A word from The Conservatory at Greystone
Led by Culinary Director and famed American chef Larry Forgione, “The Conservatory” will “crop-up” at CIA Greystone featuring a multi-course set menu both created and served by the students. Over the course of the semester these students taste and cook their way through CIA Greystone-Krug farm and kitchens. Friday and Saturday of each week this student led farm-to-table restaurant with emphasis on freshness, seasonality, local availability and simple preparations will be featured at the Williams Center for Flavor Discovery.
CIA’s Farm-to-Table Cooking in America is a conservatory-style educational model for students who want to be part of a community working to create healthy, sustainable and delicious food systems.

    I had lunch at the CIA many years ago and I remember being knocked over by the wonderful food. We were looking for a place this year to celebrate a birthday and we thought about going back to the CIA. It wasn't until I went online that I realized that there are two restaurants at the CIA, the Wine Spectator Restaurant and The Conservatory. Since I couldn't remember which I visited those many years ago, we chose The Conservatory since it sounded more special. Well, the short of the story is that we chose incorrectly. It's not to say that the Conservatory was bad, it just didn't live up to my memory of a fantastic dining experience and even though the food was good it didn't wow us.

    We enjoyed our dinner for six immensely!!! We will recommend to all of our friends that visit Napa Valley. One of our dinneers is an international traveler, and food and wine expert.     This is the farm-to-table concept restaurant of the CIA at Greystone. The entire dining experience is managed by students - front and back - and was professional and tasty! The prix fix menu offered variety and was great with wine paring. Best octopus I have ever had! Went for a birthday, and this made it really special!

    A great place to have a nice and quiet sit down dinner. It is a pre-fixed meal, so you won't have to think about much. The food is well presented and you can tell they went out of their way to do so. Portions are just right and you sample many dishes. It is a great experience. The only drawback I can say was when the check came out, there is a service charge added to the bill. it was like $24 for two. The staff told me opentable should have notified me about this charge, but I guess I didn't see it and that was the only surprise. Otherwise a highly recommended place to dine.

    My wife and I were in Napa for our 10th Anniversary and I was looking for a special place for our anniversary dinner. I tried making reservations for both the French Laundry and at The Conservatory about two months in advance. After trying (and failing) to get into the French Laundry I was happy that I had booked The Conservatory as a backup. In fact, our experience and food there were so wonderful I was happy that we ended up there instead. The Conservatory offers a prix fixe menu with about 5 - 7 courses (You can also order different wine flights with each course for extra $$$ per person). Each one was more delicious than the next. I highly recommend dining here before everyone finds out how wonderful it is!

    Excellent addition to the CIA. Really enjoyed the expereience. The food was very good but you must enjoy there selections for the evening. Truly enjoyed the wine pairings. Wonderful evening.

    Anniversary dinner with my wife. Chose the prix-fixe menu with wine pairing. All wait staff were very attentive and our waiter in particular was very willing to answer questions about the institute and to explain the wines served, as well as, the individual courses. Made the whole dinner an experience. That being said, the food exceeded the experience. And the pairing of the wine was spot on. I was impressed with all six courses, especially the oysters and the short ribs. I would highly recommend dinner at the Conservatory to anyone.

    What a pleasant surprise when I ran across the Conservatory on OpenTable. It is a relatively new program and new concept that is true farm to table where they take it even one step further and they even plant and farm many of the vegetables and herbs used in the dishes. Anything not from their own farms is from local farms and meats and fishes from local purveyors. Overall: I absolutely love the farm to table concept and this program and would do it again in a heartbeat especially since the varying menu will offer a completely different experience each time.

    This was one of the most memorable meals I've ever had. Food, service, presentation, wine pairings were all impeccable. Seven course prefix meal with wine pairings was a bargain based on what you got for your Napa dollar. Thomas Keller should be looking over his shoulder...this place knows food and wine! Thank you for such a memorable evening!

    I think this is a restaurant that offers a unique experience. However, for the price, one can easily find better and more professional cooking elsewhere in the Napa Valley. My appetitizer dish (lamb) and main course (beef loin) are too salty. Otherwise the favor is good.

    The experience was wonderful ! We found it by accident while looking at the menu at Greystone.The service was great - the pre fix dinner was above our expectation. One of the dishes we had was Colorado lamb chops what was the best lamb we have had in a long time.

    Great meal in the nice smaller setting of the Conservatory. Not as large or hectic as the Greystone, and clearly a student-run enterprise but really well done. Multiple small courses, which apparently change with availability of fresh ingredients. Pacing is leisurely, which I found perfect for a night in Napa. Limited (compared to the main restaurant) but well chosen and moderately/fairly priced wine list with wine-by-the-glass available. A wine flight paired with the courses was an additional $40. The tomato salad and the single scallop courses were truly excellent. Would definitely do this again, it was a better dining experience than our following two evening's dinners in more traditional (and expensive) restaurants.

    We really enjoyed our dinner here. Highlights are the room and the students who have also grown and prepared the food. We had substantive conversations with six or seven of them. A prix fixe single menu presents risks and things will vary from day to day. Overall execution of our food was excellent, though when we asked for halibut to be cooked through and not seared it was a bit overdone (common problem) and duck was on the rare side and not our favorite. All of the vegetables, sauces, etc. were fresh, grown on the property and well prepared. I would not characterize the dishes as "simple" but they were not overdone. We had the wine pairing ($40 p/p) which we highly recommend.

    We had a wonderful time at the Conservatory. The food was excellent and extremely fresh. Because the menu is planned based on the vegetables that are harvested from the garden across the street, this was one of the best farm to table experiences we've had at a restaurant. The students who prepared and served the food did a marvelous job. We had a great time talking with them, and they were very articulate about the dinner, and their conservatory experience. We brought our own wine (2007 Macauley and Realm To Kalon). This worked out well as it was an opportunity to share some wine with the students and talk to them about where it was grown and the history of To Kalon. I'd much rather go here than the French Laundry. Bravo Chef Forgione.

    I had high expectations going to CIA because I previously enjoyed going to Greystone Restaurant. The food at the Conservatory was okay...the Mahi Mahi was a bit salty and the carrot cake donut was quite hard/stiff. I expected the portion for each course to be small and they were indeed very small. If I weren't so full before dinner, I might still be hungry after finishing dinner at the Conservatory. I can tell all the students were working very hard and I commend them for that. But perhaps they'll do even better if they relax a bit and not be so tense. Overall, it was a good dinner, esp. to try it out for the first time. But I might prefer Greystone...

    A great experience. The menu changes day to day. 8 small courses in our case, appetizers, salads, entree's and deserts. A couple of amazing drink choices, the liquid Nitrogen Spanish style Gin & Tonic was amazing. Being it's in Napa CA, the wines are exceptional too. An amazing range of tastes and textures. Yr 3 and Yr 4 students from CIA Hyde Park prepared the dinner and served us. The kitchen is behind a big picture window, so you can watch the operation if you care. The restaurant a lovely high ceiling-ed building with maybe 20 tables in the room. I think we had 4 people serving us, very attentively. We'd go again in a heartbeat.

    What a pleasant surprise. Although staffed entirely by 4th year CIA students, the kitchen is "run" by Chef Larry Forgione, perhaps the originator of the Farm to Table renaissance in the US. The Conservatory is only open Friday and Saturday and is located in the small but attractive Williams Center at Greystone. The menu, although pre-fixe, varies with the availability of local produce and center of plate items. The wine list is limited but it offers excellent choices and values! Seeing the enthusiasm of the student staff alone is worth a visit!

    First off, we didn't know to go to a special area for this dinner nor did the front desk at the Greystone Restaurant so we ended up in the regular dining room....... front desk should have asked more questions of us and directed us accordingly. Second---we brought our own bottle of pinot noir wine and asked for pinot glasses......none to be found in a restaurant co-sponsored by the Wine Spectator....hummmmmmmm. Doesn't speak well for either entity. Wine list at restaurant not very extensive or impressive especially considering location in Napa Valley and Wine Spectator affiliation. We have had several good meals here before but will probably just drive on by from now on......
