Truly creative and delicious
We have continued to eat at Vellum despite some early concerns of consistency and have found that it is truly an exceptional and excellent restaurant. We believe Peter Roumanis is the most talented and dedicated chef in this area. His regular tasting menu and recent special event tastings like the Olive oil and Umami dinners are absolutely delicious and inventive. We will not see these dishes anywhere else. We feel very fortunate that Vellum is in Ann Abor now.

The service and overall experience at this restaurant was exceptional. Not only did the service staff go above (wine tastings on the house, etc.) and beyond but the restaurant owner was overseeing operations and stopping by the tables giving recommendations and asking for feedback. The appetizers and side dishes were very creative and some of my favorite dishes of the meal. I'm not a steak tartare fan but the owner recommended it and it was really outstanding. The main courses were good as well but not as good as the appetizers/side dishes. The desserts were also very creative - the chocolate/caramel dessert was great and our favorite. I will go back as often as I can and will recommend to all of my friends. An overall great experience!

Very "Ann Arbor"
Great atmosphere, great wait staff. Our server was a little soft spoken and hard to hear as we sat outside on a busy Main Street night but he was incredibly friendly and helpful! The food was awesome and everything turned out great! Loved vellum and can't wait to go back!

Great addition to A2 food scene
Loved the creativity of the meal and attentiveness of wait staff. Very well informed and helped me navigate a gluten free meal. Everything was delicious especially the hamachi appetizer and fried beets! Will definitely go back soon.

Great Friday night out
Food was delicious, wine was good (had the happy hour selection), and the service was very attentive. Almost to the point of too much, but we took it as a positive, it was well-intended.

Should do well...but
they need to make sure they keep up the service (which was very good and attentive) and also cook the risotto better. We ordered the Mushroom Risotto and it was pretty el dente. We actually let it sit for awhile since it was very hot when they brought it to the table. After about 5 minutes, we dived it. It was a little bit better but for the price of $16, it should have been perfect. We also had the spinach artichoke dip on a recommendation. It was unique and heavy on the spinach side but nothing that I would probably order again. My wife had the chicken which was excellent and I had the SeaBass. I thought the Seabass was very good but my tasted it and like her chicken better. The portions for the Sea Bass was fairly light as well.

Third time is the charm!
This was our third visit to Vellum. The first two experiences were very good, but this third visit was perfect. The food was exciting, perfectly prepared and exceeded our expectations. The service was flawless.

Fantastic food - beautifully served
My family and I went to Vellum to celebrate my mother's birthday recently, and I had asked the restaurant to put in a candle on her birthday dessert in a private message. The servers at Vellum went above and beyond and greeted our table with a champagne toast! The mini amuse-bouches served between appetizers and our meal were beautiful, and we really enjoyed the interesting mix of flavors presented.

Amazing, Interesting Food
Perfect place to dine if you want something out of the ordinary. The food is outstanding and incredibly interesting. There are so many dishes I wanted to try. I ordered the salmon with barley in a chorizo sauce. I'm still thinking about it! We had a party of four and all of us loved our meals. Service was excellent. This is my third visit to Vellum-- I love to see what Chef Peter is up to.

We eat in Ann Arbor often
We eat in Ann Arbor often and this was our first experience at Vellum. My wife and I ordered the five course with wine pairings. The presentations were excellent and the portions just right. Wine pairings worked well also with each course having unique flavors. Service was exceptional. Will definitely go again.

Vellum was a wonderful dining experience from start to finish. The chef's creations were creative and perfectly done, and the service was welcoming and attentive. The decor and lighting create a very inviting and calming atmosphere. This was our second time dining at Vellum, (the first was for lunch during the Art Fair) and we would highly recommend it as the perfect place to unwind and enjoy the company of others over a great meal with a lovely glass of wine.

For our first time here, the service was very attentive although a little slow as they were busy at 9:30pm on a Friday night. Our server was very accommodating while I was trying to choose a wine and brought out several selections to try. We were celebrating an anniversary and they brought out a bit of champagne which was nice. The fried beets were definitely good. My boyfriend doesn't even like beets and he ate more than I did! The crab salad was yummy. I had the sea bass which was cooked really well and the brandade it came with was very tasty. The portion was a bit small but I guess other places usually charge more anyway for a similar size. My boyfriend had the short rib pasta and he licked it clean. Overall it was good night!

Awesome experience, again!
Our party of 4 on Friday night prior to the Mich/ND game was fantastic. The restaurant was hopping busy yet the pace of service was great. We had the 7 course tasting menu with wine pairing. Each course was excellent. The wine paring is a must do. They know what they are doing. If you have doubts, don't, just do it. You won't be disappointed. No other restaurant in Ann Arbor is doing what Vellum accomplishes -- every night. They are passionate about the total experience. We will be back -- many times.

Ann Arbor's Best
Vellum is Ann Arbor's best new restaurant. Food is creative and delicious along with a nice variety of selections. Service impeccable. Wine list is the best in town and also presents moderately priced wines to very special more expensive wines .
Peter and Caroline have created a gem and trained a very professional staff.

Creative preparations,great evening
Read an online review before making reservations and it was spot on. Duck confit salad excellent, oysters--fresh and perfect, short rib ravioli, lamb and caramel and chocolate three ways...wow. Don't miss Vellum, you will enjoy it to the hilt.

One of a kind!
Excellent all around. I love trying new and different things when I eat out. Vellum is one of the few restaurants offering this opportunity in Ann Arbor. And It's not just unique...I find myself thinking about the wonderful flavors for weeks after a meal there...Madeline & Tea oh my!

Delicious and beautiful food
We had a great dinner for 4 at Vellum on Saturday night. The mushroom tart was unusual, artistically plated and delish. The shrimp and grits was also very good. The grits were milder/creamier than I've had before. We all got a different entree, walleye, meditterean sea bass, a strip steak-huge and great, and pork tenderloin. We all enjoyed our choices, but the steak and sea bass were probably the best, the pork was a very small portion, though very tasty. It came with a piece of pork belly that was fatty, so he did not eat that part. We loved our meals, the wine, and the desserts- they were spectacular. We all can't wait to go again.

Food Plus - Seating Minus
Food and service were very good. The menu choices eclectic but delicious. Main floor seating heavily favors larger parties than my party of two. All the two tops were grouped in a small area on the path between the bar and the kitchen. Not much ambiance if you're a twosome seeking a romantic dinner. Overall energetic bistro vibe with capable wait staff for Ann Arbor.

Had dinner on the second level
Had dinner on the second level near the balcony overlooking the first floor. It was a nice quieter spot for our second trip back. We had the duck confit salad, game terrine, and new york strip steak with bone marrow crust that came with mac and cheese. All were delish! Our cocktails were yummy too. We had the macaron sandwiches for dessert that were tasty. The complementary caramel bites and digestif were nice touches. Our server was really nice and attentive. We'll be back!

From the moment we began our evening, it became apparent that the smiling staff at Vellum truly wanted us to enjoy our evening with them, and everything followed from there. The wait staff assumes more of a host role, as they guide you through their menu, checking in with with us at appropriate times to make sure we were completely happy. We were. Our party of six probably tried half the items on the menu, including the fried beets, mushroom tart, seranno ham (with a non-traditional red eye gravy), short rib pansoti, agnolotti, scallops, NY strip with bone marrow crust and the peeky toe crab salad. All was delicious (though the beef tartare was a bit vinegary), including our wine selections, which were terrific. Highly recommended.

Highly recommended for a night out!
A friend and I went to Vellum on a Thursday night for dinner and drinks and we were happily surprised with out experience! The service was wonderful. Every employee was attentive without being intrusive on the evening experience. Our water glasses and drink glasses were never empty and the finished plates were never on the table for more than two minutes. Excellent service! The food was good too. We had three courses that were all very tasty. Sizable food presented in a deconstructed and artistic manner for the smaller dishes and hearty well presented portions for the main course. To say they have an extensive wine list and bar service is an understatement. The wine selection is a book and the bar takes up an entire wall! Great place!

Good food, not packed on a Friday
Happy hour had some great deals - $3 select draft beer, $5 cocktails (~50% off the drinks) plus some snacks like cod fritters, fried beets, serrano ham and pork belly skewers - all were good and under $5 for happy hour. They have a cute lounge spot by the front windows where you can sit for happy hour and then we just stayed there for food. The vellum burger was excellent - you could tell it was freshly made and had bacon jam and egg. The pasta agnolotti was good but it was extremely lemony which made it seem sweet. It would almost be better as a desert. Overall everything was pretty good - we had a newer server but he was very nice and all the staff were extremely friendly and pleasant. They were also not packed on a Friday night.

First time visit
We were interested in trying some different takes on familiar dishes and really enjoyed the experience. The staff was very attentive and personable. We tried the cheese plate with their herb bread-definitely a different texture, but fun. The past dishes were well done and very good, and the chocolate dessert was great. Will definitely try it again.

Overall good time
The food was quite good and interesting. If I want to be a bit critical, sometimes the flavors were a little disappointing, but this is also due to my personal preferences. Don't expect to leave the restaurant bloated or with a lot of leftovers. They serve what I would consider to be very reasonable portions, which I found to be a pleasant surprise. We even saved room for dessert. They served a little complimentary appetizer and complimentary caramel with smoked sea salt. These two items were actually so good, they left me wanting more. The atmosphere is nice. There is a good mixture of young people and older folks sharing bottles of wine so it is a pretty welcome and fun place for all ages.

a great place for a special event
We took our children there for their anniversary and were greeted promptly, escorted to our table and had a wonderful meal. I called ahead asking if they had anything for special occasions and they offered us champagne before we had ordered. It was a nice touch. We ordered risotto, and two different fish dishes which were very good. I had a ribeye steak which was so delicious. Meal was delicious although a little pricey.

Worthy of a starred review.
While the menu hints of a gifted chef in the kitchen, I was stunned by the depth and complexity of the flavors and textures of even simple sounding items like "beef tartar" and "pureed potatoes." Ann Arbor has rarely been the lucky beneficiary of this level of skill in rendering such flavors from any ingredient this kitchen magician touches. This was my first time at Vellum but it is now my first choice for superb dining. There is an extensive wine menu and the prices of the food are modest which is astonishing given the quality. The game terrine, again, was nothing as simple as the name suggests. Given what the chef does with such traditional dishes, I can't wait to have the roasted chicken.

Great for date night
We were impressed with the food, and also with the attentive and knowledgeable staff. The dining experience at Vellum is great, and the menu is well-suited to sharing and experimenting. Prices were also slightly below what I'd expected. If I had any particular problem, it was that the dishes were too rich, but that's just my taste.

fantastic birthday dinner!
I ate at Vellum for the first time with my Mom, Dad, and fiancé to celebrate my birthday. It must have been my Mom who told the staff it was my birthday; I got good wishes throughout the evening. Overall it was a wonderful experience. The food was superb, the staff were excellent, the presentations were striking, and we were able to converse easily without competing with music and a high noise level. I would definitely recommend this restaurant for any special occasion if you appreciate high quality food and new taste combinations. It's not a restaurant for a get-in-eat-get-out kind of meal; it's an experience to be savored. Go when you have plenty of time and are ready to enjoy a great dinner.

The staff people were very friendly and helpful, as this was a first time visit to this restaurant. I tried their salmon & barley dish which was deliciously done by their kitchen. It was a little pricey, but well worth it in the end. The wine list was extensive and aficionados might find it, alone, worth a visit.

Vellum has become our regular place for dinner, personal or business. Most interesting menu in the area and a super wine list. Why go any where else? Eat the butter. House made with grey sea salt from Brittany.

Hit the Jackpot
This restaurant is fairly new to the Ann Arbor Main Street scene and certainly welcome. There were 6 of us dining and we all had a fabulous meal. The wine list is extensive (bottle and glass) as was the list of cocktails. We will certainly return the next time we are in town to visit our daughter.

Great but Noisy
We had wonderful service and outstanding food, in our first visit to this beautiful restaurant. But it was almost impossible to have a quiet conversation. In order to hear each other, we had to raise our voices and lean in to one another. Lack of soundproofing with tall ceilings and a particular large table with boisterous diners shouting across the long table to one another all contributed to the noise level.

Not to be Missed
Where can you find a European eatery in a college town? Ann Arbor Michigan...We were looking for Walleye and found a small place with service and food to match any Paris cafe. The Walleye was gently sautéed and served with an interesting side of vegetables. If you go there, you might want to look at the wine list ahead of time - so extensive and many that you won't find on most lists. EXCELLENT.

Edgy, eclectic, and delicious
We enjoyed our dinner at Vellum. Despite it being a home football game evening, the food timing was well paced. The service was attentive and responsive.
We had the game terrine as an appetizer, and it was delicious. My herbs and greens salad was fresh and nicely, lightly dressed. My husband had the celeriac and apple soup, and it was awesome. My entre of lamb chops was perfect. My husband had the scallops in cheese pasta. It was very good, but a bit heavy.
The cocktails, recommended by the waiter were unique and delightful. We had a nice sangiovese red wine with dinner. The wine list is extensive, if pricey. But Vellum offers an extensive 'by the glass' selection, as well.
We will definitely go back.

Great food but poor service
Taste was fantastic. Service bad. Took over 10 min to get a wine list. Rarely checked on us so drinks stayed empty and we had to chase down the waitress 2 times.

Wait staff was very attentive and accommodating. Nice atmosphere. We were upstairs and close to the downstairs with open ceiling. Noise was loud but not annoying. Food was excellent but we left somewhat hungry.

First time at Vellum
Two friends and I went for a midweek happy hour. We had a wonderful seat in the front window and everything was great.

Good food and presentation
We had a great meal with attentive service. We didn't realize they had a second floor which required climbing a substantial amount of stairs. No elevator. One of our group could not climb stairs. They were very responsive and arranged for a table on the main floor. Tried the fried Brussels sprouts, they were great. The only issue we had was when they brought the check, there were two items we had not ordered totaling $28 on our check. When I pointed it out, they removed the charges. Glad I carefully went over the check.

Welcome to Ann Arbor
The dinner selections range from a rather pedestrian hamburger to more exotic Mediterranean Sea Bass done Aqua Pazza style. What's to like, plenty - the lamb chops and loin with grilled Brussels sprouts was generous as well as delicious. The Sea Bass was excellent (but comes with almost no accompanying veggies - one thin slice of braised fennel and a carrot shave were disappointing), The pasta dish and the hamburger plate were fine, but there a zillion other places in Ann Arbor that do it as well and some even better. The wine list is superb with plenty of good choices in all price ranges (though a wider selection of Italian wines would be nice). The tables downstairs near the bar are noisy and the espresso bitter - have coffee elsewhere.

Va Va Vellum!
We loved our first Vellum experience! The restaurant has a relaxed sophisticated vibe which we enjoyed. Our table server was friendly, knowledgeable and attentive - just great. The food was delicious. Presentation outstanding. We also appreciated the attention to local sourcing of ingredients (when possible). The hostess was a bit unwelcoming and cold for my taste but she was quickly forgotten once we were seated. Get some host training and this is a welcome addition to the Ann Arbor higher end restaurant scene.
