Holsteins is an exciting burger concept from Las Vegas restaurateurs Billy Richardson, and Chef Anthony Meidenbauer of Block 16 Hospitality. This concept was tailor-made for The Cosmopolitan with an emphasis on fresh, natural and organic ingredients. Holsteins brings better burgers and a funky, homegrown attitude to The Strip. The menu features specialty burgers, house-made sausage, riffs on traditional American snacks and appetizers, as well as a wide variety of shakes and sides. All items are custom crafted in-house, creating burgers unlike any other. Put an adult spin on the traditional shake with a “Bamboozled Shake”, unique flavors infused with premium liqueurs and spirits.

    Very loud, hard to carry on a conversation. Food was OK but the servers wouldn't do anything extra. Tried to get grilled onions for a hamburger and they never brought them out.

    Holstein's was fantastic. We ate lunch at this restaurant and noticed right away that the menu had taken hamburgers and finger food to a whole new level. If you are a foodie, this is the place for you. Although the restaurant was out of the lobster corndogs (we will be going back to try these), we tried the street tacos which were made with duck confit, foie gras and a lovely relish. These were ABSOLUTE HEAVEN. Then split a burger called the Hen House -- the burger was juicy, perfectly cooked and topped with bacon, cheddar and a fried egg. This burger was amazing and the egg more than made up for the lack of mayo (which we hate). Another don't miss item - duck fat fries. We suggesting splitting items as the food is rich but good.

    Service was good, but unexceptional. It was very loud. My burger was hot and the bun was fresh, but it was completely bland. The onion rings were good. My friend's lamb burger was too salty, but might have been helped if she had eaten it on the bun. The deserts, we tried two of the three "slider and fries," were fun, delicious and creative. I wouldn't go back for the food as I've had way better, less expensive burgers, but would definitely recommend stopping by for desert!

    Not the best burger in town that I had read about. Burgers came out raw when we ordered well done. Macaroni was soupy, not very flavorful and had been told it was the best thing on the menu by the waitress. Food's okay, but better burgers can be found for less in better surroundings. The red dressed hostesses looked like working girls on parade for they could never ever sit down in those cheap looking get-ups.

    Holsteins started off pretty cool but quickly went down hill once they cranked the music. Seriously, it was Valentines Day and they had the music so loud you couldn't even talk to your special date. The menu is ambitious, unfortunately most items, kettle chips, onion rings, french fries, we tried were to salty. Burgers were alright though my Hen House did come with a fried over easy egg that was cooked through. When I told the food runner about this he argued with me and told me that its supposed to be runny, I agreed and showed him that the egg was firm and over cooked. He finally said that's how its supposed to be, I begged to differ. Our actual waiter said it was wrong and fixed it, very cool server. The customer should be right.

    Had heard alot of good things about Holteins Las Vegas. Upon my visit last Saturday, I was letdown. Food was good and service Ok, but we felt rushed, did not get to enjoy ourselves. Now the DJ in the lounge was a very nice Las Vegas touch, so the experience was not all bad; with a little more training and polish, this place has lots of potential. They can only get better.

    We went on a Monday when they were kicking off GetLitMondays, $1 beer and $1 shots at the bar from 7-10pm. The burgers were so delicious. Nice and juicy! We had the Hen House and the Koren BullGogi...both of which we would highly recommend. The shoestring fries were a lot better than the steakcut. Can't wait to go back and try more!

    If you're looking for a great burger (try the Rising Sun - it's amazing!) and an even better beer selection (if you're looking for a Mich Ultra, this isn't the place!) Holstein's is where you need to go when in Vegas! Literally from start to finish our experience at this spot in the Cosmopolitan was outstanding. Our server Noelle was awesome & knowledgeable of the entire menu, making some great recommendations. We started our meal with the truffle lobster mac and cheese, then split the Rising Sun with sweet potato fries, as well as Pork Bell Buns (under Tiny Buns.) Absolutely amazing! We topped it off with a few Laguinitas IPA on draft and finished our meal with Holstein's take on the Candy Store for dessert. It was all just delightful

    The food was uneven, some items were great to good (smashed potato with lardons and cheese, bull balls), others dry (turkey burger, Sliders with beef and foie, or not worth the cash/flavorless (chicken tenders). Ambiance was good and the beer menu fun - with the gentle prices, this makes for a good combination for today's vegas.

    From the minute we arrived to disorganization at the hostess stand to having to wait soo long to place our order, having to have our food re-fired and then being overcharged only to have our waitress misplace our credit card and then having to wait for her to finally find it, it was a terrible first impression and we have not intention to give them another chance......and we live in Las Vegas.

    Pretty good burgers but the restaurant is still working out kinks. They have a fried pickles appetizer on the menu that according to our server has been off the menu since the first week they opened in December and we ate there on 1/7 - reprint your menus guys! Service was erratic - burgers came out before we finished our appetizers and drinks took too long. the apps and burgers and shakes were all good but the service was sloppy.

    Wow - what a spot. Not only was teh Joint Jumping, but the menu had all sorts of great items - from the basic burger, with your choice of artisan cheeses to the "foodie" type grub like Foie Gras and Duck Confit... Hello! Awesoe. Fries, forget about it - they had all sorts to choose from. Sreak Fries my fav or Duck Fat Fries - a great option a few times a year. The shakes and desserts are crazy good and crazy good looking. The Campfire Smores isn't just words... it brings you to the woods as you roast marshmellows over the flames. Just close your eyes and enjoy. The Candy Store is mad crazy good! A plate full of creative goodness. Do they have a magician back there or Willy Wonka? I don't know or care but it is Great!

    We arrived for our late lunch at 2:30, and the place was still very busy. I would suggest reservations especially on weekends. The beer list is extensive, and the "adult" shakes we ordered were excellent. We all ordered burgers, the "gold standard" and the "longhorn". They were cooked perfectly and could not have been better. The prices, while pricey for burgers are in line with any quality resturant on the strip. Lunch for four with beer, shakes, hotwings, and burgers was about 100.00, plus tip. This is the sister location to LBS at Red Rock, and I think it might be a bit better.
