Serving breakfast, lunch and dinner, Palo Verde introduces Chef Nicholas Hertel. Classically trained, Chef Hertel offers a contemporary southwestern inspired menu featuring such items as Crispy Blue Point Oysters with johnny cakes, cactus green chili tartar, charred corn and sweet red pepper jam; or Autumn Squash & Smoked Chili Fritters, glazed with The Boulders own harvested Arizona honey, old west cherry peppers and green onion; and Smoke & Spiced Bison Bistro Steak with sweet corn pudding, red chili emulsion and bourbon jus. Dine in a relaxed and comfortable setting overlooking the fairway of the south course or al fresco under the stars.

    My son and I went for Mother's Day and at the end of the meal, the head host gave me a small polished stone that said:I (heart) Mom. What a wonderful touch to end a great brunch. The crab legs and shrimp were some of the best I've eaten. The buffet was extensive with every kind of food imaginable and they had a mini-buffet for children. The Boulder's without food is a feast for the eyes, and the room was a perfect southwest setting for brunch. You looked onto the large boulders from our table.

    superb dining experience among the Boulders. The mating calls of amorous bullfrogs added something to the ambience of outdoor dining but they weren't overly intrusive, just an odd note to an otherwise perfect evening.

    While the menu is limited, the selections we had were prepared very well and were delicious. I had the Scottish salmon which was moist and flaky just as it should be. They accomodated a change in vegetables to suit my taste with no problem. All 4 people in my group were really satisfied with their meals. The service was attentive without being obtrusive. Window tables are available if you ask when making reservations. Outside dining overlooking the golf course is also available. A nice experience.

    After sampling a few dishes I was quite surprised; though the presentation was excellent they didn't taste very good. I got an even bigger surprise when I got the bill ... I have had far better for much less, in fact I have never paid so much for such a big disappointment. Other resorts I have visited in the area have had a much better selection of dishes with superior taste. I cannot emphasize how disappointed my wife and I were after spending $250.

    First, ask for Stephanie. She's the best server there. They have a strange kind of serving rule where the server works "front" sometimes and "back" sometimes in tandem with another server - so sometimes Stephanie is really more bussing than serving. She used to be at Mosaic and is the best. Second, since Mosaic closed, I've struggled to find a place with elegant food and no fussy gamesmanship - hard to do. So far, this is the closest (and it helps to have Stephanie tell you what to have). They do a prix fixe meal which can be very good or can be so-so. The most reliable meal is the least exciting, the steaks. But I had some very good game there too. The room is elegant and southwestern at the same time. Worth a visit.
