The concept of the “hotel as a home” extends to the restaurant as its casual family kitchen. Inspired by the casual, simple elegance of modern dining, Jean-Georges has created menus that emphasize fresh, locally produced ingredients, served in a sleek and sophisticated setting.


A destination restaurant with four distinct experiences: an intimate second dining room featuring a fireplace, a heated outdoor seasonal Terrace with city views, an enticing Bar and a sophisticated Dining Room. The full menu is available in all areas of the restaurant.

The Outdoor ( Seasonal ) Terrace and Bar are on a first come first served basis.

    I always order the same thing when I dine at the Market. The rice cracker crusted Ahi- Tuna is divine and the beet salad superb! We shared two desserts amongst four of us. The chocolate cake mousse was exceptional, but he banana dessert only okay. This is a great bet for good food and lovely setting.

    The Restaurant is nice, we were 45min early for a reservation that we did not need. They sat us right away to a small table in the corner, very tight. The gentleman saw I wasn't pleased but we did not want to make a fuss. We should have as our waitress was annoying and over-bearing. Food was good, good portions but the amount of wine they give in a glass is a couple of shots, more like a tasting. Overall nothing special, there are so many other restaurants in Vancouver that blow them away.

    The food was absolutely fantastic! Would highly recommend the French toast - everything else we ate was well prepared and very tasty. The service was exceptional as well.

    I had the Butternut Squash soup with Wild Mushrooms and the Steamed Shrimp Salad.The soup was very rich and subsequently delicious and the salad was the best that I have ever had. A wilted salad with warm dressing bursting with Umami, I didn't feel at all deprived or sad that I hadn't gone for the Fontina and Black Truffle Pizza. Service was a slow but we were eating outside of the normal business lunch rhythm of the room and likely got caught in a table turn wave. The room is unremarkable, but the food makes up for everything. Market is also one of the few restaurants in Vancouver that serves properly brewed, unsweetened iced tea. The coffee was also very, very good. All in all a terrific lunch. I will be back.

    You can take your time but they can have this 3 courses to you in 50 min. Very nice way to sample the menu with portions size sufficient but not too large.

    I was in Vancouver on business and chose Market because it was close to the hotel I was staying at (Sutton Place Hotel). I was very apprehensive at first because I was casually dressed (it was a rainy night) and the place appeared to be very "fancy." I was pleasantly surprised to be so warmly welcomed by the host and hostess. The wait staff were very friendly and helpful in choosing a pre-dinner cocktail. As for the main course, I had the short ribs and they practically melted in my mouth! For dessert I had hoped for the panna cotta that was on the website menu; however, since it was not available I instead chose the cheesecake. The sour cream sorbet was a great compliment to the plate. I will return when back in Vancouver.

    Two of my best friends & I have been meeting for lunch twice a year for over 40 years. We have been to many restaurants but Market remains our favorite because of the great service, food & ambience. We relax over great food as we catch up with each other's lives and enjoy each other's company. One of the ladies does not eat meat and Market always has a great selection of fish. The staff is so kind and let us take our time as we as our our dessert & coffee.

    The tuna tartare appetizer and tuna nicoise salad were both excellent. Lunch is reasonably priced and a nice way to get into a highly rated restaurant without spending a fortune. I was a bit disappointed that when we chose "still" water that it was apparently bottled water rather than tap water and there was a $6 charge for it.

    Very disappointed that we were seated at a table that the chairs are back to back to ours. There was no room to move and no privacy at all. You can hear the next table's conversation well. I sure would not consider the restaurant for fine dining and do not intend to go back again!

    I was very excited to try Market. Service was very good and it's a lovely restaurant but the food was very underwhelming. For the price I expected to be blown away and instead thought it was pretty good but nothing to write home about. Save yourself the hundred bucks for the name Jean Georges and get a similar meal for half the price somewhere else.

    With all the options out there in this lovely city do not overlook trying Market. It's upscale ambiance, fine dining and outstanding service reminded me of my dining experiences with my girlfriends in Montreal. I went during dine out Vancouver which allowed me to sample the fine cuisine at a moderate price. My starter of shrimp was delectable. My main of slow cooked steelhead was cooked and seasoned to perfection and the panna cotta with poached pears and pear sorbet was delightful and refreshing. I will definitely be going back.

    The food was very well done even for it being a Dine Out Vancouver. It was the best one out that I went to because of the quality and thought in the menu. One downfall is that there was a draft coming from one of the private dining rooms and from the window area that made it a bit uncomfortable and we weren't able to take our blazers off. The other was just that the server forgot that we ordered hot beverages with our dessert and when reminded you could tell that he forgot what the order was and that he guessed at our order and gave my friend the wrong tea. Otherwise great experience overall and the food was great.

    We had a group of 9 and were pleasantly surprised when we were given a private room. It was fabulous. We were out for the Dine Out experience, and Market delivered. The service was impeccable. The staff were friendly and helpful especially with a 4 year old energetic kid. The food was amazing and the ambience was perfect for an intimate gathering of friends. The noise level was minimal due to the private room, but it wasn't that loud in the main dining area. I will definitely go back to experience the regular menu.

    We'd decided to try out Market's three-course menu as part of Dine Out Vancouver. Even with our high expectations, we were pleasantly amazed by the richness and flavour of each item that was brought to our table. It was clear that the ingredients were carefully selected and the dishes expertly prepared. We are already planning on a date to come back. Absolutely delicious!

    Our small group visited 3 excellent restaurants for the Dine Out Vancouver program this year. Market by Jean -Georges was the best. The food was delicious, the service excellent and the entire experience was outstanding. I would recommend this restaurant to anyone, Can't wait to go again.

    This was a very poor experience. The bread brought to the table that was stale, beets that were mostly raw in the beet salad, risotto that was still crunchy (and no, not al dente). It was very disappointing as we were vising Vancouver during Dine Out week and this was to be the one 'expensive' place we treated ourselves to for a romantic dinner. Turned out the cheap Indian the next night was a far better meal both in taste and value.

    Tables are too close to each other leaving not enough room for the servers to move around. My head was hit many times when the servers walked through behind me. There is not enough servers in the room and the quality of the service is not up to expectation in this type of restaurant. The quality of the food is only at an acceptable level.

    What a fantastic surprise. We live in the US and have dined 3 other Jean George restaurants and have always found the experience superb. We were happily surprised to find out that the service in the Vancouver restaurant is as outstanding as the service at the other restaurants in New York. The food was delicious, it came on time and was well matched with the suggested wines. We enjoyed the tasting menu which is a must. We had the scallops for an appetizer and they were tender, sweet and delicious. Then we had the mouth watering steel head trout. And the decadent chocolate for dessert. What a fabulous dinner. Our server Bryson was terrific. Oh yes, don't forget to try the ginger margarita which was out of this world.

    We were all very impressed with the food, ambiance and service. It was a very relaxed setting. Two of the party oohed and ahhed over the braised pork cheek - the flavour was outstanding. We particularly liked the shrimp appetizer with the wonderful butternut squash, ginger & basil. Of course there were no end of compliments with respect to the dessert, we only wished we could have ordered all 3 choices. Job well done, we will definitely try this restaurant for our next get-together.

    I went to your restaurant for dine out and had a great time and the food was great. it was my birthday and my boyfriend who took me there I had not seen for two weeks. the only problem was that the two person tables were so close we could not have any real conversation. I felt I had to introduce myself to the other people next to me as they were so close. I wanted to eat and get out so infact I would have some time to have a conversation with my boyfriend. it was great but way to close to the table next to me

    all the dishes are great, just a little too salty. the dessert, warm chocolate cake with vanilla ice cream is a must eat! very good and it's nicely done! i like how the bread is served hot at the beginning. excellent service from our server this evening. just a little comment about the reservation confirmation i made a few days ago, the lady who's confirming my table needs some improvement in her attitude, she is not friendly as well. i was asking her politely to add one more seat as my friend is bringing his girlfriend along, the lady told me it's really hard to do that as they are fully booked and it's a 2 hours booking because of the Dine Out event, she said she cannot pull a chair off from other table! i feel like she's lecturing me!

    Put it this way: if Jean-Georges Vongerichten showed up for a meal at his own restaurant, he'd leave feeling ... dissatisfied. The food was good: executation solid, plating well done. Service was attentive and prompt. But expectations were high too: a meal at the restaurant of one of the world's celebrated chefs is expected to be transcendental. You expect to lose yourself to the moment. This was not that. It was a good solid meal, worthy of a top-hotel restaurant. Had the name of the restaurant been "Market", I'd have left satisfied. But as it is "Market By Jean-Georges" I held it to a higher standard.

    Our New Year's Eve dinner was exceptional. While there was some reluctance to allow us to order food off the menu (we had called earlier to ensure this was possible), we were amazed with the quality. The scallops were exquisite; beet salad absolutely superb; the mushrooms, with a bit of a jalapeno bite, wonderful; and the frites perfect - very tasty! Of course the chocolate mousse cake and peanut butter chocolate desserts were to die for! No one at our table was interested in eating the seven or even four course dinner, as we all have our favourite dishes, so we went away absolutely thrilled with our New Year's Eve experience. As the evening progressed, our waiter relaxed, which contributed to an even nicer experience.

    This was the first time for us to visit this restaurant. We ordered like Prix Fixe, 4 courses for $88/p. That was well composed for ladies but for men it may not be enough amount. We Japanese are hard to please with the quality and taste of beef, but I'm sure that beef was exactly a best one which I've ever had in Vancouver.

    Made reservation but had to wait much longer. Appetizer came before amuse bouche. Servers were running around and kept trying to take short cuts by climbing between tables and knocking into my chair. Even when there was no room, one waiter still made the attempt and straddled my chair. Food tasted mediocre at best. Scratch that, it was disappointing. Some guests were asked if they wanted more bread. Our table did not get the same service. One waitress tried to serve two truffles pieces as the dessert when it should've been a cheesecake. Strange because she set down one cheesecake for me but didn't clue in my guest ordered the same. Kept reaching over me and did not serve lady's first. Poor etiquette.

    We had previously been there before and there was a full menu and it had been delicious so we decided to have our elopement wedding dinner there on Dec 24th. WHAT A DISAPPOINTMENT!!! They had a limited menu and the food was mediocre at best. I had put in our reservations that it was our wedding dinner and they were going to plunk us in the middle of a huge group of seated people in bench seating. I was in my wedding dress and I had put in our reservations that it was a special night, I thought it would be obvious that we would want a romantic table?!?! We had to be asked to be seated in a quieter more private part of the restaurant. BOO to Market staff for not being thoughtful at all. It isn't going to be our romantic go-to place anymore.

    We chose Market as a special experience for our anniversary. Greeted upon arrival and given our choice of seats as we were on the early evening side. The Waiter came promptly with the menus/wine list and left us. Bread and water came quickly and the breads are terrific. Service is attentive and not in your face. We had the scallops for an Hors d'oeuvre and they were fantastic. For the mains we had the lamb and the sable fish. Both were great but my wife preferred the chops. There was a selection of and we had the specialty's, cheesecake and lava cake. Both great way to finish off the meal. It was a very enjoyable evening, you don't think about price, it is what it is which is definitely not cheap. Highly recommend.
