhat limited (and, for my budget, expensive -- we spent approximately $100 per person, including wine, without dessert), but filled with winners, such as the cauliflower and English pea toasts, the char, rabbit and Colorado lamb loin. The "seasonal toasts" make a first-rate shared appetizer. Service is solicitous, knowledgeable and gracious, offering tastes of wine before you order, for example. The food was the hihglight. The degustation menu was top class and well worth of a michelin star.
The food combination, favours and textures were spot on and my hat goes off to the chef and his team.
Having been a chef for 30 years, i can only be impressed by the quality of the operation while serving such numbers.

Every meal has been wonderful, but this last time two of the dishes were only average, which is why I'm not rating the food as "excellent."
That said, the waitress (and trainee) who served us were responsive, professional, and gracious.
On a final note, the ambiance is lovely with the exception of the camera flashes constantly popping. Main courses we had were delicious.
Interiors seem a bit confused, too many styles happening all at once, but again since we are not the right demographics for the place, it would be unfair to focus on that.
Customer service is exquisite.
