Only low note was the measuring of liquor at the bar, very 'cruise ship', and young bartenders more concerned with texting than service. The service in the dining room however was impeccable. Dani was well versed in the menu and wine list with just the right amount of attentiveness and conversation when necessary. The food was thoughtful with very interesting combinations of proteins and herbs and spices. All was prepared as it should be and we enjoyed the evening very much. We will come again at some point. They should take a barkeep note or two from Perry's and hire seasoned mixologists who care about their craft.

I took three of my five girls there for a special night out with mom over spring break, it was amazing!! My husband and I are foodies and have passed this on to our girls, all of us ate every bit!! Outstanding, cooked perfectly. We had the filet, scallops, and venison. Posted lots of pix to facebook recommending our find. You guys got it right!! Can't wait to come back with my hubby.
We had been to the bar with friends however this was our first time to the restaurant, the first of many!

Yes, Sustenio! No, Open Table!
Sustenio was amazing but it seems they've had problems with open table before as they required me to call back to confirm my reservation. I was not easily able to call back to confirm and was frustrated that I had to .... May not use open table again because of this.

Hands down the beef tenderloin
Hands down the beef tenderloin is the best we have ever ordered. Not even San Antonio's 5 star "steak houses" have come close to creating such a tender, melt-in-your mouth, delectable experience. So much so that we asked if we could speak with the chef to personally thank him. We have much respect for his talents and hats off to you all.
We will definitely be back!

THE SHRIMP AND SALMON CEVICHE WERE EXCELLANT, THE SCALLOP CEVICHE NOT AS FLAVORFUL. ENJOYED THE SEARED PRESSED DUCK APPETIZER WITH THE FUN/SURPISING BLUE CHEESE POP ROCKS. OUR MAIN DISHES THE SEARED SCALLOPS AND WOOD GRILLED LAMB RACK WERE DELICIOUS. THE WAITER PAIRED OUR WINES WITH OUR MAIN DISH AND DID VERY WELL. HE WAS GREAT AND HELPFUL AND KNOWLEDGEABLE OF THE MENU.

My husband and I went to Sustencio to celebrate our 11th Anniversary. The staff immediately wished us a Happy Anniversary and were very kind and welcoming. We do not do the whole 'fine dining' thing very often, and I am sure this was obvious. However, we were treated no less special and welcome. The food was DELICIOUS! I don't ever remember tasting anything so delectable! We savored each bite. Even the salad was unconventionally the best I've ever had! Instead of croutons, there were these warm, fried squares of sweet cornbread. My husband had the beef tenderloin, and I had the Rack of Lamb. The atmosphere was romantic and inviting. I was dressed up, he was business casual, but there were some people casually dressed. Go eat here!

On our first visit to Sustenio
On our first visit to Sustenio the staff was well informed and very attentive. The ceviche choices demand another visit since I only tried and enjoyed the salmon. My husband ordered the seafood tart for his appetizer and it was as outstanding as advertised.
The mixed greens salad was fresh with a preponderance of arugula however the four individual glass stoppers with oil and vinegar was gimmicky and lacked flavor. My husband's pork tender was beautifully prepared and presented and was delightful to our taste. The amberjack was good but needed a different vegetable pairing or a fruit accompaniment. For dessert we enjoyed the fresh apple tart with goat milk ice cream. We will bring out of town guests the next time.

Excellent As Always
Probably my 10th trip to Sustenio since it opened, and - even with a new chef - the food and service are consistently excellent. A few new menu items are keeping it fresh. Definitely one of a kind in SA.

The management - gracious, the staff on top of service, accommodating and friendly, from crab claws to dessert - yum!

We were having a family gathering at the Eilan Resort and Spa over the holiday weekend, so naturally we wanted to dine at the highly-recommended restaurant there. The service was superb, easily flowing from course to course and all plates for each course delivered simultaneously. Well presented and uncommon dishes made the meal more interesting and special. Everyone in our party felt that it was a memorable experience. My criticisms go more toward the "feel" of the venue: why wouldn't the designers take advantage of the lovely rolling acreage and open up the scene with tall windows and a patio? The room seems dark and cramped with the only "view" into the kitchen. If there had been more diners, it could have been too loud. Dull décor.

Our recent dining experience at Sustenio was excellent. We met with friends and it was quiet enought to have a conversation with ease. The food selection was varied and everything we tried was outstanding. The staff was attentive but not obtrusive and it represented a great value. We look foreward to our next visit

I took a group of 12 clients. They put us in a beautiful glass walled private room which was perfect. Food was outstanding and service was remarkably efficient in addition to being engaged and friendly. Restaurant was very accommodating when I had to increase the size of the group. I've eaten at Sustenio several times, and it has always been consistently excellent. Kudos!

Nice compliment to evening at hotel

Stephan Pyles - Well Done!
Everything on the new menu looked great; the Scottish Salmon was delicious and the Southwest Cesar perfect! There was a Hess cab that was well priced and wonderful. The decor was fresh and modern and Texas Hill Country influenced. Everything was tasteful and tasty: Chef Stephan Pyles deserves another "Well Done!" Make it Sustenio for a wonderful meal! Beautiful setting. The food was interesting and well prepared. Not very crowded. The service was just ok. The hotel is beautiful and no expense was spared in the restaurant's ambiance. It is a beautiful spot.

My husband is the one that seeks out new and exciting restaurants to surprise me. I was so happy to have found a place we have not been and make all the arrangements for his birthday.
The food was wonderful and a great dining experience. We will definitely come back. Next time we will stay at the hotel for a weekend getaway.

We dined with another couple and had a really good time, started out on the patio and then moved inside for dinner. Food was very good and presentation awesome. It has a different "vibe" than other eateries in town....almost like you're not at home in your own city~

Wonderful weekend escape!
What made this restaurant so great was its placement in a gracefully thought out property. The menu was extensive enough for any pallet and the staffs attention to great service was noticeable. Don't even get me started on the wine list. The meal and evening were fantastic.

Susteino delivered again a great dinning experience. Our server recognized us from previous visits. This was our first visit with the new menu. He was very helpful with his recomendations. He was right. I got the Bufalo New York Steak. It was very tasty and very well complemented by mushroom reduction. We were happy to see the pork belly appetizer back. It was sublime. We will be back.

Wow. The chef is amazing.
We live in San Antonio. We were not tourists. We drove 30 minutes to check out Sustenio bc the reviews were good. It was delicious. We love to eat out and would consider ourselves foodies. We had the ceviche with toasted peanuts, the shrimp and grit appetizer, the Market fresh fish (grouper) and the diver scallops. Everything was outstanding. Our server was super helpful and friendly. We will be back!!!!

Hairy legs not desired
Shorts ,T-shirts and flip top shoes are not appropriate attire to fine dining. We did not appreciate having to endure the view of several pairs of hairy legs at adjoining tables. You really should have some minimal dress code.
Also, some architectural plants would help to improve the rather cold and sterile ambiance.

Restaurant Week 2013
My brother and I dined at Sustenio for Restaurant Week as well as semi-celebratory dinner. The atmosphere is definitely one for people who are dressed business casual to formal [I was dressed vacation casual, so I felt slightly out of place.] We arrived early so the hostess didn't seat us until our reservation time; the locale is beautiful so it was no hardship to wander outside.
The waiter was delightful, the staff was kind and knowledgeable. We definitely had questions about the foods, since we were obviously newbies. :) I ordered the passion chile margarita on a whim--it was a little warm temperature-wise and only noteworthy for the spicy kick in the drink. The Restaurant Week menu was amazing--really great place for special occasions.

Top Notch: Very, Very Nice Ambience
We just stumbled upon this restaurant. It had a very, very nice ambiance. Shrimp and grits is a very rich dish and to die for. Scallop entrée was very very tasty as well. I even enjoyed some of my wife's shrimp cerviche appetizer and lamb chops entre too. Lamb chop was also very tasty. But/for the fatty cut/portion of that particular lamb chop, would have given the experience including the food a perfect 10.

Worth the visit.
This very upscale restaurant provides a special place for special times. The food is very good; the service is very good and the atmosphere is calm and enjoyable (even though it was pretty busy).
There is an extensive wine list and some of the prices seem excessive. I will return.

Fun and Delicious
Our server was knowledgable, made suggestions, and was attentive. Inventive cocktails, as well as traditional. This is the kind of place you can go all out and have 5-6-7 course meal, or salad and entree. We went for it and everything was delicious! Chef offered an amuse bouche - fun way to start. Shared ceviche, Ahi tuna; Hamachi; Crayfish- each fresh with different flavors. Apps., Tamale tart has an amazing crust and filling; Beef cheek- great sauce at bottom. Individual salads, Caesar- crispy, lightly dressed; Tomato and burrata - wonderful combo. Entrees: Lamb, cooked perfectly; Ribeye- huge and flavorful; Tenderloin-delicious; accompaniments enhanced the main. Dessert, Frozen Mexican Chocolate- amazing layers of deliciousness.

Dual Birthday Celebration
We challenged the staff to serve a dual birthday, one being a two year old, and the other, her 55+ grandfather. The staff was very attentive in accommodating us. The kids had a great time and so did the adults. There was something for everyone on the menu. We dine here quite frequently, as we are frequent guests at the hotel. We are rarely disappointed.

Sustenio was a pleasant dining experience. We were celebrating our 28th Anniversary and our server (Nancy) made us feel comfortable and she was very attentive without being ever present. The meal was exquisite and we recommend Sustenio for romantic dinners for two and other occasions. We do plan to return for other engagements.

Phillipe Place, Restaurant Manager, was gracious and welcoming. He recommended a most delicious wine with dinner.
The menu was imaginative and varied. Our meal was deliciously prepared and beautifully presented. The service was nothing less than angelic. From start to finish this was an exquisite dining experience.

Good food, good service.
Good food, good service. An overall good experience. The beef cheek appetizer was outstanding as was the smoked buffalo entree. We also got the pork belly appetizer and the chicken entree and enjoyed those very much. The apple tart wasn't exactly what I would call a tart, more like an apple bun and didn't taste like it had been made that day. The wait staff was very attentive and professional. We will definitely be going back!

We were taking out a client
We were taking out a client for lunch and requested a table at a good location that was private but not enclosed off from the rest of the restaurant. They set us up in their private dining area that had glass windows surrounding it, which was perfect. It was quiet, however, you could still see everything happening in the restaurant. The food was excellent and so was the service. Would highly recommend this place!
