A word from SALT - Boulder
The philosophy at SALT is simple; a belief that the best food travels the shortest distance from farm to table, that menus should change with the seasons and that the locally sourced ingredients, combined with European technique and innovative thinking make for a truly remarkable experience. Chef Bradford Heap and his staff have made a commitment to source local, organic and fresh ingredients whenever possible. The menu reflects this mind-set, simple, yet elegant and delicious. The wines, while sourced all over the world offer our guests some classic profiles, while introducing them to some new and exciting choices as well as a pre-prohibition cocktails with a twist. Approachable, but sophisticated. Enjoy!

  • Absolutely terrific! Unique

Absolutely terrific! Unique in their approaches to ingredients and flavor combinations, while honoring the bounty and seasonality of selected local food producers. Our dinner, just a few days before Thanksgiving, creatively set the stage for a slightly nontraditional palate at a time when we knew we'd have the contrast of traditional just a day or two away. Gotta love those unexpected offerings on this menu. We'll definitely be back.

We have eated at Salt a number of times since they opened and we find the food consistently good and diverse in flavors and content. The staff is friendly and seeks to accommodate all kinds of diners. The atmosphere is of a local pub with excellent noise reduction. Everyone can find something they think they will like and will love when served. Good place!!!!

Great job. We went on Halloween night (Pearl St is extremely busy that night...). We had a larger party than reserved and they took great care of us.

The food was very good and we had a great table and were not rushed because all of our party did not arrive at once. The staff was excellent about getting us some appetizers and wine while we waited. Have eaten there several times, eventhough the place is quite new. A reservation is a must and if you have a party of less than 5, you can't use Open Table to make a reservation. Will return there again.

We had lunch and our group was 5 people. They had our booth waiting and it was just next to the brick over so we could see the cooking in action. Great service and even better food. I think Salt will do well on Pearl Street.

  • We had a group of 5 for dinner

We had a group of 5 for dinner on a Friday night and this was our experience. The mixed drinks were not good. My husband received a hamburger that was not warm. The pear salad did not have fresh greens. The food overall was ok, nothing special. My husband and I had eaten lunch here earlier in the week and did have a good experience. They need to work on dinner.

The drinks are fancy and delicious, the server was trendy and friendly, seemed like a cool place to be! love the decor/feel of the inside. Who knew a simple pasta dish with vegetables could taste so good/flavorful? Some entrees are a bit pricey because this is a nicer establishment, but they give you good sized portions!

I took a group of co-workers to Salt for dinner. Even though we weren't all food-oriented people, we all were very positively impressed by how good everything was. Excellent food, excellent beer and wine selections, and friendly knowledgeable staff. Look for them to get even better as they get settled in.

  • Granted it's a newly opened
    OpenTable Diner Since 2006

Granted it's a newly opened restaurant, so I'll cut them some slack, but I'd give the food a B+/A- (that's quite high/good in my discerning point of view) and the service a C+, which was sluggish at just about every step of the way, especially given the fact that it was late at night with few tables; in that sense, I would be quite concerned about the speed of service during their busy hours. That being said, the waiter was super friendly and highly knowledgeable. I'd go back, expecting that a few months from now they'd work out some of their kinks.

We loved the beef shoulder and the hamburger dishes - very inventive and tasty combinations! The energy of this new place was great and the staff was clearly excited and proud. We would change two small things; the table arrangements (so there isn't just one main thoroughfare), and adding old-fashioned salt spoons for the communal salt dishes at each table...

  • I realize every restaurant
    OpenTable Diner Since 2009
    Dined on 9/7/2009
I realize every restaurant goes through growing pains and this was the first week open , however the service was extremely slow, and our waitress was inatentive and unfriendly. My wife ordered the Halibut which I thought was quite good. I ordered the 1/2 chicken entree, I did not think it was very tasty rather bland and way too salty. When another of the wait staff cleaned our table, he asked how the food was, when I gave him my reply (the chicken above) he gave me a blank stare and nothing more. I gathered he really did'nt care about my opinion of the food. The other problem is if your seated in the main space along the aisle there is non stop traffic commng by you, gets a little irratating.
