The meal we had at the Trillium was wonderful and will be remembered for a long time. The menu was innovative. I was excited when I heard Denver was getting a Scandinavian influenced restaurant. There are so few and far between--sorry to say. My meal started off with shrimp with fresh dill in homemade mayo atop toasted brioche. The shrimp were huge and fresh. The rest of the meal was equally as wonderful. For dessert, I had the swedish pancakes with a tea berry ice cream. The portions were generous, we even had enough to take home for lunch. I can't recommend this place enough!!

One of my favorites during 2012 Restaurant Week. While I would Never say "oooh, let's go have Scandinavian food," the good parts of that influence are evident in Trillium's food. The steelhead trout in mussel dill broth was magnificent - beautifully crispy skin, perfectly done fennel, leeks and gold potatoes, succulent mussels - SO good! The pan roasted chicken with housemade egg noodles was very generous and satisfying. And the warm chocolate fallen cake with chambord ice cream? Yea baby! Great job Trillium! We'll be back!

The food was fantastic, and they offer interesting, unique plates. The wine list is affordable. The dining room was not cozy, and it was very loud. I highly recommend Trillium for the culinary experience, but not the overall experience.

The food for the 5280 menu was good. The winter sald was bland, however the beet salad was very inventive and tasty. Overall the food was tasty, the service was great and the wine selection seemed decent. I would go there again for non-5280-menu as well.

Great restaurant. Very modern with a Scandinavian twist. Had a wonderful restaurant week meal there. Had the fish, she had the beet ravioli, both brilliant. Salad was good, shrimp was over sauced, but delicious. Dessert, forgot what we had, but was good too. Definitely going back.

While the restaurant has only been open for a couple of months, we felt it was strange that they seemed unprepared for Restaurant Week. We were seated immediately which was great, however the server did not take our drink orders until everyone had arrived at the table, almost 20 minutes later. Once we had ordered our meals, the first course came out in a reasonable time. The food was delectable however, we waited at least 45 minutes after we'd finished our first course until our 2nd course came out. When we asked how much longer it would be, the wait staff made an excuse and then asked" if we we wanted a hug." We thought that was rude considering there was no wait line at the door and a couple of empty tables in the restaurant.

Great menu, loved all the root vegetables. Good cocktail list, though the Penelope Cruz my husband ordered was terrible. Server was friendly but left a little to be desired. Our apps came before our drinks and then the waiter came over to apologize that the drinks were delayed. Could have told us earlier and held our apps. I liked the atmosphere and the managers were involved and working in the dining room which I like. I did not like that the server said everything was farm to table. I am a believer of this philosophy but I do not think everything we ate was farm to table, in fact I am sure of this.

Trillium is an excellent addition to the Denver dining landscape. Not too white-tablecloth, but still elegant, friendly and energetic staff, and the food is interesting and tasty. The portions were perfect, not too big or small, so you don't have to drag home a soggy doggie bag. The wine list looked good, and they had local beers on tap for a reasonable price.

We we really impressed by the food. The service was a little rough. We had to wait a long time inbetween our main cource and dessert. The room was a bit cold, I'm thinking because of the brick walls. But the food was so good we will go back, as I want to try the smelt. Recommended.

Dined during restaurant week. Unless you absolutely love turnips and rutabaga, I would steer clear of the Winter Salad. They dominated the salad and to me were very bland. The main course redeemed my faith in the chef-owner Ryan, with the Pan Roasted Steel-Head Trout in the gold potato broth. I challenge anyone to prepare a better combination! The Boompa's swedish pancakes with their own Alpine Berry Tea ice cream was airly, sweet and light. The service was excellent. I have never had more attentive yet non-intrusive service. The staff was well trained and extremely professional! I left Trillium as a satisfied customer!

Seeing this place named among 5280's Top New Restaurants 2012 is absolutely a worthy nod.

From small plates to dessert, this meal was top notch. The beet pudding was a stand out, but my beef tenderloin and carrot cake were also very good. Flavors were clean, simple mixes with creative notes--the bacon whipped cream and pepper honey sauces were genius. I can only complain that there wasn't decaf espresso...but the decaf french press was far better than average so it's not much of a complaint.

We visited Trillium during 5280 week. The food was good, especially the trout with mussel dill broth. The desserts were only okay, not very memorable except the totally unnecessary mint leaf garnish (ugh! why do that?). Loved the Hot Tamale aquavit and appreciated the effort they made to make a special non-alcoholic drink for my husband. We'll return to try Trillium again!

Good variety of small plates and entrees, good selection of value-priced wines; we dined rather early, so the ambiance was very relaxed and not too noisy. I will definitely be back to go through this outstanding menu and work my way through some of their special cocktails and small plates. The duck dish was the best ever.

A gentle take on Scandinavian food, which is a first for Denver. On a mid-winter Wednesday night, the place was not crowded (although the Denver Post review the same day may change that in the future). I had the trout Raaka (a mound of chopped raw steelhead lightly seasoned, topped with a bit of roe and shaved horseradish), served with a nice marbled toast and my wife started with the oysters. Both dishes were hits. For a main, my wife had the "open ravioli" with prawns, and I took two from the "smorgasbord" -- the chicken, mushroom and bacon terrine and the ham mousse. Tasty, but definitely not health food -- lots of cream and butter here. The room is pleasant with the sharp lines and minimalist feel of Scandinavia. Worth a try.
