    Excellent service and food, a gem in the middle of town. The wagyu beef was awesome. Not sure if they used it in the steak tartare too, but it was fantastic.

    The modern and stylish Bistro C.V. was cool and inviting as soon as we walked through the doors. My husband and I were greeted warmly by the friendly hostess and the hospitality was spot on until we left. We ordered a few small dishes (pork belly, duck confit, and pork pate) followed by perfect mussels, and we split the maincourse of lamb 2 ways. We finished by getting peanut butter and chocolate lava cake and toffee pudding. The wine was great, the basiltini was refreshing, and the food delicious! We have eaten at many top rated restaurants all over the world and Bistro CV was among the best! We will go back next time we visit Steamboat!

    Our service was friendly, knowledgeable-overall quite exceptional. The food was incredible, lots of small plate options as well as full plate. The grilled romaine salad is a delicious choice as well as the mussels. It is pricey, but worth it for a special occasion.

    Restaurant has delicious and unusual preparations. Wonderful fresh ingredients and very creative menu. The Kentucky Breakfast Manhattan was a wonderful smokey burst of flavor with a bacon infused burbon. The Duck preparation was simply outstanding. Ask to sit in the dining room that is not in the same room with the open kitchen if anyone in your party is sensitive to smoke.

    Best restaurant in Steamboat - food was fantastic (try the chix & chorizo pot pie) but the service was rushed and the restaurant is extremely noisy.

    Bistro CV is my favorite restaurant in Steamboat. The food is delicious without being overly pretentious. Same goes for the waitstaff - super friendly, yet very knowledgeable without being stuffy. From the salads to the entrees to the huge dessert, the portions were perfect and delicious. The burger is simply the best!

    We dined on New Years Eve - Bistro CV had a 5 course meal plan for $75 per person. There was an optional wine pairing for an additional $50 per person. We decided against the wine pairing, and opted for a bottle of wine. The wine list was pretty expensive, there were only a couple items under $60/bottle per category. The food was excellent. There were 2 choices for each course, except for the salad. The service was great, and each course was delicious.
