went to trillium on the spur of the moment. Interesting menu. one of us ordered the strip steak. We found it very tough. other than that all the other dishes were very well prepared with unusual and tasty flavor profiles. Don't miss the foie gras. The service was exceptional.

Very good - a little too attentive
The food was excellent. The waiter was a bit too attentive leaving us plenty of time to look at the menu, checking on us, letting us have more time, but then had to read the menu to us when we already had plenty of time to read it ourselves. Then when we ordered the waiter restated what we had ordered. This was appreciated at dessert when he stated which ice cream or very very good homemade sorbet was which in the trio, but not necessary for dinner and the appetizers.

Scandanavian yes, Noma NO
We went this past Saturday night to celebrate w/some friends that just moved to Denver. Overall, the food was very good but we did the chef's 4 course ($65) and everyone got a different plate throughout. Our crew likes to share but that was a lot of work and way too much tasting. We would have rather maybe do that for the first course then everyone gets the same thing or at least split it up on different plates for us. The wine selections (1/2 glasses,$30) were excellent but again each person got a different wine pairing to go with all the different courses. Affordable but very confusing. I would recommend to simplify. Favorites -Apps- Shrimp Skagen, Steak Raaka, Raw Oysters. Entrees- Pork Chop ( on the bone and big) and Scallops.

a Denver gem
The food is delicious and original. You won't be able to cook like this at home. Don't miss the pudding as appetizer. It varies between corn, carrot, parsnip, beet, and whatever else the cook conceives of. If you don't care about food, go for the wine. Fabulous, interesting, perfect. The wine steward is clairvoyant. He'll look at you and bring you something you adore but didn't know anything about and wouldn't have picked on your own. Just go, relax and have a great meal. They'll take good care of you.

Scandinavian series Denmark
The food was phenomenal and super tasty. The layer of taste of each course was well presented. The wine paired with each course was I will come back again!

I have been to this restaurant several times for pleasure and business and I have to tell you that the entire experience is always amazing.
The food was so different, presented beautifully, and absolutely delicious. The staff is informative and attentive without being intrusive.
I recommend this restaurant to anyone who wants an exceptional dining experience.

Foodies Will Enjoy
From living in Miami to Vegas to Denver now, my wife and are regular foodies and have not always had good luck here in Denver. Trillium is a great find with unique small plates...if you are a fan of trying lots of things appetizer sized you won't be disappointed. We did not try big dinner plates but most everything else on the menu! It was great and the service was as good as I have had anywhere in the country. Prices were very reasonable. It is a great find! Enjoy!

Can't describe it.
We went to this place because another place actually was filled up for reservations for the night. But I am so happy we did! The food was excellent, lamb, steak, pork, beet salad, corn pudding... all amazing. The only thing that was meh was the cappuccino. He did say that the machine was broken and would taste more like a late', however it was very subpar. We also had 2 deserts the chocolate bread pudding and raspberry praline neapolitan... BOTH AMAZING. The staff very knowledgeable, and very friendly. Any question we had he was able to answer it in great depth. Prices are a little high, as to be expected. But I will definitely be going back there!

Excellent. Everything was delicious. The Waiter made sure that the chef took extra good care of us, due to a food allergy.

In an area suspect of surrounding neighborhoods, this place is a real GEM. Ambiance, service, food & drink all fantastic. ( and I am picky ). We dined on the late side and after a fiasco, but the mood of the place quickly changed our attitudes and we relaxed pretty fast. Great beer selections and the mixed drinks were tasty too! The presentation of the small plates ( smoorgasborg ) was really cool, Swedish lines.... but the flavors and freshness was really outstanding. So happy to find this spot and next time we get to Downtown Denver, I will make sure to bring my appetite to dine from the ( bigger plates ) main menu. ENJOY

Our New Favorite in Denver

There was apparently a minor glitch in the kitchen delaying our entrees so our waiter delivered sorbets to hold us over. Nice touch and great recovery. Terrific food!

Wonderful Dining Experience
Dinner out at Trillium was wonderful. My husband and I both had the trout which was exceptional--the best I have ever had. Portion size was just right and the flavor was outstanding. Fresh rolls were delicious and the bread pudding was excellent. I would definitely recommend Trillium for a special night out. The prices were very reasonable too. You won't be disappointed.

Brought family here for a night out, the food was awesome (taste and plating) and the service was very good. The bartender was kinda slow, hence the missing star on service, but overall we really enjoyed the experience.

Great Denver Find
I'm always nervous about eating in other cities, but Denver doesn't disappoint. Trillium was pretty empty when I arrived with my party of 3, so we got stellar service. We tried almost everything on the happy hour menu. The "glassblower style" pickled perch was probably my favorite item, but the terrine came in a close second. Everything was tasty. My nephew had never had oysters before and loved the one he was able to try there.
We also ordered entrees, I got the trout and he got the steak. (the 3rd person was full from the appetizers and just shared our entrees) His steak was delicious and my trout was too. Perfectly cooked!
We shared the chocolate bread pudding for dessert. It was a little like a fancier s'more.

Explosion of Flavors
We thoroughly enjoyed our experience at Trillium. At the bar, the knowledgeable bartender made me a Trillium with gin that was fabulous. My wife enjoyed a generous pour of Cab. He recommended a couple of appetizers and we opted for the pickled trout which was amazing. We then moved to our table where I enjoyed the scallops while my wife tried the trout. Both were excellent and were prepared with an eclectic assortment of pairings that were all delicious. Dessert was our only disappointment. We opted to share the almond poppy seed parfait. My wife didn't like it at all, feeling it tasted bitter. I liked the flavor, but the texture was not to my liking. The service was excellent as was the ambience. I highly recommend this restaurant.

Meager, but tasty
Restaurant food was exceptionally tasty. It was a good choice for a "special" dinner. It was however quite disconcerting that such a tasty meal had disappointing meager quantity. The portion control between meals was disparaging different between the wife's steak and the nickel sized lamb. For one of the top 25 restaurants in Denver, the chef was certainly having an "off" night.

Now my number 1 favorite restaurant
I previously ranked Trillium as one of my favorite restaurants, in my top 10 (or maybe it was 5). But they have once again surpassed my expectations with my recent meal. When it started off with the best butternut squash soup I have EVER had, I knew it was going to be another fantastic dining experience. I always order Let the Chef Cook and love the suspense of not knowing what i am going to be served, other than the fact it will be fantastic. The pairings are always spot on......Trillium, don't change a thing! Wait, just one thing--can I get a gallon of butternut squash soup as takeout for the Thanksgiving dinner I am attending? I will give you full credit! You are now #1 in my book!

Taken with Trillium
If you want a restaurant with a Scandanavian food influence, Trillium is your place. The flavors are very clean, balanced and served with precision. There are no heavy sauces on these foods, just pure clean flavor. We had a table for five and we order five different meals so we could taste what they are doing. All were excellent. I definitely would go back.

Let the Chef Cook
My dining partner and I chose the 4 course option and let the chef cook. We expected one plate per course for the two of us to share and much to our shock we each got a full sized plate! So that was 2 appetizers, 2 soup/salad, 2 entrees, 2 desserts, plus an amouse bouche, bread, and palate cleanser! Everything was fantastic. We switched plates often to taste it all. My favorite was the squash soup while my dining partner fell in love with the Never Never New York Strip. The wait staff was by far the best I've ever seen. Polite and non-intrusive they promptly cleared the table after every course and checked in often. Would definitely go back!

What a terrific experience. Who knew scandavian food could be so awesome!
first, the food. Raaka was wonderful! Followed by smoked salmon, and oysters. Then the trout entree was seriously off the charts! This chef really blew us away.
Now the service. Overall it was great. But for some reason our trout entree was delayed a bit (which we weren't really that concerned about, so we never mentioned it). But when our server brought the entree he apologized profusely and said the chef insisted he comp the entree. Not necessary, but Wow! That's great service.
We'll be back very soon!

Great Scandivanian Food
If you are looking for something different, this is the place. I am a huge fan of the diverse menu, with offerings ranging from raw oysters to foie gras, to smoked trout, to butternut squash soup. The wine list is also notable, with selections you would not normally see in a Denver restaurant. The ambience is low key and really beautiful in an IKEA sort of way, with a large lounge area, and u-shaped bar with televison sets. I have eaten here 3 times and each time the food and the service has been spot on.

Sunday Happy Hour
We ended up at Trillium late for our reservation and ate at the bar. We were a party of 4 and basically ordered the entire happy hour menu and some from the regular menu. Had a great time. Food is always great here!

My taste buds are wanting more! I knew it was a good meal, when it was my first thought as soon as I opened my eyes the next morning. Those crazy Havarti gnocchi...melt in your mouth goodness. The Char was prepared to perfection. I highly recommend you order this dish.

Food was very tasty. Definitely a little pricy but tasty and different. We ordered smoked trout, perch & beef tenderloin which were all phenomenal! We then ordered duck breast, pork chops, ravioli and prawns & scallops. There was not a single complaint in our group. Most restaurants don't know how to complement scallops properly. In fact there is only one other restaurant where I thoroughly enjoy scallops. Now there are two. The chef cooked the scallops perfectly and complemented them very well. Will definitely be back.

Worth a visit!
Food was amazing. We ordered the foie gras appetizer which was so good and the consistency of butter. Main meals were also fantastic - the only disappointment was we had to get to Temple Buell so we ran out of time for dessert! Looks like the menu changes monthly or seasonally so I am anxious to go back and try other items.

First time dining here - have wanted to come since they opened. We are of European heritage and the food selection takes you back to Scandinavia with the selections. Wonderful choices and excellent in both presentation and preparation. The trout Raaka was fabulous as was the salmon. We will definitely be back.

Great new hot spot
I feel that Trillium was a wonderful choice for a birthday celebration. When we were seated the waiter made a special point of congratulating the birthday girl. He was attentive and explained the menu and options. The food was outstanding and well crafted. I was disappointed that they didn't offer my friend a small birthday dessert but overall the experience was wonderful.

A gift of great food!
This outing was a Christmas gift to friends and it did not disappoint. Delicious and innovative food and cocktails in this downtown restaurant. We enjoyed thoughtful service and an unhurried meal, and plan to go back to try the menu items we missed.

Interesting and delicious food. That being said, I will probably not go here often. Not my neighborhood and fairly pricey. Restaurant was half full on a Thursday night, so not too loud. Great service for our party of nine (ages 23 -65) and everyone enjoyed it. Pleasantly hip decor, but not wow. Trillium cocktail was excellent

The Noma of Denver!
My wife and I went here somewhat at random. We'd been trying to hit the 5280's "Top 25" list, but thought we'd take a detour. I'm glad we did, because it beats most of those. We did a 4-course "Let Chef Cook" experience. Unlike other Tasting Menu options, each of us got different food, doubling the sampling of food. I feel a good fine dining meal has at least one course that blows you away. Our meal at Trillium had five such items: the cranberry sorbet, the mussels, the scallops in beet risotto, the sweet potato hash, and the dark chocolate "bread pudding" were all outstanding.
The service was likewise flawless. My wife & I generally favor new restaurants over ones we've been at before, but we'll be back.

Scandinavians can cook!
As a Norwegian American veteran of Lutheran church suppers and lutefisk, I presumed that Scandinavians were incapable of cooking.
I am very glad to be proven completely wrong.
My steak and the wine pairings were excellent, as was the beet salad.
I thoroughly enjoyed the thousand little flavors in each dish and the wine matched perfectly.
They put together things I had not thought of - three variations on beets - dill - horseradish - frozen cheeses
We are obsessed with food and like discovering places featuring new ideas and things we don't know how to do.
Definitely a keeper.

This place is top notch from reservation to check! It all started when a gentleman named Michael confirmed my reservation. He was courteous and polite. We were about 20 minutes early arriving planning on enjoying a cocktail while we waited at the bar. No need, they sat us right away. Server was terrific. Great wine suggestion and he was perfectly attentive without being a nuisance. And the food my god the food! Not a single item was anything less than superb from salad to smorgasbord to entrees to dessert. I cannot wait to return. I'm going to recommend to everyone I know! This is a must do and a can't miss!

great winter menu
Enjoyed a meal here with family before a CSO concert. Everything we sampled was both delicious and beautifully presented. Don't pass up the smoked trout raaka, the unique smoke-in-a-jar presntation is a great way to start.

The food was both different and delicious. We weren't quite sure what was involved in the dishes, but we all had something different and all enjoyed. the only caveat....do not order the Cabaret by the glass. The waiter said it was light...that wasn't the problem, the problem was that it smelled like motor oil. It was awful and when we commented on it, no substitute was offered.
