A word from Restaurant 213
The food at Restaurant 213 is far from your conventional Chesapeake Bay fare. A former apprentice of Roger Vergé in southern France, chef Jim Hughes prepares unpretentious, globally influenced cuisine inspired by the area’s plentiful ingredients. Chef Hughes has catered many events for Ronald Reagan, while he was President of the United States. He also served as Chef for the King of Saudi Arabia at the Saudi Arabian Royal National Guard military academy. Chef Hughes has been honored by the James Beard foundation and DiRoNA (Distinguished Restaurants of North America). Restaurant 213 has been voted "Best Gourmet Dining," "Best Special Occasion," restaurant and "Best Chef on the Eastern Shore" by Metropolitan Magazine. Frommer's Travel Guide has Awarded Restaurant 213 its highest Rating of 3 Stars, making it one of only 3 restaurants on the Eastern Shore. Additionally, "Special Finds" awarded this distinction from 2010-2014 in their Maryland & Delaware Travel Guide Edition.

The food was more deserving of better ambiance and better service. We did enjoy the food, well prepared and presented. It was reasonable priced. The wine selections were fine (not spectacular). The ambiance was our biggest critique of the night - the restaurant is a small local establishment on the highway. The table setting was nicely done (white and crisp) the pictures (lots of them) around the perimeter suited the mood. The restaurant did not spend any money on the chairs - each table was the same with 'banquet sytle' metal chairs with a Naugahyde seat - this took away from the ambiance and was a major part of our 1st impression.

A small, intimate restaurant that evokes an upscale country French bistro but with Southern hospitality. This is the type of place you would expect to find in a major metro area, not in the semi-rural eastern shore of Maryland. The escargot were prepared in the classic French style with lots of butter and garlic - superb. The Chesapeake rock fish topped with lump blue crab and sun dried tomatoes finished with a tarragon buerre blanc sauce was sublime. I will be back.

we drove from Easton, not to bad of a drive, only about 45 min. I must say in Easton we have many wonderful restaurants in Easton 213 in the best or all the rest. The chef has worked all over the world and he shows it in his culinary skills, to many fine dishes to mention so make your next evening at 213, be sure to thy the Kobe Steak.

In Salisbury ???. This was an amazing find. Each dish {appetizers, entrees, desserts, and two palate cleansers offered up by chef Jim Hughes} was outstanding. The garden is on the side of the building, so the tomatoes in the insalata Caprese and the vegetables in the soup were straight from the garden. The chefs signature oysters were especially memorable. So how does a world class chef resume open a restaurant in Salisbury? If you Find a quiet evening, ask him Bon Appetite

You can never go wrong at Jim Hughes' Restaurant 213, the perfect place for that special occasion. From the Tuna timbale appetizer to the pork shank entrée served over a bed of the creamiest risotto I ever had, everything was perfect. The meal was topped off by a banana beignet to die for. For that special occasion, this 5-star restaurant is the place to go.

  • One Of Those Great Meals To Die For
    OpenTable Diner Since 2014
    Dined on 8/30/2014
There are a few times in life when a meal is so expertly crafted and planned that it is nothing short of genius. Last night was one of those meals the pan seared scallops. The dish was excellently prepared. Pan Seared fresh with out a hint of fishiness. A hint of white truffle oil, which brought a hint of sweetness. The scallops was placed on a mound of lobster Risotto. The combination of the scallops and the rice alone was to die for.

There were 2 people working the host and a waitress. There were 3 other patrons so not busy. However, after the host sat us and rambled off the specials in a poor manner he doted on the table next to us the rest of the night and passed us off to the waitress. My husband had ordered a coke from the host who never got it for us and then ordered it again from the waitress and then I had to ask for it a 3rd time. I was quite disappointed in my salad and I had to replace my meal altogether for the main course. I ordered the veal chop and it was tough and chewy and I couldn't make it through the first bite. Once I got my 2nd meal it was good and the dessert was good but the overall evening, I had high hopes for and was quite disappointed.

My first experience at Restaurant 213 tonight, and the best description is a hole-in-one! Being a golf professional in Baltimore, I know a good meal when I see it. In town only for a short stay, but the chef and staff at 213 were kind enough to let my twosome arrive shortly before closing and enjoy a "once in a lifetime meal." No bogeys in Fruitland at this quaint restaurant just south of Salisbury. The chef knows truly how to stay out of bunkers and rough when it comes to his culinary prowess. My experience was far below par, in the best kind of way, no pun intended. We started off with a true mulligan, the complimentary sipping soup, then moved to what I can only describe as an eagle, the tuna tower feature! Kobe steak to boot! ACE!!
